INGREDIENTS: • 1 aubergine, sliced into 4 slices, halved to create 8 portions
• Olive oil • A little salt • ½ a cucumber (preferably organic due to pesticide exposure of non-organic), coarsely grated then squeezed through muslin to remove excess liquid
• 100g natural sheep yogurt
• 2 tsp lemon juice • 2 tsp chopped mint • 1 clove garlic, minced
This recipe combines the delicate flavour of sheep milk yogurt with refreshing cucumber and mint. The tzatziki is delicious on barbequed poultry as well as barbequed vegetables.
INSTRUCTIONSBrush the aubergine slices with the oil on one side and sprinkle with just a little salt. Place on the BBQ, turn after 7 minutes and brush the other side with oil then cook some more. Keep turning until both sides are cooked and the aubergine is soft.
Meanwhile, combine the squeezed cucumber with the minced garlic, sheep yogurt, mint, lemon juice and pepper.
Serve the aubergine and the tzatziki together.
INGREDIENTS: • 1 mango, diced • 1 ripe avocado, diced • 1 small pot of pomegranate seeds
• ¼ cucumber, diced • 1 tbsp lime juice • 1 tbsp apple cider vinegar • 1 tbsp extra virgin olive oil • 2 tbsp chopped mint
This salsa works with almost any barbequed meats, fish or even vegetable burgers. It is a feast for the eyes and full of deliciously fresh and summery ingredients.
INSTRUCTIONSCombine all ingredients in a bowl. Serve.
INSTRUCTIONSPlace the garlic, ginger, onion, and coriander in a food processor and combine to a paste. Add the coconut milk and fish sauce and stir.
Coat the chicken thighs in this marinade. Leave in a sealed container in the fridge for at least 3 hours. Place the chicken onto skewers and BBQ until cooked through.
Enjoy with a variety of lightly cooked vegetables.
INGREDIENTS: • 6 chicken thighs, skinless and boneless
• 2 cloves of garlic • 4 cm piece of fresh ginger, peeled and chopped roughly
• 1 onion, roughly chopped • 1 tbsp mild curry powder • 2 tbsp fresh coriander • 1 ½ tsp fish sauce • 110ml coconut milk

While you’re having a BBQ and raising money to beat cancer, please don’t forget to stay safe.
Here are our golden rules for keeping you, your guests and pets happy and out of harm:
SETTING UP • Position your BBQ on level ground. • Position it well away from the house, sheds, hedges, fences and overhanging foliage.
• Never leave your BBQ unsupervised while it’s still hot.
• Keep children and pets at a safe distance. • Please seek your council’s permission before having a BBQ in your local park.
TOOLSAlways use proper BBQ utensils with long handles.
Grill thermometerThis handy gadget will tell you when the grill has reached the right cooking temperature.
Spatulas and tongsUse these for turning, lifting and positioning food. Spearing food with a fork causes the oils and juices to drip and cause flare-ups.
Fire blanket and water sprayHave a fire blanket handy at all times. If you’re using charcoal, a water spray is also a good idea.
FOOD PREPDefrost itUnless the cooking instructions say otherwise, always ensure that frozen food is defrosted before grilling so that it cooks evenly.
Keep foods separateAlways keep raw and cooked meats separate and keep uncooked meat, fish and vegetables separate from each other when preparing.
Soak those skewersAlways soak wooden skewers in water for at least 30 minutes before use.
COOKING • Regularly wipe down all utensils and prep areas with a disinfected disposable cloth.
• Never grill too quickly or on too high a heat – food will burn on the outside and be undercooked in the middle.
Make sure meat is cooked through • Always check that the centre of meat is hot and that the juices run clear. Check it with a meat thermometer or simply cut it open and take a look. If necessary, continue grilling until it’s cooked through.
• Never partially cook meat on a BBQ and finish it off later. But you can pre-cook poultry in the oven and then finish it off on the BBQ for added flavour.
AFTERWARDS • Ensure that the charcoal is cold and/or the gas is securely turned off before retiring for the night.
• Make sure that all knives and utensils are securely stored when not in use.
BE SUNSMARTCome rain or shine, we will BBQ. But if you’re blessed with good weather make sure you enjoy the sun safely and take care not to burn.
Here are our three essential tips for BBQ sun safety. When the sun is strong:1 Spend time in the shade between
11am and 3pm.2 Wear a T-shirt, hat and sunglasses.3 Use a sunscreen with at least factor 15 and
a high star rating. Use it generously and reapply regularly.
