TIPS
The ‘Cheese World’ is a complex, vast and rich world of scents, aromas and flavours and certainly one of the most exciting to explore, same as wine I would say!
Type of milk, location, technique, time of production, ageing time will make your cheese experience:
Cheese can be very aromatic and pungent in scents or delicate, smoky, creamy or hard, tasty with a long finish, citrusy with a medium length and so on.
My general and certainly arguable rule about pairing wine with cheese is to find similitudes about the texture and the acidity:
For instance a goat cheese in my opinion is fantastic with different styles of Sauvignon Blanc from Val de Loire…a blue cheese with a spicy pungent note works
well with a sweet and rich wine…Hungary?...Italy?...be brave and go for a Chinese Riesling! You won’t regret it.
Fancy hard cheeses, well-aged and with great structure?
A full body red wine will help you and if you struggle to find one…have a very traditional glass of Port!
To pair a pudding use the colours…our Chocolate Fondent is divine with a Barolo Chinato….cheers!

THE ENGLISH & WELSH WINE COLLECTIONS AT CHEWTON GLEN We are immensely proud to showcase the very largest selection of English and Welsh wines available on any restaurant wine list in the United Kingdom.
There are over four hundred vineyards in England and Wales covering some three thousand five hundred acres, producing both sparkling and still wines. It is generally
agreed that the Romans introduced the vines to Britain, and that the climate in Britain at that time was warmer. At the end of the first century AD, however, the writer
Tacitus declared that our climate was not all that suitable for growing vines, which could suggest that someone had at least tried to establish vines, even if they had been
unsuccessful. After invading Britain in AD 43, wine drinking became more commonplace and whenever Roman villas and garrisons have been excavated, there is nearly
always archaeological evidence of wine amphorae and drinking cups, and occasionally grape pips and stems of bunches of grapes.

THE 1995 This vintage came as a welcome relief to the Champenois after the previous four vintages, which had been difficult, to say the least. Growing conditions were good throughout the summer, although there was some rain in September causing some rot to develop. The grapes were harvested in the second half of September and during October in predominantly dry weather. This was the first universally declared vintage since 1990 and many excellent Champagnes have been produced.

There is something about the tingling taste of a nervy Muscadet and the fresh salinity of a Carlingford Loch oysters from Ireland that’s inimitable. The fleshy flavour of the oysters togheter with the thinly sliced rye bread, the sherry vinegar and the finely diced shallots magnify the greatness and the simplicity of a wine/food pairing which is as traditional as brilliant.

CHATEAUNEUF-DU-PAPE AND VEAL LOIN
Being one of the most complex dishes on our menu the veal loin is served with a shallot and caper fondue, and a fricassee of English asparagus, St George mushrooms, and watercress, as well as a croquette made from veal sweetbreads wrapped in black pudding, which is then crumbed and deep fried. The quintessential of flavours and aromas which needs a same complex wine and what more than a Chateauneuf-du-Pape ? 13 permitted grape varietals in this blend being Grenache, Syarh and Mouvredre among the most commonly used…ripe berry scents and a silky, sensuous palate of concentrated red fruit over a background of supple tannins.

