world N WITBIERsWonderful

Witbier was originally popularized in Hoegaarden, a small town in a wheat-growing region east of Brussels and Leuven. is style is usually made from equal portions of raw wheat and malted barley, spiced with ground coriander seeds and dried orange peels and brewed mainly in Belgium and the Nether-lands. e fruitiness imparted by the wheat blends well with the orange and coriander. It gets its name due to suspended yeast and wheat proteins which

cause the bier to look hazy, or white, when cold.

Typically wheat biers contain 30-70% wheat malt and the remainder is regular barley malt, usually a pale variety like pilsner. Wheat has a lot more protein in it than barley which contributes to thick, long lasting heads. is protein also creates haze in most wheat biers. Wheat contributes very lile flavor to a bier but it does contribute a distinctively silky mouthfeel. Wheat biers are highly effervescent

and most are light in flavor

SAISONS & FARMHOUSE ALESSaisons are ales brewed at the end of the harvest to be stored over winter and savored the following spring and summer. They tend to be complex, with fruity and earthy aromas and flavors finished by a slight hop bitterness.

Belgian FarmersHistorically, saisons did not share enough identifiable

characteristics to pin them down as a specific style, but rather were a group of refreshing summer ales made by farmers. Each farm brewer would make his own distinctive version that would be brewed in the slow seasons and aged for the

farm workers for the next summer.

BUT WE LIKE THEM ANY TIME OF THE YEAR!

GOT STYLE!

TRAPPIST BIER?WHAT iS A

Trappist bier is bier or ale produced under the supervision of Trappist

monks. While only eleven breweries are recognized in the 21st century as

authentic producers of Trappist bier, the practice of monasteries brewing

alcohol is more than 1000 years old. Authentic versions of the bier must

conform to several standards set by the International Trappist Association.

PALE ALESPale ales derive their name, not from the color of the bier, but from their use of pale malts as a necessary ingredient in the brewing process. American pale ales are typically characterized by the floral hop aromas that produce a slightly bitter taste, while their Belgian counterparts are generally somewhat sweeter with a touch of yeast.

Rince Cochon 8.5% 250mL $7.5Haacht // Boortmeerbeek, Belgium

Today, IPAs are primarily brewed in England and America, though rapidly becoming more popular worldwide.

DUBBELS (continued)

2726

When a bier is a dubbel or a tripel or a quad it means that the brewer added two, three or even four times the regular

amount of malt to the brew kele. e more malt means the more starches which may be converted into sugars. More

sugar means more alcohol during the fermentation process, hence why the ABV oen steps up with these types of biers.

DUBBELe “dubbel” is a

fairly strong (6-8% ABV) brown bier with pronounced

dark-fruit fruitiness, and a

rich body.

e “quad” is like a stronger (10-12%

ABV) dubbel with richer and sweeter flavors of chocolate

and raisin.

e “tripel” is a stronger (8-10%

ABV) oen golden bier with a brighter

fruitiness, and crisper finish than

the dubbel.

The flavor notes can be even more diverse, from honey, citrus, chocolate, caramel, dark fruit, all the way out to bourbon. The common thread weaving them together? Their high alcohol content.

A Belgian strong blond ale may be a close cousin to a tripel but a Belgian strong dark ale is not closely related to a dubbel. One important distinction is that the strong dark ale oen uses roasted malt, which achieves a darker color and more toasty flavor than a dubbel. e color of strong dark ale ranges from deep amber to dark brown with a dense foamy head. e aroma may be described as rich, sweet, toasted, bready, caramel-like, peppery, herbal, with dark fruit notes like prunes, raisins, plums or figs. e flavor profile is similar to the aroma and is moderately sweet and malty with a low-to-moderate amount of bierness, which provides balance and sometimes a spicy quality. Despite the complexity of flavors and aromas, a good Belgian strong dark ale will meld all of these aributes harmoniously.

WHY SO MANY

GLASSES?Bier

Bier in Belgium is not just a beverage—it is an experience. Many, if not most, breweries and specific types of bier have their own glass. Glass shape can greatly affect aromatic presentation, head formation, even how well carbonation will be sustained. e ideal in these areas varies from bier to bier, thus so do the glasses. And in Belgium, you’d never serve bier in the wrong glass—it would lessen the experience. Café Benelux subscribes to that same theory, keeping well over 40 different glasses behind the bar to ensure that your Belgian bier experience is the best it can be.

It’s not black. It’s not even brown. Hold your bier up to the light. Guinness is actually a deep, dark red, a color the company aributes in part to the roasting

of malted barley during the bier's preparation.

The Color of the

IRISH

And so should you! You see, unlike CO2, Nitrogen gas

wants nothing to do with bier, meaning it quite

literally leaves more for you! In a desperate effort to

escape, these beautiful, tiny bubbles cascade upward

in your glass to build a tight, thick, creamy head. But

it’s about more than just a silky smooth mouthfeel. is

means you end up with less gas in your glass, and can

enjoy more without becoming full. Savoring a bier on

nitro also gives you a little insight into what it might

have been like to enjoy a bier in 19th century Europe,

before bars began pumping CO2 into their lines to get

the bier from the keg to the faucet. Oh, and there’s one

more thing—Nitrogen is born from the fusion of stars,

which means your bier experience isn’t just

smooth—it’s stellar!

SOURSTraditionally brewed in Belgium, the several varieties of sour bier are the products of long periods of aging in oak barrels. Often set to age for a year or more, wild yeast strains and bacteria are naturally accumulated. Strong acidic flavors prevail, including tart cherries, citrus and vinegar, balanced with vanilla and dry oaky notes.

LAMBICSLambics are brewed with yeasts unique to the Zenne river valley which winds through the southwest region of Brussels. We feature fruit lambics—made with whole fruits, pulp and juices added after the grain fermentation begins.

Unlike traditional bier-brewing, sour biers intentionally add souring yeast strains and bacteria into the brew. ese fermenting yeasts and bacterias consume sugar just like regular yeast, but they produce lactic and acetic acids that cannot be made by the usual yeast. ese acids provide the tart and

rustic flavors associated with sour ales.

A grand café is a place to gather any time of

day for a delicious meal, a hot cup of coffee,

or a refreshing bier, and Café Benelux brings

the best of the style here to Milwaukee.

Named after the Benelux region [Belgium,

The Netherlands, and Luxembourg], Café

Benelux features favorites like mussels and

frites along with the bier that complements

them. Serving a full menu from breakfast to

late night, there’s always a reason to sit back

and relax at Café Benelux.
