Shanghai’s Chili Cookoff spawned off the opening of Bubba’s Texas-style Bar-B-Que in Shanghai back in 2006 by yours truly. Being a Texan – and one that never passed up attending a chili cookoff back home – I thought a festival modeled after those fantastic memories growing up in Central Texas would be an excellent addition to Shanghai’s community events calendar, which up until then had featured standards such as July 4th parties, Thanksgiving events, and Christmas bazaars. Originally held in the tiny courtyard in front of the original Bubba’s location, Shanghai’s Inaugural Chili Cookoff back in 2006 was almost an instant success, with live music on the front porch, cold beer, an attendance of around 600 people, and around 20 or so teams competing. Even back then, from day one, we followed CASI guidelines for cooking, judging, turning-in, and awarding the winners. To that point, the Shanghai Cookoff has been fair, even, and uncontested for 7 years now. I have Mark “Mad Dawg” Brown to thank for this, as he’s been the Head Judge every year and he ensures that the sequestered judge panels score a fair tournament. The Shanghai (Yes…China) Chili Cookoff Today, the cookoff has doubled in size and is now sanctioned by the governing body of major league cookoffs, CASI. This year we had 20 teams compete and over 1,000 people attend the festival. Music was done up by Adam Brooks Dudding of Nashville backed by some excellent pros doing original bluegrass, country, and a little rock n roll. Shanghai’s Annual Chili Cookoff is always held in the Fall of each year. Past champions include: Kelley Lee, California (2006), Gary Heyne, Houston (2007), Brad Turley, California (2008), Jorge Guerrero, Mexico (2009, 2010, 2011), and Bob “KY” Hamilton, Kentucky (2012). Please take note of the feat that Jorge “Tabasco” Guerrero accomplished from 2009 to 2011. A three-time, three-peat winner, which we all know as chili heads is not easy to do at all, if not nearly impossible. This year, Tabasco and his team of Mike Marriott, Idaho, and Clay Roup, Texas, retired and joined our judges panel in scoring chili entries. The 2012 Champion, KY Bob (pictured left) and his support crew featuring two Swedes and a Philippine national will make the trip to Texas to compete with the best and enjoy the experience of being a part of Terlingua. Also making the trip will be the third place team, led by Dave Dehlman of Ohio. I wish these guys luck and encourage everyone to come say hello at our base camp during the event. For seven years now, people from all corners of the globe have cometogether in Shanghai, China, to celebrate one of North America’s greatestcontributions to the outdoor festival – The Chili Cookoff.

Shanghai’s Chili Cookoff spawned off the openingof Bubba’s Texas-style Bar-B-Que in Shanghai backin 2006 by yours truly. Being a Texan – and one thatnever passed up attending a chili cookoff back home– I thought a festival modeled after those fantasticmemories growing up in Central Texas would be anexcellent addition to Shanghai’s community eventscalendar, which up until then had featured standardssuch as July 4th parties, Thanksgiving events, andChristmas bazaars.

CASI Rancho de los Chisos – Home of the 46th Annual Terlingua International ChiliChampionship: It’s here! It’s time to enjoy the camaraderie around the campfires, thebeauty of the desert and spirit of the competition amongst the qualified cooks and showteams to bring home the coveted Pepper Trophies.

It’s exciting to think about all of the events that now comprise our week in the desertleading up to the championship cookoff. We have chili, beans, wings, salsas, dominos,dessert and BBQ competitions plus ice cream socials, dinner parties, breakfasts, happyhours, school dancers and music by the James Lann Band, starry nights and a full moon.

Life is a precious gift; enjoy it to the fullest.Following the Great Peppers Meeting, many ideas have been submitted to the various directors and the

Board. It is a key point that when you have an issue, submit it quickly with sufficient information to the Directorover that area. If you are not sure to whom to send it, submit it to the Executive Director Richard Knight. He willbe sure to get it to the right person. The sooner you submit an issue to us, the sooner we can address it.

During the Great Peppers Meeting there appeared to be such a strong sense of desire to help CASI byvolunteering. Hold that thought, now turn it into action. Volunteer at TICC or throughout the year. Your effortswill make CASI and the world a better place.

May your journey to and from Terlingua be a safe one.

HAPPY NEW YEAR!! The new CASI chili year started October 1 and, with theexception of past TICC Champions and the top 10 winners of the 46th annual TICCevent, everyone begins from the starting line to gather the required number of points orautomatic qualifications necessary to compete in the 47th annual Terlingua event. Whowill be in the first 50 to qualify to cook on November 2, 2013?

The New Year brings a new era of communications between CASI officials, CASImembers, and CASI cooks. A quick and efficient way to submit your upcoming cookoffs,to submit the cookoff results, and to search out CASI cookoffs can be found at CASI’s

newest website, www.CASIChili.net . The www.chili.org site has a new look and a link to the new CASI virtualmuseum. Several private Facebook pages are active and helping in instant communications of cookoff winnersand happenings; check out the Competition Chili Cooks Hangout, CASI Chili, and CASI Chili AppreciationSociety International pages. The new blog (www.CASIChiliED.blogspot.com) has been developed and Iwelcome ideas and articles to share with everyone. A new email, [email protected], has beendeveloped to send comments and items to be put into the blog. Last month the blog received over 4,500 viewswith international hits from United Kingdom, Russia, Canada, Austria, China, France, South Korea andMacedonia.

