day Valentine'sFrom childhood we learn that on Valentine’s Daywe send cards, flowers, chocolates and other giftsto the people we care for. These customs are theordinary ways of recognizing February 14 in mostcultures. However there are still some culturesthat celebrate Valentine’s Day in other ways. Forexample, in Norfolk, England, a character namedJack Valentine knocks on the back doors of housesand leaves sweets and gifts for the children. Anddespite the fact that this character was leavingtreats, many children actually fear him as somemystical monster.

Additionally, in Slovenia the figure of SaintValentine, also called Zdravko, was one of thesaints of spring, the saint of good health and thepatron of the beekeepers and pilgrims. A proverbstates “Saint Valentine brings the keys of roots.” Itis believed that this day marks the first day thatplants and flowers start to grow in the new season.And actually in Vietnam, given how close February14 is to the first day of the lunar New Year (February19), when all of the country’s peach blossom trees

flash for the first time their bright pink smiles, tocall it the coming of spring is not far off.

In other places of the world, Valentine’s Day hasbeen celebrated as the day when the first workin the vineyards and in the fields begins. And, in arather humorous interpretation and combinationof spring and romance, another proverb states thatthe birds propose to each other or get married onthis day.

As shown, Valentine’s Day marks the beginning ofspring in some places more than it represents aholiday of romantic love, flowers, chocolates, and

cards. Only relatively recently has Valentine’s Day been celebrated asthe day of love. For if we want to talk about love and the saints, wemight want to mention a few other names as well. For example, SaintGregory, who traditionally was honored on March 12 during Saint

Gregory’s Day, the day of love. Or Saint Vincent, who on February22 was celebrated in honor of the day of love. And finally, the

patron of love, Saint Anthony, whose day has been celebratedon June 13.

All in all, there are some other wonders to considerwhen celebrating this day. Because isn’t the

blossoming of new spring plants just asmuch of a miracle as love? As well,

particularly if Saint Valentine hasnot been so generous in

the love department,we may want to

consider some other names of saints who mightalso deserve a little piece of our affection.

Từ ngày bé, chúng ta đã được dạy rằng trongngày Lễ Tình Yêu, chúng ta sẽ gửi thiếp, hoa, sôcô la hay quà tới người mà ta yêu thương. Phongtục này là cách phổ biến nhất để nhận ra ngày14 tháng Hai trong các nền văn hóa. Tuy nhiên,ngày Lễ Tình Yêu tại một vài quốc gia lại đượcchào đón theo cách khác. Ví dụ như ở Norfolk,Anh Quốc, một nhân vật tên Jack Valentine gõcửa sau của tất cả các ngôi nhà và để lại kẹo hayquà cho trẻ em. Mặc dù nhân vật này để lại quàcho các em nhỏ, rất nhiều đứa trẻ lại cảm thấy sợhãi và coi anh ta như quỷ d.

Ngoài ra, ở Slovenia, hình tượng ThánhValentine, hay còn được gọi là Zdravko, cònlà một trong nhng vị Thánh của mùa xuân,của sức khỏe và người bảo trợ cho người hànhhương. Có câu thành ng nói rằng “ThánhValentine mang đến s khởi nguồn”. Chính vìvậy mọi người tin rằng đây là ngày đầu tiên cỏcây hoa lá đâm chồi nảy lộc. Và tại Việt Namtrong năm nay, ngày Lễ Tình Yêu rất gần với TếtÂm Lịch (19 tháng Hai) nên việc gọi ngày này làs khởi đầu của mùa xuân với hàng vạn nụ đàohé nở cũng không có gì là lạ.

Ở một vài nơi khác, ngày Lễ Tình Yêu còn được

biết đến như ngày đầu tiên làm việc tại vườn nho và trên các cánhđồng. Một câu thành ng khác nói rằng các chú chim tỏ tình haykết đôi cùng nhau trong ngày này, một s kết hợp vô cùng đángyêu gia mùa xuân và tình yêu.

