The Bergamot Highly praised for its complex flavourings and aromas, as well as being rich in vitamin C and fibre, the bergamot is a citrus fruit - a hybrid of lemon and bitter orange. It is produced exclusively in Italy, more precisely in the southern hilly lands, on the Ionian Coast, where a unique microclimate allows its cultivation. The processing of bergamot has ancient roots, but only in recent years has been recognized as a citrus with healing features. Its juice is effective against cholesterol and diabetes; its essential oil has cicatrizing, antiseptic and anti- parasitic properties. It helps fight heart disease and has shown promise as a natural alternative to statin therapy. Even more recently, it was discovered that this citrus is recognized as a pesticide against mosquitoes and thus potentially useful against Malaria and the Zikkar Virus. It is important to know and to distinguish the final products obtained from the processing of this citrus. Substantially from the ripe fruit of the bergamot, the essential oil is extracted through the processing of the peel, and used in perfu- mes.
