What’s with the name?
Rum was New England’s most popular trade
item and a favorite drink choice among locals
in the seventeenth and eighteenth centuries.
Ironically, our name has nothing to do with
the famous Latin dance, “the Rumba,” but is
actually a Bostonian’s classic pronunciation
of “Rum Bar” (the ‘r’ in ‘Bar’ being silent).
RumBa pays tribute to Boston’s rich rum history in a
lively rum-themed bar serving bold appetizers, creative
cocktails and an international collection of distilled and
vintage rums. Rhythmic Caribbean and Latin music sets

While the Cuba Libre (aka rum and Coke) might have been created with
revolutionary zeal during the Spanish-American War, it later earned status as

we take a classic and twist it by adding Fernet Branca—an aromatic spirit whose
ingredients include myrrh— in a drink that is popular in Argentine and has
become the secret handshake of mixologists around the globe.

A Worldly Classic Caipirinha inspired by

Sugar cane-based cachaça is the third most popular spirit in the world and the
base for Brazil’s national cocktail—the Caipirinha (which translates roughly as
“peasant’s drink”). Yet the locals have always been willing to accept innovation
and look outside their national borders to look for inspiration. To create a
sophisticated spin on this Brazilian staple, we have thus paired the fragrant spirit
with sweet basil in a nod to that modern classic from Germany, the Basil
Smash.

A Worldly Classic Dry Martini inspired by
InterContinental® London Park Lane
Gin and London are forever intertwined and likewise London and Cockneys—
people born within earshot of the bells of Bow church and the inspiration for
our version of the classic Martini. The glass is first rinsed with apricot brandy
(aka, a Bellringer) then perfumed with orange and lemon zests for a richer,
more citrusy take on the austere original.

A Worldly Classic Sidecar inspired by
InterContinental® Paris Le Grand
Though Paris has long been associated with fine food and wine, it has not been
given proper due for its cocktail history, with its classic Sidecar long overdue for
a renaissance. We tip our hat for France’s colonial and domestic heritages by
blending rum and luscious Grand Marnier as twin bases, balanced with lemon
and served up with a Harlequin-designed cinnamon-and-sugar rim

A Worldly Classic Daiquiri inspired by
InterContinental® Mexico City
While the classic hand-shaken Daiquiri may have originated in Cuba it has
become a global standard, counting among its devotees author Ernest Heming-
way and President John F. Kennedy. In our theatrical and flavorsome version,
we use classic Mexican cinnamon and agave nectar to sweeten together with
crisp rum and bright citrus in a fiery concoction that is than doused
with champagne.

Bourbon is an American Whiskey, distilled and made primarily from corn.
The spirit was named after its birthplace in Bourbon County, Kentucky.
Bourbon has been produced since the eighteenth century.
Sour Mash means that a part of the distillation residues (stillage) is added to the mash
again. After the mash has been prepared with fresh spring water it is chemically neu-
tral, which means the chemical environment is neither acidic nor alkaline.
Rye is made from at least 51%—you guessed it—rye, while bourbon is made from at
least 51% corn. The higher percentage of corn makes bourbon sweeter and smoother.
Both spirits are also aged in new, charred, American-oak barrels

Japanese Whisky is a style of whisky developed and produced in Japan. First produc-
tion began around 1870, but the first commercial production was in 1924 upon the
opening of the country's first distillery, Yamazaki.
Canadian Whiskey is a blend of multi-grain liquors with a large
percentage of corn spirits. Typically lighter and smoother than other styles.
Irish Whiskey is distilled thrice. Peat is rarely used in the malting process, so that Irish
whiskey has a smoother finish.
Brandy is made all over the world, but only brandy made in the Cognac Region
of France under the strictest guidelines, can be called Cognac.
