The good ship‘BIG BOY’sails onwards!!...
Feedback from those customers who haveembarked on this voyage of explorationand who have purchased a Big Boy PressureCooker is proving most illuminating!
Neil Humphreys of Chorlton says his Cooker is“absolutely wonderful”, producing perfect Mushy Peasconsistently with all nutrients, natural colour and fibreinfused into the peas rather than escaping in the steamfrom an open pan. Any deviation, Neil says, is down tohis own errors (too much or too little water or beingleft steaming too long etc.)
Matt Cole in Romiley has discovered that his Big Boyalso steams his steak puddings perfectly in half of thetime normally taken - thus saving 50% in energy costs!We are looking to obtain internal racks or separatorsthat will double the number of puddings that can besteamed at any one time. Matt too is also producingperfect Mushy Peas - every time!!
Another tip from Nigel Hodgson, who has writtena ‘Big Boy Training Sheet’, for the KFE Frying School, isto immerse the sealed Cooker in your potato barrelwhen cooking is completed to cool, and then transferthe peas to you bain marie straight away as there is stillretained heat in the Cooker walls. This also saves onwater costs for those shops on meters.
Ian Weaver of Raffles in Blackpool says that after amonth of using a ‘Big Boy’ he is still ‘dumbfounded’!He says that he has never come across anything thatoffers so many benefits to his operation, and thatanyone not using a ‘Big Boy’ must be mental!
We have had to replace a Pressure Valve (located in thelid under the handle) after a Cooker was left on full heatafter completing the cooking process and it continuedto build up pressure. The valve performed its safetyfunction and blew out thus preventing a potentialexplosion. Replacement requires 2 thin 11/16thspanners and is easily achieved. We now carry spareSafety Valves in stock (CI26 - £2.99 + VAT).
I am still nonplussed as to why pressure cookers havecompletely passed me by all these years! The manybenefits for our trade in using one are becoming evermore apparent. Great care is essential in keeping theCooker clean, the vent unblocked and the pressurevalve clear. Heat sources and cooking times will varysomewhat, but once tailored to your individual practiceand situation the ‘Big Boy’ will save you money, timeand mess - and produce a perfect product...consistently.
