BRINE1 teaspoon organic dill½ cup HTO cider vinegar 2 cups water 1 Tablespoon Kosher salt ¼ teaspoon organic pepper, ground¼ cup organic HTO brown sugar

TOPPING: ¼ cup crumbled feta cheeseCut cucumber and onions into very thin slices, place in a large non-metal bowl. Prepare brine by mixing ingredients and stirring until sugar is dissolved. Pour brine over vegetables to cover them completely. Refrigerate overnight or about 24 hours. Crumble feta cheese over top, just prior to serving. YIELD: 6-8 servings.
