prev ious ly dr ied len t i l s a re rehydra ted ,

cooked in ex t ra v i rg in o l i ve o i l , sage and

rosemary and then b lended .

Most cabbages or ig inate f rom the Medi -

ter ranean Basin . To prepare th is cream

we use a Cabbage wi th a character is t ic

red to purp le co lour o f 100% I ta l ian or ig in ,

more spec i f ica l ly f rom the Marche reg ion .

The cabbage is cooked wi th s imple ingre-

d ients and then f ine ly b lended.
