This week, Tidbits looks at how the sensory cells related to smell, sight, hearing, touch, and taste send their signals to the brain for interpretation. Within days of birth, a newborn is able to recognize his or her mother’s smell. • Although the tongue has the taste buds, the nose is critical to taste. While the taste buds distinguish sweet, sour, bitter, salty, and savory, any other tastes are perceived by the nose’s five million olfactory receptors. This explains why your favorite foods don’t seem to taste right when you have a cold or stuffy nose. • Vivid memories can be triggered by our sense of smell, for example, a sadness at the aroma of roses, which may be a reminder of a loved one’s funeral. This is because scent receptors are connected to the area of the brain in charge of memory and emotions. An aversion can develop if an unpleasant experience is associated with it. FIVE SENSES (continued): After a year, people can recall smells with about 65% accuracy. Compare

this with visual recall, which is only 50% after a period of three months.

• If you think you have a good sense of smell, consider that while you havefive million scent receptors, your dog has about 220 million!

• Those little raised bumps on the surface of your tongue are not actuallyyour taste buds. They are called papillae, and the majority of your tastebuds are clustered on them. The buds’ purpose is to sense sweet, bitter,salty, sour, and savory tastes. Each papilla is home to 100 to 200 buds.

• Taste buds can be found on the tongue, in the throat, on the esophagus,and on the roof of the mouth. These 9,000 cells contain chemoreceptorsthat respond to chemicals in food. When you eat a certain food, yourmouth’s saliva helps break it down, which in turn causes the receptors tocommunicate to the brain through sensory nerves. Your brain then letsyou know what you taste.

• By age 60, most adults will have lost about half their taste buds.

• As many cancer patients can attest, chemotherapy can seriously damagethe sense of taste. Infections and blows to the head can also causeimpairment.

• Due to the heat they generate, chili peppers stimulate pain receptorsrather than taste buds.

• Millions of tiny nerve endings are responsible for telling you ifsomething is hot or cold, or if something is hurting you. The home ofthese nerve endings is in the dermis, the bottom layer of your skin. Thenerve endings carry information to the spinal cord, which informs thebrain what feeling is being conveyed, all in a fraction of a second!

• There are 20 different varieties of nerve endings, all with a differentsignificance. The most common types are temperature, pain, andpressure receptors. Pain receptors are the most numerous. A little

square patch of skin measuring .4 inch (10 mm) on each side contains200 pain receptors, but only 15 for pressure of touch, six for cold, andone for hot. Pain receptors are very important for alerting the brainthat the body is hurt.

• Some areas of the body have more nerve endings than others, makingthem more sensitive. That’s why it hurts so much when you bite yourtongue. Yet this area has receptors that are much less effective atsensing hot or cold, which is why you burn your mouth on hot foods.

• As skin ages, it has a decreased response to pain and temperaturechanges. Consequently, older folks have a greater risk of injury fromburns and hypothermia.

• It’s the colored iris of the eye that makes the pupil change in size,

depending on the amount of available light. It controls light levelsinside the eye, much like the aperture on a camera. The eye colorcomes from microscopic pigment cells called melanin.

• We are able to see things because beams of light bounce off of anobject and enter the cornea – the thick, transparent layer on thesurface of the eye. From there, the light rays pass through the pupiland into the lens. The lens focuses the image and sends it to the backsurface of the eyeball, the retina. More than 150 million light-sensitive cells work at sending the information upside-down to thebrain. The brain turns the image right-side-up and tells you what youare seeing.

Job seekers in their 20sembarking on their careers are likely to appreciatethe book's attitude and attention to how-to detail.Thirty-somethings who haven't been as successfulas they'd hoped will get something out of it, too.

"Business Success" starts off with the pluses andminuses of being young in the business world. Itdoesn't pull any punches on the negatives, butoutlines the steps required to work around them.

Getting the job is only part of the battle. Doing itwell is ... work. The book walks first-time managersthrough dealing with difficult subordinates, gettingrespect from superiors, acting like a manager,becoming confident, dressing for the part and more.

Appendix A is loaded with resource Web sites thatpertain to each chapter. The one dealing with

resumes is valuable, as it includes the biggest Websites as well as tools for creating a resume. Onelisted site, www.razume.com, offers a resumebuilder as well as a way for others to critiqueresumes before they get sent out into the world.Appendix B is devoted to the 100 best businessbooks of all time. Broken down into businesscategories, that list is worth the price of the bookitself. Appendix C is full of sample resumes.

"Business Success" uses the standard extrascommon in the "Idiot's Guide" series: graphics andboxes pointing to important information, in this casecalled Best Practice and Heads Up.

Catch a Chill, Catch a Cold?

DEAR DR. DONOHUE: My friend and I have anongoing discussion about how we catch colds. Ibelieve the only way is by being exposed to a germ.My friend agrees, but also says you can becomechilled, and that results in a cold. Please settle thisonce and for all. -- L.G.

ANSWER: The only way to catch a cold is to meetup with a cold virus. But let's kick this around alittle while it lies there quivering.

Rhinoviruses are responsible for many colds. Thisvirus is passed from one person to another mostoften via the hands and fingers. An infected personinvariably will have virus on his or her hands andfingers. If that person touches another person'shands or fingers, the virus is transferred. All thesecond person has to do is touch his or her nose oreyes and the virus has found a new home. (The

drainage channel for tears siphons viruses into thenose.) It's also possible to spread a cold throughsneezing or coughing, but that's a secondary route.

Many colds are preceded by a body chill. That'spart of the infection symptoms, and that might bewhat your friend refers to.

