Sysco Quality Assurance Fresh Produce Sysco QA UPDATE: Week of 2/14/18 QA Western Update for the Week of 2/14/18 Our heat spell broke in a big way, with moderate, scattered rain falling Wednesday night, and much cooler afternoon temperatures forecasted for next week. Much of today’s harvest was packer only due to wet product, while Iceberg remains over-sized and oddly shaped. We should expect mildew and insect pressures to increase industry-wide into next week, the cooler weather may help slow today’s fast growth rates. Transition north should begin to ramp up in a month’s time. Commodity Iceberg Lettuce for Sysco Approval: Yuma-area condition is poor to fair, quality is fair, some defects due to oversizing, few defects due to misshape, weak tip, solid heads, discoloration, seeder, and light epidermal peeling (a.k.a. blister). Yuma-area commodity Iceberg weight is 45-50+ lbs. Yuma-area trimmed Iceberg condition is poor, quality is also poor, some defects due to oversizing and bleaching, few defects due to misshape. Yuma-area trimmed Iceberg weight is 35-39lbs. Below are pictures showing oversizing and misshape. Green and Red Leaf for Sysco Approval: Yuma-area Green and Red Leaf condition is fair, quality is fair to good, occasional defects due to oversizing, cupping, and light discoloration. Romaine for Sysco Approval: Yuma-area Romaine condition is poor, quality is fair, few defects due to oversizing, cupping, fringe burn, and discoloration. Current Yuma-area Romaine weight is 34-38 lbs. Yuma Romaine hearts: fair condition, fair quality, few defects due to ribbiness, twisting, internal burn, and oversizing. Yuma-area Romaine heart weight is 26-30+ lbs. Below are pictures of current Romaine.

Sysco Broccoli, Cauliflower, and Celery: Broccoli condition remains poor, quality is poor to fair, few defects due to branchiness, discoloration, flowering, and inconsistent sizing. Cauliflower condition is fair, quality is also fair, few defects due to oversizing and discoloration. Celery: condition is fair, quality is fair, few defects due to inconsistent sizing. Pre Cut Items: Chopped Romaine quality remains good, only occasional defects due to ribbiness and fringe burn. Iceberg salads look mostly good, still noting occasional defects due to chunks, because of solid raw material, as well as occasional discoloration. Cilantro and parsley quality have improved this week (thanks to cooler weather), seeing occasional discoloration. Kale is exhibiting occasional defects due to discoloration and insect presence.

Broccoli florettes continue to exhibit few defects due to brown beading, branchiness, and flowering, while cauliflower florettes continue to exhibit few defects due to riciness and bruising. For fillets and washed and trimmed Romaine and Green Leaf, noting occasional defects due to ribbiness and oversizing. Spinach and Spring Mix: Spinach condition is fair, quality is good, occasional defects due to light mechanical damage and mildew damage. Spring mix condition is fair, quality is mostly good, occasional defects due to bolting and mechanical damage. Strawberries: Western production remains in our more southern growing regions, with Oxnard being the primary of those, no major concerns this week. Citrus: Lemons: Quality remains very good from California’s Central Valley, where recent warm weather had caused fruit to color quickly; harvest crews were struggling to keep up, increasing volume of all sizes with no major quality concerns. Oranges: The Navel crop continues with very good quality from California’s Central Valley, no major concerns currently. Today’s orange harvest remains skewed towards the larger end of the spectrum, reducing the availability of smaller-sized fruit.

Grapes: Availability seems generally good for both red seedless and green seedless as the South American season continues, red seedless is transitioning varieties, you may note subtle differences because of that. Watch for normal defects associated with longer transit times, such as splitting, ambers, and mold.
