When thinking of Easter, usually what comes
to mind is confectionary, chocolate and hot
cross buns. These are a delicious and fun
tradition for any Easter party, especially for
those with kids or a sweet tooth. It can be
extra fun to involve the children with these
treats, from baking it yourself (see our hot
cross buns recipe on the back page) or set
up a good old fashioned Easter egg hunt.

A QUICK PICK-ME-UP
• 25g butter
• 225g plain flour
• 1 tsp salt
• 6g fast-action dry yeast
• 40g caster sugar
• 55g raisins
• 25g mixed peel
• 1 tsp mixed spice
• 150ml skim milk
Crosses
• 25g butter
• 55g plain flour
Glaze
• 2tbs sugar
• 1tbs milk
INGREDIENTS METHOD
1. Preheat your oven to 220°C (200°C fan-forced).
2. Put the butter, sieved flour and salt into a large bowl and rub into a fine mixture that resembles breadcrumbs.
3. Stir in the yeast, sugar, raisins, peel and spice. Warm the milk until tepid, pour it into the bowl, and mix together into a soft dough.
4. Place the dough onto a floured surface and knead until elastic and no longer sticky. Shape into 8 buns and place them onto a greased baking sheet.
5. Cover them with lightly oiled cling film and leave in a warm place for around 45 minutes, until almost doubled in size.
6. To make the crosses: Blend the butter with the flour and 4 tablespoons of water. Remove the cling film from the buns and pipe the mixture across them.
7. Pop buns in the oven for 15 minutes or until golden brown and cooked through.
8. To make the glaze: Gently warm the sugar and milk together. Brush it over the buns, and pop them back into the oven for another 2 minutes.
9. Leave them to cool on a plate or rack before serving.