When I finally made the decision about having an Italian Collection on the ‘1966’, my chosen name for the Wine List, it was quite challenging to then decide if to go for an Estate, for a Region or for a Grape Varietal. As you probably know Italy possibly represents the most complicated wine territory with regards to all the above, you can find chardonnay in the very northern Alto Adige and in the deep south of Sicily as well as the same Estate producing Pinot Grigio from Veneto and Nero di Troia in Puglia. There are many reasons to start and to keep a wine collection — convenience, investment, curiosity and pleasure to name a few. And it doesn't take much more than a plan and a place to store bottles to get started. And I have both!!! The Oberto family can claim to have early origins reaching as far back as 1200. On a land register for La Morra there are references to the Germanic surname of Obertus. In more recent times other testimonies underline the close bond with the territory of La Morra, with specific references even to the cultivation of vines from 1800 onwards. By the end of the 1950’s, Luigi Oberto, along with his father Giovenale, was cultivating the 2 hectares of Nebbiolo on the hill of Bricco San Biagio, and selling the grapes at the Alba market. In these years Luigi decided to create his own winery and to produce wine, the first vintage being 1961.
The limited yield amounted to a few thousand bottles: part of the wine from the best cask became a reserve, whereas a part of the production was sold unbottled to the major producers of the area. As the years went by, more land was given over to the growing of vines, until the present-day 12 hectares were reached. This land includes not only the valuable vine-growing slopes purchased over the years, but also the vineyards inherited by his wife Maria Beatrice in the historic Roggeri Cru.
The winery now in use was built in the 1980s on the site which has always been known as Ciabot Berton. The small building (Ciabot, in Piedmont dialect) which stands here once belonged to a certain Berton, who had attempted to set up manufacturing fireworks here, and had burnt out the building and destroyed its roof. This old ruin, which gave its name to the business, can still be seen from the winery, and is surrounded by the Nebbiolo vineyard. From the 1990s, Luigi’s children Marco, an oenologist, and Paola, an agronomist, began working with him. Increasingly aware of the quality and full potential of the vineyards and their Nebbiolo grapes, they decided to vinify the grapes of the different vineyards separately, selecting the best batches of Barolo for bottling. In this way, by making a few important adjustments in production to add to Luigi’s great experience, the wines of Ciabot Berton have become steadily more widely known and appreciated.
ROGGERI
The Cru Roggeri, orientated south-east at an altitude of 300m above sea level, extends from the village of the same name (mentioned already in the land registry of La Morra in 1477) to the edge of the winery. The 4 hectares of Nebbiolo for Barolo cultivated here are divided into three sections, which include the oldest vineyards, planted about 40-50 years ago. The age of the vineyards, combined with a deep clayey soil, contribute to producing a grape rich in polyphenols, which confer the grand structure and noble character to the Barolo which takes its name from the Roggeri vines.

NEBBIOLO (BAROLO) AND CHATEAUBRIAND
The Vicomte de Chateaubriand was joined for dinner by another legendary gourmand, Anthelme Brillat-Savarin, at a Parisian restaurant. The owner announced he had created a new dish, named for the Vicomte himself--in honor of Chateaubriand's latest novel, La Genie Du Christianisme. It turned out to be a succulent tenderloin encased between two slices of flank steak. The outer steaks were seared until black, then discarded; the tenderloin between them remained juicily rare. Chateaubriand steak had been born! Rare to medium is our suggestion and with no much condiments or sauce to completely enjoy with a great wine with a garnet colour with orange hues that become more intense over time. Intense scent of red fruit and violets. The taste is full, wide and velvety with a finish of spices and a hint of vanilla.

THE MARCHESE ANTINORI COLLECTION….SOLAIA
The history of the house dates back to the 14th century, after the silk-weaving family moved to Florence and began to cultivate vines. In 1900, Antinori added to its portfolio his most iconic vineyard : Tenuta Tignanello: The vineyard is located between the Greve and Pesa river valleys in the heart of the Chianti Classico appellation., between the two hamlets of Montefiridolfi and Santa Maria a Macerata, 19 miles to the south of the city of Florence and extends to 140 acres on limestone-rich soils on a southwest-facing slope 1150-1300ft above sea level. Niccolò Antinori and his son Piero began to experiement with then unheard-of winemaking techniques and grape varieties successfully trying to reconcile tradition and modernity with wines which are strictly and authentically tied to their territories of origin. The wines from Tenuta Tignanello were the first in the region to combine Sangiovese with non-traditional international varieties, and to omit white grapes, hence being classified as a Vino da Tavola, now Toscana IGT. From the sunniest part of the Tignanello hill comes the Solaia Toscana IGT, with 75 percent Cabernet Sauvignon, 20 percent Sangiovese and 5 percent Cabernet Franc. Solaia has been defined by the international press as “among the most influential wines in the viticultural history of Italy” and is a constant symbol for the Antinori family of a continuous challenge, one driven by pure passion.

PINOT NOIR AND QUANTOCK DUCK BREAST
Patagonia provides a very different Argentinian wine style for those raised on the heat of Mendoza: at 39 degrees of latitude, with sun-filled days and cold nights, the High Valley of the Rio Negro gives wines strong on finesse and aromatic character. Rio Negro is a relative newcomer to many people but the wines are already very much appreciated among the best restaurants around the world… The Pinot Noir has an attractive garnet colour. On the nose there are notes of spice and candied fruit with nuances of fresh red berries such as strawberries and cherries. Its ageing in oak is emphasised with a smoky vanilla aroma. In the mouth, it is delicate in body, with soft tannins and ripe red fruit flavour and a long persistent finish and such a combination with the Somerset’s Duck breast… pan fried with skin on, and served with a sweet potato purée, as well as sprouting broccoli and shaved heritage carrots that have been lightly pickled….with good health !!!