Once a virus lands in a person's nose, the time tillthe development of cold symptoms is short -- eightto 12 hours. Runny nose, nasal stuffiness, scratchythroat, cough and sneezing are typical symptoms.They peak in 48 hours and are gone in about oneweek. A person is most contagious during the firstthree days of symptoms, when nasal discharge is athigh volume and when it contains the most viruses.

If by "chilling" your friend means being in a coldblast of air or getting your feet wet in frigid weatherand shivering as a result, she has a slight point.That kind of chilling constricts the nose's bloodvessels and decreases mucus production. It might,therefore, permit cold viruses to mount a moreeffective attack and can contribute to the ease ofcatching a cold. All the same, without the virusthere is no cold.

DEAR DR. DONOHUE: I am 34 and have beenjogging for 10 years. I do it year-round.

I've noticed this winter that my knees feel stiffbefore I run. They don't hurt during the run or after.Could this be a sign that I'm getting arthritis? --B.C.

ANSWER: It's not likely that at age 34 you'recoming down with arthritis. It's more likely aweather thing. Cold weather thickens joint fluid.That makes joints stiff. Warming the fluid byexercise relieves the stiffness.

DEAR DR. DONOHUE: As a calorie counter fromway back, will I lose weight if I eat 1,500 calories aday? How about if I eat 1,200 calories one day and1,800 the next? -- K.T.

ANSWER: If you burn more than 1,500 calories aday but take in only 1,500 calories, you should loseweight.

You can still lose if one day you take in slightlymore and the next day slightly less. You can countthe calorie deficit over a week's time.

FIVE SENSES (continued):• About one in every 12 males is color-blind. Some have monochromatic colorblindness, which means they see every-thing in shades of gray. Those with

achro-matopsia see in white, gray, and black. Others have red and green colorblindness, which is known as deuteranopia. Color-blind individuals lackcertain cone cells which respond to color.

• Ever wonder why all of a sudden in your 40s you now need reading glasses? This is due to a thickening of the eye’s lens as the body ages.

• The average person blinks once every two to ten seconds. Each blink lasts about 0.3 seconds. Multiply it out, and you’ll see that blinking causes your eyesto be closed about 30 minutes every day.

• If an individual has two different colored eyes, the condition is known as heterochromia.

• Decibels are units of measurement used to determine sound levels. The sound of breathing is at the 10-decibel level, and a whisper measures 20. Normaltalking is around 50 to 60 decibels, a loud snore generates 65, and the sound of a jackhammer registers about 115. A jet takeoff and a gunshot are both inthe 140-decibel range.

• The eardrum’s official name is the tympanic membrane or myrinx. It’s about .4 inch (10 mm) in size.

• Every time an object makes a noise, it sends vibrations through the air. These sound waves are channeled into the ear canal by the outer ear. The wavesthen hit the eardrum, which begins to vibrate, which in turn sets the ear’s hammer, anvil, and stirrup vibrating. The stirrup’s vibrations cause nerve endingsto move, and the nerve endings change the vibrations into information that is sent to the brain along the auditory nerve, again, all in a split second!

1. Preheat oven to 425 F. Cut lemonin half; cut 1 half into 4 slices. Setaside remaining half. Rinse fish insideand out with cold running water; patdry with paper towels. Make 3diagonal slashes on each side of fish,cutting almost to bone.

2. Cut 2 sheets of foil, each 8 incheslonger than length of fish. Place 1sheet of foil in 15 1/2-by-10 1/2-inchjellyroll pan, allowing ends to extendover sides of pan. Place fishlengthwise in center of foil in pan.Place lemon and garlic slices in fishcavity. Squeeze remaining lemon overfish.

3. In small bowl, whisk wine, oliveoil, capers, Dijon, tarragon and 1/4teaspoon pepper until blended. Drizzlehalf of wine mixture into fish cavity;drizzle remaining wine mixture overfish, rubbing mixture into skin andslashes.

4. Place second sheet of foil on top offish. Crimp edges all around to sealcompletely. Bake fish 25 to 30minutes.

5. Before serving, with kitchen shears,cut opening in packet to let steamescape, then carefully pull back foil.With 2 wide spatulas, transfer fish toplatter. Pour juices in foil over fish.Garnish with fresh tarragon. Serves 4.

To say that Louis Armstrong hadan impact on American music is alittle like stating that Picassodabbled in art.

Armstrong, one of the greatestmusicians ever, was born in NewOrleans just before the turn of thelast century. He learned to playthe cornet in an orphans' home.He left the Crescent City duringthe early 1920s and settled inChicago, where he joined KingOliver's band. It was hisinventiveness that set him apart,and eventually established him asan international star.

In a highly readable newbiography, author and Wall StreetJournal drama critic TerryTeachout draws on a cache ofimportant new sources --unavailable to previousbiographers -- to bringArmstrong, the man behind thelegend, into sharp focus, perhapsfor the first time.

Armstrong, one of the mostinventive, improvising soloists injazz, cut a series of recordingsduring the early years of hiscareer known as the "Hot Fives"and "Hot Sevens." These historiccuts remain as crisp and relevantas when they were first issuedmore than 80 years ago.Armstrong was more than a jazzmusician, however. His uniquevoice was recognizablethroughout the world and it, too,helped define and expandAmerican jazz. He had themusical punch to knock even theBeatles off the top of the charts.

What gives this biography legs isits almost sweeping narrative thatsquarely places both Armstrongand his music in context. Some ofthe more fascinating aspects ofthis book detail how he cameclose to being rubbed out by theChicago mob, the real reason whyhe broke ranks with PresidentDwight Eisenhower, and the factsbehind his marijuana arrest in1930. Teachout also manages todelicately sort out Armstrong'scomplicated private life.

This is a first-rate biography, andfitting because Armstrongdeserves nothing less. Like hismusic, Armstong's life story isinspiring and an absolute joy.
