Dear Friends,
On behalf of the UPAD Board of Trustee, Executive Committee and Executive Members, we welcome you to our 2012 Holi function. The team has worked really hard to put together a high quality entertaining evening for you which in line with what we stand for.
As you would agree, in our nineteen years of existence the demographics of our membership has witnessed substantial change. Despite this, we have ensured that UPAD’s core values remain the same. We would like to take this opportunity to recap who we are and where we are headed.
Core Values: Our core values are well thought out and have been designed keeping in mind what our membership stands for. UPAD is an organization that is Hindi Centric, Open to all, Well Organized, Family Oriented and Fun Loving.
Purpose: UPAD exists to promote hindi-centric social, cultural and charitable activities.
Mission: UPAD is in the business of bringing the membership together to network and enjoy Indian art, culture and literature through well organized events.
Both of us are really honored and very fortunate to have been given an opportunity to lead this wonderful organization this year too. Your support and assistance has helped us in promoting our Core Values, Purpose and Mission and we assure you of our total commitment and dedication in executing the responsibility bestowed up on us by you. UPAD is really grateful to our children and their parents who have contributed their time and effort to make this program a great success. Our goal has always been to encourage our young talents to perform on stage. This all boys group loves to participate because it shows teamwork and helps to make new friends. They participate to earn trophies, meet with the audience and for the fun experience. Their costumes can be described as funky and cool! Don’t forget how casual it is! They’ve participated from as little as two times, to seven times!
Here is Satrangi Holi’s wonderful skit’s cast and crew. They’re so energetic and full of smiles and laughter. These aunties and uncles are going to do great today! Good luck to everyone!
This is another group of Abhinav Verma – the EKATHVAM GROUP OF BOYS FROM TROY. This is their first time participating in UPAD function. They have heard that UPAD programs are well organized, short and entertaining. “We make fun about each other’s dance moves and also correct each other to perform well” said the boys.Their song is based on a wedding theme, it has awesome hip hop beats and also a mix of bhangra, so they chose a costume with bright colors and also to give a pathan like look. This group is using a prop such as a stick or a dhanda for a cool performance.

Ranging from 3 to 7 years of participating in UPAD cultural programs, these girls enjoy dancing in the programs to showcase their talents. It’s a great opportunity to create lifelong friends and working as a team. Dancing gives them a great excuse to get together and hang out, and to reinforce bonding. To go with the festival of colors, the group’s costumes can be described as colorful and vibrant.
This is Jasmine and her parents first time dancing together. It’s a great family dance. They’re reinforcing family ties and connecting with each other on a deeper level. It’s cool to dance together as a family!
This is our third time participating as a team. WE participate because it’s fun! We’re good friends and our dance practices are full of laughter and on stage it’s less intense, since we have the support of close friends. The song leads to our sleek and chic costumes!

UPAD has been supporting Ekal Vidyalaya for the past 3 years. We wanted to update you about EKAL Vidyalaya mission, goals, and how UPAD donation for Ekal cause is being used.
What is Ekal Vidyalaya’s Mission: To Eradicate Illiteracy from Rural and Tribal India with Holistic Empowerment. The Ekal Vidyalaya Foundation is a tax exempt, registered non-profit service organization dedicated to bringing education and village development in rural India. Ekal’s philosophy is to take a holistic approach to social and economic development. The Ekal movement is the largest, grassroots, non-government education movement in India, operating in over 36,783 villages and educating over 10,35,344 children in rural India. What is Ekal Vidyalaya model: Ekal Vidyalaya has a unique concept that aims to bring free universal primary education to those with no access to formal schools. Ekal Vidyalayas (One teacher school) are modest institutions that focus on literacy-Classrooms often consists of a chalkboard attached to a large tree. Ekal Vidyalaya provides training, school materials, and a consistent support structure to assist teachers in their mission to educate their own villages. The Ekal Vidyalaya Foundation of India and America are working earnestly, hand-in-hand, to help raise the funds necessary to build 100,000 non-formal schools across the tribal belt by the year 2015.
What are Ekal Vidyalaya goals: The four goals of Ekal Vidyalaya are primary education, village organization, social reform, and social harmony, while literacy remains the central focus. Ekal envisions a holistic approach while retaining each tribe’s individuality.
How UPAD’s Donation is being used: Since 2009, UPAD has been donating money to Ekal and sponsoring schools in Uttar Pradesh. UPAD also buys sixteen fundraising tickets for concerts organized by Ekal every year. These tickets are provided to life-members free of charge on a first-come basis. In the concert, these life members individually sponsor many more schools. We plan to do the same this year too. UPAD events are very organized. This helps dancing groups to decide where they would like to showcase their talents. This is Varsha Auntie’s group’s third time participating in UPAD cultural programs. This group enjoys dancing because of all the enthusiasm and enthusiastic dancers. Their costumes are Rajastani and go well with their song and colorful like the Holi festival. They’ll do great!
This is the group’s 12th time participating in UPAD shows. They’ve all participated many times because it’s a fun experience and a great way to learn about Indian culture. They all love dancing together because working together and meeting for practices are a blast! Their costumes can be described as representing Punjabi culture with patialas and dupattas. They believe that this costume will look great on stage. And I’m sure it will turn out great.
Here’s Aarushi, Malika, Riya, Aarushi and Khushi with their choreographer, Geetu. They enjoy participating in UPAD cultural shows, because it’s a wonderful way to stay involved in the community. The shows help stay connected with Indian culture. The girls have a great time practicing; it’s a lot of fun! Their costumes are colorful, to symbolize the Holi colors. They’re youngsters, so it’s only their second time participating. Good luck girls!

