Engaged couple China andGino find perfect recipe

For the first time, the excitedgroom-to-be talks about their

wedding plans. Congrats, Chinaand Gino! May your love alwaysbe served hot; may you alwaysbe each others aphrodisiac.

Tell us about your cableshow on the Lifestyle Channeland your restos.

Chefscapades is a traveloguewhich follows my dad (chefGene Gonzalez) and I as we goaround the country. We are en-tertained by a family that isknown for its [specialty] food.We cook our version of theprovinces specialty or use theproduce in that area to make adish. The show has a great con-cept and it is in line with mymission (and dads) to put

    Philippine cuisine on the globalmap.

We have Caf Ysabel. I own

Buenisimo by Caf Ysabel andIm a partner at La Taqueria

Amiga Mia. We have take-outcounters in leading supermar-kets called Chef Ginos Gourmetand Caf Ysabel Kitchen.

    How did you propose toChina?

I proposed in one of our fa-vorite places, Boracay.

It was Holy Week and I al-ready brought the engagementring. I think it took me threedays into the trip until I finallyasked her.

I was hoping to do it at sun-set but the sun went down sofast and we had a little argu-ment because I was delayingour plans

So I did, I knelt down and

said, Lets do this. Will youmarry me? Funny thing wasshe didnt hear it. She just as-

sumed I asked when I showed

her the ring because she wascrying already.

It was funny and cute at thesame time.

    What was her initial reac-tion?

She was kilig. What made you decide that

China is the one for you?I kind of knew that a few

years back. I just knew Let us in on your wedding

    plans.

It will be a destination gar-den wedding with harvest as athemenot too formal and nottoo casual. Color will be oldrose and gray.

    Where will your honey-moon be?

We havent talked about thatyet but Italy and Morocco areon our to go list.

Dont you have any appre-hensions about marryingsomeone who comes from aninfluential clan?

None at all. The family of

China is kind and humble with

values of a Catholic family. I ac-tually admire that they hearMass together even if all ofthem have families already. I

will be part of that soon.Since China and you are

both chefs, dont you have un-spoken rivalry in the kitchen?

No, we actually work welltogether in the kitchen. When

we cook, we dont talk thatmuch but for some reason sheknows what she has to do and I

know what I have to do. Well, our attraction kind of startedwhen I held her wrist to helpher do tempura when we werestarting out.

Whats your fave amongChinas signature dishes and

whats her fave among allyour specialties?

Hmmm I love her crabswith garlic and basically any-thing she concocts. She lovesmy Thai dishes and anything Ibraise and basically every-thing I cook except tapa even if

    I marinated it myself.

How many kids do Chinaand you plan to have?

Two, maximum of three. What excites and what

    scares you most about mar-riage?

Well, the whole thing fromplanning to the day plus thechallenge of making the magiclast a lifetime which everybodysays is a lot of work but it canbe done.

    What do you love most

about China? Her kindness and patience. If China were a dish, what

would she be and why?She would be a perfectly

seared sea bass with brown but-ter sauce. Sea bass is one of thebest fishes. It has delicate meat

yet its easy to cook. The sauceis very complex. Just like China. She is a person whos easygo-ing, but very precious. Her per-sonality is intriguing yet verytransparent just like the hazel-nut butter sauce.

    Italians art doomed in Manila,

cherished in Mandaluyongof that period whenMonti shared his art

with Filipinos. Montidied in 1958 and wasburied at the San Fe-lipe Neri parish ceme-tery also in Mandaluy-ong.

    Sense ofpreservationMy lament is that

sometimes the chil-drens sense of preser-

vation and history isnot that strong. Wehave to work doubletime. If we have aplace like (a muse-um) where we canpreserve all these, then we can bring thekids there and teach

them, Macasaet toldthe INQUIRER. The for-mation of the chil-dren has to be moreholistic and we need(to expose them) tothe humanities.

A thorough re-search may be in or-der for the plannedmuseum to also tellthe back stories be-hind every Monti

piece on campus.Macasaet surmisedthat the works werecommissioned by theschools pioneers, Ital-ian priests who mayhave been friends ofthe artist when helived in a studio innearby San Juan.

The images includethat of Don Bosco orSt. John Bosco, the

19th century Italianpriest who devoted hiswork to educating dis-advantaged youths orstreet children; St. Do-minic de Savio, one ofDon Boscos students;Jose Maria Delgado, ashipping magnate

who figured in thescouting movement inthe Philippines, andCardinal Santos, thefirst Filipino cardinal,

    who had his priestly

formation at DonBosco when it wasstill known as SanCarlos Seminary.

According toMacasaet, many of theMonti pieces weremerely kept in a stor-age room for years un-til he ordered them tobe put back on display

when he became headof the school in 2008.

They remain in rel-atively good condi-tion, although the St.Dominic de Saviopiece has already lostits crucifix, he noted.

Apart from thesculptures, the muse-um will also featurethe memorabilia ofthe schools first Sale-sian priests, such asold coins and paint-

ings. It may behoused in a nearly300-year-old build-ing in the campus.

This is a work inprogress. After settingup a library in thatbuilding, we plan tohave the museumnext, Macasaet said.

The Don Boscoalumni communitymay have to be tappedfor support and the

target is to have theproject started by2016, when the build-ing hits its tercenten-nial year, he said.

    By Kristine Felisse Mangunay

WHILE his decades-old art-work in Manila may soonbe torn down, his creations

in nearby Mandaluyong City are beingsaved and cherished.

The Don BoscoTechnical College isplanning to put up amuseum of theschools history, which

was made richer bythe contributions ofFrancesco Monti, theItalian sculptor wholived in the countryfor 28 years and

worked with leadingFilipino architects inthe 1950s.

Montis artisticlegacy made head-lines in the INQUIRERlast month, albeit ona sad note, when

word went out on thedemolition of a long-condemned privatebuilding in Ermita,Manila, which fea-tured his nine-meter

    workThe Furies.Mayor Joseph

Estrada later suspend-ed the demolition of

the portion contain-ing the concrete bas-relief piece to allowthe Italian embassy tocheck the work on themold being preparedso the sculpture couldbe faithfully repro-duced for display at

    Adamson University.But at Don Bosco,

Montis works live on.These include bustand medallion por-

traits of saints and re-ligious figures, includ-ing that of the lateCardinal Rufino San-tos, which can befound in various spotson the campus.

    Low-acid coffee

to perk you upMILLIONS of Filipinos drink coffee every day. In fact, itis estimated that eight out of 10 Pinoys drink at leasttwo cups of coffee daily, whether they are piping hot oriced cold. So what are the benefits of drinking coffee?

Aside from perking up lazymornings and sleepy after-noons, various studies revealthat drinking coffee in modera-tion helps reduce the risks fortype 2 diabetes, Parkinsons and

Alzheimers diseases, dementia, heart and cardiovascular dis-eases, stroke and cancers of theliver, kidney and prostate.

But while most Filipinos en-joy cup after cup of stimulatingcoffee, some cut back on theirbrew because it hurts theirstomach and they cannot toler-ate drinking more than a cupevery day.

To help drinkers with stom-ach sensitivities enjoy more

cups of coffee, Kopiko, the cof-fee specialist, introduces KopikoL.A. Coffeethe first low-acidcoffee mix in the Philippines.
