A licensed counselor with extensive experience in psychotherapy, Pedro brings expertise in the operations of inpatient and outpatient facilities that includes hospital and behavioral health facility settings. He helped formulate individual treatment plans for residents, addressed any mental health issues and maintained relationships with important

Fantasy FudgeThis recipe used to be found on the back of a well-known brand of marshmallow cream. Many were surprised when it was changed. This is the original! You may find that most packages of chocolate chips are 10 ounces now; Twelve ounces of chocolate chips is roughly two cups.

Family Council meeting To end 2015, Woodland Village Nursing Center will host our December Family Council Meeting at a new time. Our December meeting will take place on Tuesday, Dec. 15 at noon, with Santa as the guest speaker. Beginning in 2016, meetings will typically be held in the front lobby on the first Tuesday of each month at 5 p.m. Should this day fall on a holiday, please contact the facility for alternative dates. Resident of the month And the winner is… Ida Holden! Ida grew up in Waveland with two brothers and one sister. She has been with WVNC for over a year. She has won the hearts of manywithheraffectionatenature,callingeveryone“myfriend”and“mama”andaskingstaff,familymembersandvisitorstotakeher picture. Ida loves to sing karaoke with performers and during religious services. • 3 C white sugar• ¾ C butter• q C evaporated milk• 12 oz./2 C semi-sweet chocolate chips• 7 oz. jar of marshmallow cream• 1 tsp. vanilla• 1 C chopped walnuts

Directions:1. Grease a 9” x 13” pan.2. Mix sugar, butter and evaporated milk in a large,

heavy saucepan over medium heat, stirring to dissolvesugar.Bringmixturetoafullboilforfiveminutes, stirring constantly.

3. Remove from heat and stir in chocolate chips until melted and thoroughly combined. Beat in marshmallow cream, vanilla and walnuts.

4. Transfer fudge to prepared pan and let cool before cutting into squares.

5. Enjoy!

a Letter from the administratorKeep Your Kids safe This Christmas: Tips for safe Toys & Gifts According to the U.S. Consumer Product Safety Commission, hospital emergency rooms treat an estimated 251,700 toy-related injuries in the United States a year. Seventy-two percent involve children under the age of 10. Additionally, toymakers recall over 19 million toys worldwide because of safety concerns such as lead paint and small magnets.

When it comes to toys and gifts, the excitement and desire to get your children their favorite toys may cause shoppers to forget about safety factors associated with them. Before you make these purchases, it is critical to remember to consider the safety and age range of the toys.Thisholidayseason(andbeyond),pleaseconsider the following guidelines for choosing safe toys for all ages:1. Inspect toys before purchasing. Avoid those thatshootorincludepartsthatflyoff.Thetoyshould have no sharp edges or points and should be sturdy enough to withstand impact without breaking, being crushed or being pulled apart easily.

2. Be diligent about inspecting toys your child has received. Check them for age, skill level and developmental appropriateness before allowing them to be played with.

3. Look for labels that assure you the toys have passed a safety inspection. “ASTM” means the toy has met the American Society for Testing and Materials’ standards.

4. Remember protective gear. Gifts of sports equipment should always be accompanied by

protective gear (e.g., give a helmet with the gift ofaskateboard).

5. Do NOT give toys with small parts to young children (including magnets and “button” batteries which can cause serious injury or deathifingested).Youngchildrentendtoputthings in their mouths, increasing the risk of choking.Ifthepiececanfitinsideatoilet paper roll, it is not appropriate for kids under age three.

6. Do NOT give toys with safety hazards like ropes, cords or heating elements.

7. Do NOT give crayons and markers unless they are labeled “nontoxic.”

8. Keep kids safe from lead in toys. Educate yourself about lead exposure from toys, symptoms of lead poisoning, and what kinds of toys have been recalled. Be aware that old toys may be more likely to contain lead in the paint. Have your children wash their hands frequently, and call your doctor if you suspect your child has been exposed to lead.

From the Desk of the Director of nursing:season’s eatings! holiday eating Tips for Diabetics For diabetics, the holiday season is fraught with temptation. Candy is everywhere. Your well-meaning co-workers bring in plates of cookies that taunt you from the break room. You’ve received invitations to party afterparty,whereitseemslikethefoodswerechosenspecificallytotestyour resolve.

Before you decide to give everyone a piece of coal and hibernate through the holidays, remember that being a diabetic doesn’t mean you have to give up your favorite seasonal foods. With a little preparation, you’ll be ready to face any holiday head-on and still enjoy it.

THINK ABOUT THe TIMINg OF YOUR MeALMany families eat large meals at odd times during the holidays. Plan in advance for how you will handle making changes if your meal does not line up with your regular meal schedule.

PLAN ADDITIONAL SNACKSHave foods to nibble on while you are cooking or waiting to eat. Make sure the foods you choose won’t sabotage blood glucose levels before the meal. Bring a platter of raw or blanched veggies with your favorite low-calorie dip or have a few small pieces of low-fat cheese.

TRY HeALTHIeR VeRSIONS OF YOUR FAVORITe HOLIDAY FOODSWill your favorite casserole taste just as good with fat-free or light sour cream? Steam green beans instead of sautéing them in butter. Use a little less sugar in your fruit pie and accentuate the natural, sweetflavorsofthefruit.

ReMeMBeR: SMALLeR PORTIONSDon’t feel like you have to sample everything on the table. Have a reasonable portion of your favorites and pass on the rest. For example, if stuffingisyourfavorite,passonrolls.Chooseeither sweet potatoes or mashed potatoes. If you really want to try everything, make your portions smaller. Overall, try to keep your total carbohydrate intake like a regular day.