The month of November brings us the Thanksgiving Holiday and I am thankful that the many years that I havebeen involved in CASI have given me an opportunity to gain many lifelong friendships. I am also thankful that theCASI organization has grown because of the volunteerism of the members and will continue to grow because ourmembers care about each other and care about the organization.

REMEMBERING BERTLast December the Chillini Pod lost a good friend when Bert Centers

passed away. Bert was an important part of the Chillini Pod for 18 of its twentyyears. Bert was a talented cook; he was creative, funny, and grumpy at thesame time, and believed in the CASI spirit of Chili Charity and fun. He was apart of our lives for many years.

Although we still have twinbrother Bret to remind us of him, wewanted to do something to honorBert and preserve his memory. TheGreat Peppers Chili Cookoff hasbeen held in St. Charles IL onColumbus Day weekend since 1998.Bert won this cookoff last year. Itwould be the last cookoff he wouldwin. To honor Bert we have namedthe first place trophy, the BertCenters Memorial Trophy. To manyof us, winning this trophy wouldmean much more than the four pointsthat come with it. Brian Spencer(pictured) from Champaign IL is thefirst winner of the Bert CentersMemorial Trophy. Bert would beproud.

A very special presentation was done at the 12th Annual Breast CancerAwareness Chili and Barbecue Cookoff held in Midland, Texas on Saturday,October 13, 2012.

Just before the announcement of winners took place Shirley Stateczny, JanieBurruss and Patsy Childress presented Sharon C. Morgan with yellow roses and herproclamation from the State of Texas honoring her as a Yellow Rose of the Stateof Texas and acceptance in the Sisterhood. Sharon was given this honor for herCharacter Education program to build her student’s self esteem and a feeling ofresponsibility to their school, their community, their fellow classmates and themselves;and too, her Veteran’s Day program. Through the Veteran’s Day program shetaught the students of her elementary school what a Veteran is and what they havedone for us all. The program is now referred to as a “Picnic Under the Planes”. Shehad the idea for a “USO” type program. She writes the programs and the musicteacher puts in the music and choreography. The kids at Rusk Elementary wait fromkindergarten on to 6th grade to move from just singing to being a part of the cast.The conclusion of the program has the students giving each veteran a gift with a hugand/or handshake and a Thank You for their efforts to give them freedom.

To teach children about their country, their freedoms and their responsibilitiesis a very noteworthy accomplishment. Believing this too, the State of Texasrecognized Sharon C. Morgan with the honor of being a Yellow Rose of Texas.

On June 27, 1989, I was contacted by A.Vann York inquiring as to my interest in doing asculpture for a trophy for presentation at theCASI Terlingua International Chili Championship.

The total directions I received were, and Iquote, “It would be a casting of the logo thatappears at the top of this (CASI) stationery. Wewant three different sizes in three dimensions withthe large one approximately the size of a football.The other two to be scaled down.”

From this wonderful description I set out tomake three peppers. In August I went to see

Vann with the peppers sculpted in clay. As I had not discussed them withVann, he had no idea what they looked like, but upon seeing them he told methey were exactly what he had in mind. This necessitated a call to PatIrvine for approval. Oh, did I tell you that Pat and Vann both wanted thetrophies for the 1989 cookoff which was 2 months away and that CASIdidn’t have the funds budgeted to pay for them. I agreed to pay to have thetrophies cast and let CASI have the next year to acquire the funds.

From the “Football sized Logo” directions I had 3 basic ideas. 1) I didn’twant the pepper just laying there. It needed to be elevated—the coneshaped tower seemed to solve this. 2) A flat looking pepper would be justthat, a flat looking pepper, so I decided to raise the continents up off of thepepper and cut in the latitude and longitude lines. This also seemed to work.3) I wanted it to have some green or blue green color.

The first two passed the Vann and Pat test, but #3 was going to be asurprise, not to be seen until they arrived at Terlingua. We did not haveenough time to cast and patina the prototype before the cookoff onNovember 4, 1989. So these two braves souls left that up to me.

Barbara Britton won the championship that year and she was so excitedto win that when she was handed the trophy, she almost dropped it. She andI caught it somewhere about waist high. In the excitement, we forgot to tellher it weighted approximately 25 pounds.

Every year chili cooks from all over the United States and someinternational cooks are cooking pots of chili for worthy causes and enoughpoints to qualify. And on the 1st Saturday in November each year, thisphenomenon-called “Terlingua” draws qualified husbands, wives, children,and friends to prepare their best pot of chili in hopes of taking home “TheBig Fellow”, or one of the offsprings of this one-of-a-kind championshiptrophy.
