TOMATO-CAST August 15, 2018 East Coast -------------------------------- Our Virginia farms continue to work through the summer growing season with consistency. In general the weather pattern has been favorable for the eastern shore this year as a whole. Overall quality continues to be great on grape tomatoes and cherry tomatoes, the sizing remains very consistent on both commodities and we expect that to continue. As we start to enter the later part of the season our overall production acreage will decrease and we expect to this result in the markets settling. Outlook for the rest of the month is steady but light volume from our Virginia farms with steady markets. Elsewhere in the east we have started planting at our Georgia farms for the upcoming season, we are on schedule to start production in the early fall. -------------------------------- Organic Tomatoes Organic grape tomato production in Virginia has completed for the summer. We will resume organic production in the fall with our crops out of Georgia. ------------------------------- West Coast The California market continues to react to the east coast movement and production. Consistent weather events combined with a lack of supply in the east has allowed the California market to strengthen and we expect the market to stay strong. Round tomato supplies remain steady and quality has been very good on the product coming in from the fields. Sizing on fruit last week was fragmented across the board but we expect better sizing to come this week and much of it will lean toward larger fruit. Crispy Local Tomato Salad

Crispy Tomato Salad with Buttermilk Ranch Dressing

Start to finish: 1 hour (40 minutes active) Servings: 4 For the dressing: 1 ⁄ 2 cup low-fat buttermilk 1 ⁄ 3 cup mayonnaise 2 tablespoons finely chopped mixed fresh herbs (such as tarragon, chives and parsley) 1 tablespoon fresh lemon juice 1 teaspoon minced garlic Kosher salt and black pepper For the crispy tomatoes and salad: Two firm ripe beefsteak tomatoes (10-12 ounces each) 2 cups assorted cherry tomatoes, halved Kosher salt 1 large egg 2 ⁄ 3 cup buttermilk 3 ⁄ 4 cup cornmeal 1 ⁄ 4 cup all-purpose flour 1 ounce finely grated Parmigiano-Reggiano 1 ⁄ 4 cup extra-virgin olive oilFor more info on this recipe

Even though fresh local tomatoes start popping up in July, they don’t really hit their peak until August — and that’s when I get happy. The tomato is absolutely my favorite vegetable (even if it’s technically a berry). This crispy tomato salad combines cooked tomatoes and raw tomatoes, the large guys and the small guys. You can call it a medley but I think of it as a party. Before we start to cook these fellas, let’s take a minute to talk about buying and storing them. How do you know if a tomato is worth buying? Out-of-season supermarket tomatoes tend to have less aroma. If you put your nose to the stem of a given specimen and it smells like a tomato, you’re home freeusually.

As for color, a tomato doesn’t have to be red from top to bottom to be good to go; it continues to ripen after it’s been picked from the vine. How to store them? Put your tomatoes on the counter out of the sun. I like to maximize the flavor of a ripe tomato by using a salt soak. After you’ve sliced your tomato, sprinkle it with salt and let it drain for at least 20 minutes. Salt not only pulls out excess water, it also intensifies the tomato essence. The salad is finished with a simple buttermilk dressing made with mayonnaise, buttermilk, garlic and fresh herbs.