Since my childhood in Delhi, Holi holds a special place in my heart, I somiss the good old days. I remember how grand the preparations used tobe. Festivities began the week before, entire neighborhood started smellingof sweet goonjias. The corner Lalajis store started hoarding all kinds ofcolors. There would be bright pink/purple/yellow/red powder displayed insacks outside. My mother being from the south, could not imagine being outin the public with colors on herself or her children. But that didn’t stopthe neighboring aunties from showing up on our doorstep first thing on theHoli morning, hands full of colors and threatening to come inside thehouse if she didn’t come out. So she would drape her oldest sari, take a“chutki” of red color and step out into the verandah. Our neighborhoodaunties would be ready with a bucket of colored water for her and sureenough she would be drenched the next minute. We found it hilarious, justhe expression of pure surprise of cold water dripping her through , my momwho believed that she was in control of all situations was totallypowerless when it came to the celebration of Holi. My Dad, who was broughtup in Benaras always enjoyed Holi. He went and got sweets and colors onprevious day, so we could put them in nice plates and offer it to thefriends when they stopped by. For us kids it was a day of fun even thoughthere was the risk of being completely drenched as you walked on thestreets. You never knew when a water filled “gubbara” would land on yourback or your head. My mom always insisted that we stay close to home andto not wonder the streets with other kids,that we didn’t leave her sight.Didn’t fully understand her concern till I had my own children. Anyways,groups upon groups of folks stopped by on the day, men hugged each otherand smeared colored powders on each others faces. Ate paan and in thosecolors we could never make out who was who. We all looked different, thecolor sometimes didn’t come off from the hair and stayed till the next daywhen we went to school. Lots of memories of Happy times. Holi is differenthere, but thanks to UPAD, at least our kids know its a festival.--

Sonia’s Lucknowi Chicken Biryani Anand Sinha
Undoubtedly, Biryani is the most popular and tasty rice dish in the world. It does take a bit of time and effort to prepare, but I tell you, it is totally worth it. Originating from Persia and brought to India by travelling merchants, there now exists at least 25 versions of Biryani (check wiki for details); however, the world’s best comes from Sonia’s kitchen.
Ingredients – for 4 people:
12 Black Peppercorns 1/2 tsp Cumin seeds 4 Black Cardamom (Badi Elaichi) 3 Bay leaves 1/2 tsp Caraway (Syah jeera) 8 Cloves (4 – chicken, 4 biryani) 1/8 tsp Nutmeg (Jaiphal) 1/8 tsp Mace (Javitri) 1 Cinnamon Stick (1/2 chicken, 1/2 biryani 1 tsp. of Saffron Strands 4 drops Orange Color 1 tsp. Rose Water 1 tsp. of Ginger paste 2 tsp. of Garlic paste Oil (4-5 tbsp - chicken, 2-3 tbsp - Biryani) 2 large Tomatoes 2 large & 1 medium Onions 10 Fresh Coriander leaves 2 tsp. Red Chili powder 1/4 tsp. Turmeric powder 2 tsp. Garam Masala powder 1 tsp. Cumin powder 2 tbsp Coriander powder Salt (to taste) 2 tbsp Plain Yogurt 2 cups of Basmati Rice 1 Chicken (cut into small pieces)
Cooking Instructions: Rice:
Boil rice in high heat with 1 tbsp salt (or to taste). Cook until almost done (should not be fully cooked). Drain water and take one small bowl of rice out. Color with a pinch of saffron and orange color. Add the colored rice back into the pot.
Chicken: Heat oil in a pan and add cloves, peppercorns, black cardamom, bay leaves, mace, nutmeg, cumin seeds and cinnamon. Stir for 30 seconds in medium heat. Add finely chopped onions and stir until very light brown. Add garlic paste and ginger paste and stir until golden brown. Add chopped tomatoes and coriander powder, red chili powder, turmeric powder, cumin powder, garam masala powder, and salt. Add 1/2 cup water and cook for a couple of minutes covered in medium heat. Add yogurt and keep stirring until oil separates. Add chicken and keep stirring in high heat until water separates, evaporates and oil separates. Add 1 cup water, cover and cook in medium heat until tender.
Biryani: In a deep pot, heat oil, caraway seeds, 1/2 stick cinnamon, and 4 cloves for 30 seconds. Layer chicken and rice alternatively, with last layer being rice. Sprinkle 1 tsp rose water and 1 tbsp spoon tap water. Cover and let it “dum” between low and medium heat for 15 minutes. Heat oil in a small pan and fry finely sliced onions until golden brown and crisp. Gently spread onions on top of the biryani. Serve hot with cold Raita and two slices of tomatoes, as shown in the picture above. Dial 248-952-5523 and invite me.
