Quick & Easy Focaccia3 quarter packet of instant yeast1 cup luke-warm water2.5 cups cake flourPinch of salt2 tsp white sugar2 Tablespoons Olive oil.

Dissolve the yeast in a little warm water.Add the sugar - allow 5 minutes to foam.Combine yeast mixture with flour.Stir with knife, slowly adding the luke-warmwater.Turn out onto floured surface and knead.The kneading process combines the yeast and flour .. work it for 7-10 minutes.

Use the olive oil to coat a large bowl, placethe dough in the bowl - cover and let restin a warm place for 30 mins.

Flatten out on a floured surface with a rollingpin. Sprinkle with salt and olive oil.

Bake in very hot oven for 10 -15 minutes.Top with ingredients of your choice.Garlic, rocket, rosemary, olives, sundried tomato, bacon, cheese, shaved parmesan, parma ham, biltong.. the list is endless!
