Hello Again,
It’s time we rev-up our engines again, and renew our dreams to convert upstate New
York — Palatine Corridor into a prosperous reality.
In an earlier edition of Hello Again, we chatted about a dream, a dream that led New York
State to become the great Empire State. One of the greatest industrial powerhouses in
the Western Hemisphere — certainly the leader in the United States.
Governor Dewitt Clinton’s dream was to build a super canal waterway system
connecting the Atlantic Ocean at New York City, up the Hudson River to the Albany area,
and then heading west across New York State via a canal system connecting with the west.
Factories and other businesses popped up along the barge canal creating one of the
most important and powerful industrial zones in the world. A tradesman could lose his
place of employment and have a new one the same day. Fortunes were made. A great and
roads with bridges all played a part in this great new world. It was truly a boom area.
They dreamed and built factories, huge and small, some grew to be giants, creating a
wonderful, prosperous way of life. Now most of those factories are gone, leaving behind
one great question: What happened?
I believe many answers could be presented. New York State and Federal government
interference, labor unions growing too large and powerful demanding more from the
factories than the marketplace could bear. Taxes, businesses failing to change with the
changing times; the dreamers grew old and died. Sure, all of these played a part but I
believe what really happened... men and women stopped dreaming, planning, building.
Possibly the banks found other easier ways to lend money and made it nearly impossible
for new, and even old established businesses, to borrow needed funds. People just stopped
doing what worked, stopped dreaming, planning, and acting.
Except for pleasure boating, the once great commercial barge canal, which passed
through the very heart of hundreds of our villages, creating thousands of business
opportunities has all but stopped being used commercially. Now we have a great business
enemy called the New York State Thomas E. Dewey Thruway. Cars, trucks, buses full of
money-spending people can get on the thruway, travel from the greatest city in the
Western Hemisphere — New York City — travel north to Albany, our capital, and drive
west into Northern Pennyslvania and never have a business or personal comfort reason
to visit any of our villages along its pathway. They can buy gas, food, enjoy comfort
stations, rest areas, and never leave Thruway-controlled property. They do leave behind
engine smoke and some road noise.
Now where is all this negative chatter leading? Simply stated, it’s
time for another new, big, powerful dream-tag it “Fred’s Folly” if you
choose! Let’s dream together.
Right here under our noses we have one of the greatest gold mine
potentials and opportunities. A gold mine so big and endless that it
would be impossible to place an estimate on its potential value. It’s
ours to tap in to.

Remember, “When one door closes, another will open.” In the 1950’s the fantastic
Thomas E. Dewey N.Y. Thruway opened. This opening robbed our area of tons of business
because travelers no longer needed to use Route 5 and 20. Businesses by the thousands
dried up.
Now this closed door can be opened and we can use the Thruway to build our own gold
mine. Every hour of every day, 365 days a year, cars, buses, campers, trucks by the
hundreds of thousands drive through our valley heading either east or west. Very few stop
here. Why?
If you have been wondering where will the customers come from to support our dream
of factory outlet stores, specialty shops such as a Christmas store, teddy bear store,
American Doll, or a Nashville-type music hall here in the Palatine Corridor you will find the
following data interesting. Seventy-five thousand vehicles every day use the Thruway,
which means over 27 million cars each year. The population of Albany County is 304,204.
Saratoga County 219,607. Schenectady County 154,727. Schoharie County 32,749.
Fulton County 55,531. Montgomery County 50,219. Hamilton County 4,836. Herkimer
County 64,519. Otsego County 62,259. Oneida County 234,878.
Total population within a one-hour drive from our Palatine Corridor: three million, eight
hundred fifty-three thousand, eight hundred sixty nine (3,853,869). Plus 27 million cars
annually on the Thruway, or 75,000 daily.
If 1-2 percent of these people visited our Palatine dream area, we would have so many
job opportunities a “job jumper” could change places of employment at will. Our school and
property tax would be basically wiped out. Our share of the sales tax would drive our
politicians giddy.
If we build, they will come.
Enough serious chatter. It’s time for a little Irish blarney.
The farmer had just been pulled over to the curb for speeding. The officer, pad in hand,
approached the car.
“O.K.” snapped the officer. “What’s your name?” “Aloysius Glouctershire
Merkowitzskyvitch III,” the driver replied.
“Well,” the cop said, pocketing his ticket book. “Don’t let me catch you again.”

be a weather reporter, he replied.

In order to polish brass but-tons without soiling the uni-form itself, a uniform buttonpolishing guard was used. Thehinged guard shown here,owned by Willis “Skip” BarshiedJr. is a classic example.