Như nhng gì kể trên, ngày Lễ Tình Yêu được nhắc tới như s khởiđầu của mùa xuân nhiều hơn là ngày của tình yêu. Chỉ mới gần đâythôi ngày này mới được chào đón rộng rãi là ngày Lễ Tình Yêu. Nếuchúng ta muốn nói tới tình yêu và các vị Thánh, có lẽ chúng ta nênnhắc tới một vài cái tên khác. Ví như Thánh Gregory, người xưa kiađược vinh danh vào ngày 12 tháng Ba, ngày của tình yêu; hay ThánhVincent, người cũng được vinh danh vào ngày lễ tình yêu 22 thángHai; và cuối cùng, người bảo hộ tình yêu, Thánh Anthony, được vinhdanh vào ngày 13 tháng Sáu hàng năm.

Cho dù thế nào, hãy cùng chúc mừng ngày Lễ Tình Yêu trên toànthế giới!

What do you do on your time off from work?There is not much time off when you work with passion in thehospitality sector. On the chance that I take a full day off, I like to startmy day at 5:30 am with a little run around West Lake followed by a

Continental breakfast at Annam Café Gourmet. It’s then time for a 70-min foot massage to remove all the pressure and stress accumulatedduring the week. I usually follow that by having lunch with friends,then watch a movie and finally try a new restaurant in town for dinner.

What do you most enjoy about working at The Press Club?First, the venue itself. There are around a thousand restaurantslisted in Hanoi and none of them looks like the Press Club. Ourbuilding with its chic interior attracts high-end Vietnamese guests,entrepreneurs, businessmen, travellers and sophisticated expatriateswho gather to relax or dine in an elegant setting. I also love the factthat our little Press Club can rival any of the most luxurious hotels ofthe Capital in terms of dining experience, events hosting, catering

and banqueting options.

Secondly, working for the parent company, Openasia Group, whichhas niche sector investments in hospitality (Press Club, EmeraudeClassic Cruises, Alba Hotels) and luxury retails (Hermes, Hugo Boss) just to name a few examples, makes me feel that, in some small way,we’re participating in Vietnam’s economic progress.

Last but not least, the Press Club team members make every singleday enjoyable and it is a great privilege to work with all of them.

Where do you get inspiration for your cocktails? What, on the menu,is your favorite cocktail that you have created?

I look at international cocktails first and then choose local relishesand flavors. I finally find the best method to balance both usingfusion techniques. One of my favorite signature cocktails isthe Press Club Renaissance; it’s a concoction of Ciroc Vodka,Tanqueray Gin, Flaming Cointreau, Cranberry Juice, Fresh Raspberries,Fresh Ginger, Honey, Cinnamon Powder and Cinnamon Stick. Cheers!

What are your favorite dishes at the Press Club?Perhaps the Mini Beef Tartar Duet: one is traditional, the other isRossini styled. There’s also the Grilled Scallops and Mushroom Risottowith Saffron Butter Sauce which is delicious.

Do you think the glass is half full or half empty?

I like when the glass is full, then half full, then empty. However, what Ilike most is when the glass is full again!

Anh thường làm gì khi có thời gian rảnh?Sẽ rất khó để có thời gian rảnh khi bạn làm việc với toàn bộ niềm đammê trong lĩnh vc này. Tuy nhiên, khi có cơ hội nghỉ ngơi, tôi thườngbắt đầu một ngày mới bằng việc chạy bộ quanh hồ Tây và dùng basáng tại Annam Café Gourmet. 70 phút massage sẽ giúp tôi xóa tannhng mệt mỏi và căng thẳng trong tuần. Tôi đã khám phá racách cân bằng hương vị cocktail sao cho phù hợp nhất với ngườiHà Nội. Một trong nhng loại cocktail mà tôi ưng ý nhất là PressClub Renaissance: s hoà quyện gia Ciroc Vodka, Tanqueray Gin,Cointreau đốt nóng, Cranberry, quả mâm xôi, gừng tươi, mật ong,

Preparation Lay two slices of cheese on top of the bread. Add two slices hamand cover.

To prepare the Béchamel sauce, boil milk with nutmeg while meltingbutter on the side. Add flour and mix well. When boiled combine themilk, butter, and flour then cook until it gets thick. Put the sandwich ona baking tray to put in the oven. Add Béchamel sauce and some gratedEmmenthal cheese on top. Keep it in the oven until the cheese is meltedand golden. When ready, serve on a plate with a mixed green salad.
