Semillon Sauvignon Blanc

Pinot Gris

Chardonnay

Riesling

This combination of the two grape varieties Sauvignon Blanc and Semillon produces a wine that offers a little more depth and structure than Sauvignon Blanc by itself. Semillon is a variety that is naturally high in acidity and this enables this style of wine to match foods with a little more intensity such as grilled scallops and prawns.

Pinot Gris is a crisp style of wine that has a fresh fruit driven palate. Flavours are varied, but range from melon to pear, with some even offering tropical or citrus fruit flavours. As this variety offers a little more complexity, it is well suited to dishes with chicken or pork that are a little richer in flavour. Sushi, antipasto and lighter style pasta also makes a good partner.

While this variety can vary in style, Chardonnay is typically one of the more full bodied white wines. Delicate fruit flavours and the addition of oak derived characters give this variety a fullness and complexity not seen in other white wines. This increased flavour intensity makes Chardonnay the perfect companion to the richness of risotto and creamy sauces. Deep sea fish such as Tuna and Marlin also pair well.

Riesling is a crisp, refreshing and versatile wine that is one of the most accommodating wines to match with challenging flavours and spice. Its lower alcohol levels and high natural acidity make it a great food wine. Crab and shellfish, Asian influenced dishes with spice, as well as foods fried in oil make terrific partners. The acidity of Riesling can at times accentuate the heat of chili, so be careful!

Sauvignon BlancExtremely fragrant and flavoursome, Sauvignon Blanc is a delicate wine that is a crisp and easy drinking style. That’s why this variety is best suited to foods that are also light and have less complex flavours. Fresh seafood with delicate flavours, such as oysters and softer white fish are a good match, while salads compliment the natural herbaceous flavours of the variety.

Merlot is typically a softer, more approachable, medium bodied wine style. It has rounded berry and plum fruit flavours followed by subtle tannins and a smooth finish.The variety is well suited to pasta dishes, particularly ones that are tomato based, as well as Sunday roasts. If you like to enjoy a glass of red with wood oven pizza, this is also the wine for you.

A lighter style red wine, Pinot Noir has a charm and elegance that goes with an enormous range of foods. The best pairings for this variety come from dishes that are delicate in nature yet concentrated in flavour. While noted most for its partnership with duck, Pinot is an excellent match for Atlantic salmon, rare lamb or any dish with mushrooms.

Full bodied and well structured, Cabernet Sauvignon is a complex variety that is filled with lovely soft fruit flavours and a firm tannin finish. These rounded fruit flavours are a perfect match to the sweeter texture of either lamb or veal, and partner these meat dishes perfectly. Aged styles of this variety are the perfect accompaniment to good matured cheddar.

A light and fruity wine best consumed in its youth, the Moscato style is typically made using the grape variety Muscat of Alexandria. Traditionally made to be a little sweeter, Moscato is best suited to desserts that are light with a mild degree of sweetness. Dishes such as vanilla bean panna cotta or baked cheesecake are a good match as are fresh seasonal fruits and berries.

ShirazHearty food needs a hearty wine, and Shiraz is usually the most full bodied of the reds. With concentrated berry fruit flavours and hints of pepper or spice, this variety is best suited to dishes that are rich and intense. Grilled beef fillets such as steak are a great match, but slow cooked dishes such as osso bucco or braised ox tail are perfect for these full bodied styles.

Lightly dust shanks in flour and seal. Set aside.

Sweat the vegetables. Heat oil in a large saucepan, add the vegetables, garlic, basil and rosemary. Cover saucepan and cook for around 15 mins.

Add the remaining ingredients and bring to boil. Add sealed shanks and gently simmer for a couple of hours. Be careful not to burn the ingredients.

Serve with some mashed potato or bread chunks and your favorite Shiraz.