Recently, SageStinson did that verything in the monthbefore she turned 9years old. Afterwards,she asked her mom,Cameo, for an expla-nation of what theRonald McDonaldHouse was. When shelearned that RonaldMcDonald Housesprovide a “home-away-from-home” forfamilies of seriously illchildren receivingmedical treatment, anidea formed in hermind. She decided shewould take advantageof her upcoming birth-day to raise money forthe Ronald McDonaldHouse.
“I’m a 50’s girl!”Sage laughs. “I lovemovies about the 50’s,and I love the movieGrease!”
So, it seemed onlynatural to her thatshe would use the50’s theme for herbirthday party. “Idecided I wanted tohave a sock hop,”Sage said. “Grandpawas my DJ. We calledhim Jimbo the DJ!”Sage’s “Grandpa” isthe well-known JimMiller of the Jan &Jim duo. Staying intune with the theme,50’s music was playedthroughout the birth-day party.
With her mom’s helpSage designed postersreflecting the themefor the party’s menu,and she invited 20 ofher best friends, ask-ing them to dressaccording to the 50’stheme. In lieu of birth-day presents, sherequested donationsbe made to the RonaldMcDonald House.
“Sage raised almost
$400,” Cameoremarked. And due toher fund raising event,she and her familywere invited to Albanyto tour the RonaldMcDonald House.
“It was great!” Sagesaid.

With no end in sightto rising gas prices,consumers who modi-fy their driving habitsand properly maintaintheir vehicles will getmore miles per gallon.The Car Care Councilrecommends the fol-lowing ways to drivesmart and save gasmoney:
• Observe the speedlimit. Gas mileagedecreases rapidlyabove 60 mph.
• Avoid excessiveidling. Idling gets zeromiles per gallon.Warming up the vehi-cle for one or two min-utes is sufficient.

Just about the time we startto see temperatures rise abovefreezing, maple sap beginsflowing. In Western NewYork, this occurs around lateFebruary and early March.Because sap can flow even
when the tree is dormant, thetemperature change is essen-tial since it draws water fromthe trees' roots through thetree, allowing the sap to flowmore easily.
Keeping the trees healthy
and productive is a major con-cern, so selecting the propertrees and inserting the bestnumber of taps is vital. Cur-rent recommendations call forone tap for trees at least 12inches in diameter and two
taps for trees with a diametergreater than 18 inches. Thisconservative tapping guide-line produces less sap per treein the short-term, but is moreproductive long-term.
The next consideration in-volves collecting sap safelyand not injuring the tree be-yond its ability to heal. Treesproperly tapped can producesap for decades. So, mapleproducers use a specialized bitwhich drills a hole about ahalf-inch wide and three inch-es deep. The hole is drilledabout four-and-a-half feeabove the ground at an up-ward angle of about 10 de-grees. That allows gravity toassist in draining the sap fromthe trees.
Maple producers use a spe-cialized piece of equipmentcalled a spile to draw the sapfrom the tree. A spile is simi-lar to a spigot. It's gently in-serted into the tree by handand then seated with a malletor hammer. Spiles serve sev-eral purposes - they provide a
seal against the spread of mi-croorganisms into the tree,they allow sap to flow out andthey support the sap collectionsystem (bucket or plastic tub-ing). Spiles remain in the treeuntil the sap season is com-pleted, generally when the sapflow ceases or when sap losesit sugar content.
When you think of tappingmaple trees, you think of cov-ered buckets hanging fromspiles. But in the 1950s, plas-
tic tubing made maple tappingless labor-intensive and morecost-efficient. The tubes con-nected each tree to a centralcollection system. Since the1960s, maples producers haveused vacuum pumps withplastic tubing systems to col-lect sap.
Sap often is stored in tanksholding the equivalent of twodays of good sap flow, orabout two to three gallons pertap.
The sweet process of turningsap to syrup happens in a sug-arhouse. But this sugarhouseis quite different from the oneHansel and Gretel happenedupon - a fully equipped sugar-house contains a great deal ofequipment, including a stor-age tank, an evaporator, areadily accessible fuel supply,and perhaps modern technolo-gies such as a reverse osmo-sis, preheating, or vapor com-pression systems. Other itemsinclude facilities to store andpackage syrup, and perhaps akitchen for production of oth-er products such as maplecandy.Traditionally, wood was used
to fuel the evaporators to pro-
duce maple syrup. Wood firescreated a homey atmospherethat many maple producersbelieve is part of the perfectmaple experience. And woodis easily available as a fuel,aiding in forest managementwhen diseased and fallen treesare used. But most wood-fired evaporators are ineffi-cient compared to modernevaporators powered by otherfuels. It takes one full cord ofwood (128 cubic feet) to pro-duce approximately 25 gal-lons of syrup.
It takes time to make maplesyrup. Water is removed fromthe sap by heating it, concen-trating its sugar from two per-cent to approximately 66%.
In modern evaporators, sapflows into a "sap pan" and isheated, allowing evaporation.Then the concentrated sapflows into a "syrup pan" forfinishing. The finishing pantypically is an open-toppedlarge pan heated from below.It allows a controlled removalof syrup as it reaches the finalstages of processing, creatinghigher-grade, uniform syrup.Most commercial operationsrely on hydrometers or refrac-tometers to accurately assesssugar concentration. Non-commercial operators mayuse "sheeting", a process thattakes a flat edge scoop anddips and removes it from thenearly-finished sap. The flatedge sheds the syrup in"sheets" if it has reached thecorrect sugar concentration.
Commercial producers oftenstore syrup in 30-gallon
drums during the productionseason. Syrup in drums can besold in bulk to various outletsor repackaged by the producer
into smaller containers.Before packaging, maplesyrup is filtered to removeprecipitates that form during
processing. After filtering,syrup is graded according tothe amount of light passingthrough it.
