Tannin is an astringent bitter plant Polly phenolic compound that binds to and precipitate proteins and various other organic compounds including amino acid and alkaloids.Tannins are defensive compounds that contract bacteria and fungi by interfering with their surface proteins.Tannins are naturally occurring and common and are an important component of red wine.
