While guests savour the award-winning delicacies at Tin Lung Heen, they will be taken on a journey showcasing Chinese culture and heritage of the past 5,000 years. Peter Find, Executive Chef of The Ritz-Carlton, Hong Kong, oversees six restaurants and a team of 100 chefs. He is responsible for the planning and directing of the culinary operations in the hotel. He said, “I have a personal interest in Cantonese food as it is the mecca of Chinese culinary arts and is one of the most refined cuisines in the world. We want to elevate this dining experience to new heights with a touch of refined elegance and ancient history represented by the RUYI banquet. 如意宴 这一站天龙轩

LEGLE FRANCE(法国丽固),法国顶级瓷器品牌首次与香

港丽思卡尔顿酒店米其林二星中餐厅——天龙轩携手,于 2014

年 6 月 18 日起,为大家呈现一场别开生面“如意宴”。

二星米其林中餐厅天龙轩主厨刘秉雷是这次如意宴的当家

厨师,他素以手艺精湛、恰到好处的调味以带出优质食材的鲜

味而闻名。本次的宴会他将推出自己钟爱的粤菜。香港丽思卡

尔顿酒店的行政总厨范秉达(Peter Find)也表示,希望通过这

次带有中国文化历史传统的“如意宴”,将天龙轩的餐饮体验

提升至更高层次,让客人体验到五感皆备的摩登精致粤菜。

本次如意宴上,美食都将在LEGLE FRANCE(法国丽固)“如

意”系列餐具上呈现。宾客们在体验天龙轩米其林星級美味佳

肴的同时,亦可透过器物造型、图案、釉色等种种富于匠心的

细节,感受中国五千年文化的积淀与魅力。

如意 餐瓷设计Peter Ting

国际知名陶瓷设计师 Peter Ting 在香港出生长大,16 岁

随家人移居英国。曾与 Asprey、Thomas Goode 等英国

顶级品牌长期合作並受邀为英国皇室设计国礼餐具。其

设计作品还被收入世界最大的装饰和设计艺术馆──

英国维多利亚和阿尔伯特博物馆(Victoria and Albert

Museum)。Peter 的成长学习环境虽接受学习的大半是

西方设计艺术,其设计作品中也有浓郁的现代气质,

但他同时也热爱中国传统文化,对传统材料与制瓷工

艺深为着迷。

2011 年,Peter Ting 先生与其下属设计团队从佛

教艺术中的如意图案中获取灵感,为LEGLE FRANCE(法

国丽固)设计了“如意”系列餐具,设计研发工作历

时两年多,该系列承袭东方含蓄典雅的雍容华美,同

时融合时尚现代的造型风貌,正式推出后引起轰动。

如意宴 缘起

“如意”,顾名思义,万事如意。对佛教徒来说,如

意代表象征佛和其教义的莲花。作为吉祥之物,自古就在

中国宫廷及民间有着广泛使用,其象征图案也被描绘在瓷

器、丝绸和其他装饰性艺术作品里。

出身瓷器世家,同时也是 LEGLE FRANCE ( 法国丽固 )

合伙人的张聪先生,与国际知名陶瓷设计师Peter Ting先生,

除了对陶瓷的热爱外,两人还有一个同样的嗜好:美食。

张聪先生代表 LEGLE FRANCE ( 法国丽固 ) 品牌委任 Peter

担任创意总监,邀请他设计出一套基于东方文化又兼具当

代审美气质的餐器系列,这便是如意宴的缘起。

取如意之美好吉瑞寓意,以如意之玲珑圆满形态的系

列餐具,辅以源自东方灵感的当代创意美食,让器与食的

关系如鱼似水,密不可分。如意宴,不止满足味蕾对美食

的渴望,更调动起触觉、视觉等感官体验,精心设计的餐

具成为每场宴席不可或缺的灵魂人物,不只盛载食物,更

是蕴籍历史传承,沟通东西文化的艺术使者。

美食美器互为宾主,每道菜的创意建立在餐具设计之

上。东西方文化的精彩对撞,体现在用西方当代餐饮文化

如意宴 发起人张聪 Desmond Chang

雅家时尚掌门人、如意宴设计者张聪出身于瓷器世家,

同时也是美食达人,成长环境自幼耳濡目染,深谙食器与

菜肴的互动关系。多年陶瓷企业的管理运营经验,在将餐

具运用到各种餐饮场所的过程中,他深切体会到餐具不仅

用来盛菜的器皿,更是烘托用餐氛围的重要元素。

中国民族的餐饮文化历史悠久,自古即讲求将菜肴与

食器搭配呼应,为宾客体现中国宴会特有的丰盛、华丽和

喜庆之氛围。在如意宴的构想中,餐具是先发主导,张聪

希望以可见并能为广泛使用的餐瓷为主题,将富有长久生

命力的中国文化融合多元素,把属于东方的瓷器艺术推向

世界。在餐饮文化领域,他同样满怀激情,希望能推广提

升传统中国菜系至国际舞台。如意宴的初衷就是要重现中
