Poke salad is made from cuts of cured fish (often tuna, salmon or a white fish varietal) with varying accompaniments according to the taste of the Chef. Drawing on Hawaii’s cultural history, Poke is seasoned with traditionally Asian dressings such as sesame oil, wasabi and soy sauce.
