SLOW COOKER SUMMER RECIPES FOR APPETIZERS & DRINKS

SLOW COOKER SUMMER SQUASH AND CORN CHOWDER

Slow Cooker Summer Squash and Corn Chowder is a bacon corn chowder recipe that's so good, you'll want to make it all year long. It's rich and creamy, made with Cheddar cheese, sour cream, and sweet corn. Yellow summer squash and chunks of bacon give this chowder its rich and chunky texture. It cooks all day, so you can prep it in the morning, and then in the evening take it along for a summer potluck or gathering. When you're ready to serve, garnish each bowl with extra green onions, sour cream, and bacon bits. Each bowl will pop with color and flavor.

SERVES: 6

COOKING TIME: 8 HRS ON LOW

INGREDIENTS

1 package bacon bits

1 bunch green onions, chopped

3 stalks celery, chopped

3 large yellow summer squashes, chopped

2 cans sweet corn, rinsed and drained

1 ½ cups chicken broth

1 teaspoon salt

1 teaspoon pepper

¼ cup sour cream

2 tablespoons flour

¼ cup cheddar cheese

extra green onions, bacon bits, and sour cream for garnish

INSTRUCTIONS

1. Combine bacon bits, green onions, celery, summer squash, sweet corn, chicken broth, and spices in your slow cooker. Stir to combine.

2. Turn the slow cooker to LOW and cook for 6 to 8 hours. 3. Come back and stir in sour cream, flour, and cheese. Let cook for another 30 minutes. 4. Serve hot. Top with extra green onions, sour cream, and bacon bits if desired.

SLOW COOKER SUMMER RECIPES FOR APPETIZERS & DRINKS

FIVE INGREDIENT WHITE BEAN HUMMUS

This Five Ingredient White Bean Hummus is delicious and creamy. Plus, this slow cooker dip recipe is a healthy, vegan alternative to most dips that are out there. It cooks all day, making it super simple. You just need white beans, garlic, olive oil, lemon, salt, and pepper to create this white bean hummus recipe. Be sure to puree it until it's completely smooth. You can serve it with pitas, pita chips, or fresh vegetables.

YIELDS: 1 ½ CUPS

COOKING TIME: 4 HRS ON HIGH; 8 HRS ON LOW

INGREDIENTS

⅔ cup dried white beans, rinsed

6 garlic cloves, peeled

¼ cup extra virgin olive oil

juice of 1 lemon

kosher salt and black pepper, to taste

INSTRUCTIONS

1. Place beans in bottom of slow cooker. Add in the garlic cloves. 2. Cover beans with water about two inched above the beans. 3. Cover and cook on LOW for about 8 hours or on HIGH for about 4 hours, or until beans are

very tender. 4. Pour slow cooker contents into a colander and let all the water drain off. Transfer beans and

garlic to a blender. 5. Add in olive oil and lemon juice. 6. Puree until totally smooth. 7. Salt and pepper a little, blend, taste again, salt and pepper again and repeat until you get it

perfectly seasoned.

SLOW COOKER SUMMER CHILI

Slow Cooker Summer Chili is a phenomenal way to get those veggies in without lighting the grill or heating up the kitchen. Filled with tons of veggies, this recipe can be made into a vegetarian chili or not. Either way, throw it in, go, and eat.

SERVES: 6

COOKING TIME: 4 HRS ON HIGH; 8 HRS ON LOW

INGREDIENTS

1 (28-ounce) can sliced tomatoes and zucchini

1 (15-ounce) can tomato sauce

1 (14-ounce) can petite diced tomatoes with green chilies

1 (15 ½-ounce) chili beans

1 (15 ¼-ounce) can black beans, drained and rinsed

1 medium onion, roughly chopped

3 smallish yellow squash, halved, quartered, and chopped

3 tablespoons garlic powder

3 tablespoons onion powder

1 teaspoon salt

⅛ teaspoon pepper

2 cups water

INSTRUCTIONS

1. In the bottom of your crock, place your yellow squash and onions. Pour your black beans and chili beans on top of that. Pour your can of diced tomatoes with green chilies and tomatoes with zucchini on top of that.

2. Mix together tomato sauce, garlic powder, onion powder, salt, pepper, and water. Pour this over everything else in your crock.

3. Cook on LOW for 7 to 8 hours, or on HIGH for 3 ½ to 4 hours.

Taco dip with ground beef is very popular for casual get-togethers because almost everyone enjoys its creamy texture and spicy flavor. Make it your own with your personal mild or spicy salsa selection and serve it with more than just tortilla chips. Hot taco dip tastes amazing over nachos and with hot wings. This taco dip recipe is super easy with only 10 minutes of prep time. You can leave it to cook while you get ready for the party.

SERVES: 12

COOKING TIME: 2 HRS ON HIGH

INGREDIENTS

1 pound ground beef

salt to taste

pepper to taste

onion powder to taste

1 (16-ounce) jar of salsa

1 (15-ounce) jar nacho cheese

1 (16-ounce) container sour cream

1 (16-ounce) can refried beans

1 large bag tortilla chips

INSTRUCTIONS

1. Brown meat in a skillet, add salt, pepper, and onion powder. Drain and discard liquid. 2. Add meat to slow cooker. Add salsa, nacho cheese, sour cream, refried beans to slow cooker. 3. Stir. 4. Cook on HIGH for 2 hours, or until heated through. 5. Turn slow cooker to warm while serving. Serve with tortilla chips.

SLOW COOKER MEATBALL SLIDERS WITH PEACH CHIPOTLE BBQ SAUCE

MEATBALL INGREDIENTS

1 pound ground pork

1 pound ground turkey

1 egg

¾ cup panko bread crumbs

1 ½ teaspoons cumin

1 ½ teaspoons chili powder

1 teaspoon paprika

1 teaspoon garlic powder

¼ teaspoon salt

¼ teaspoon pepper

1 tablespoon extra-virgin olive oil

¼ cup beer or broth

PEACH CHIPOTLE BBQ SAUCE INGREDIENTS

1 tablespoon extra-virgin olive oil

½ onion, diced

3 garlic cloves, minced

¼ cup peppers and sauce from canned chipotles in adobo, minced

⅔ cup ketchup

¼ - ½ cup beer or broth

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon molasses

½ cup peach preserves

salt, to taste

slider buns/rolls

INSTRUCTIONS

1. For the meatballs: In a large bowl, add the first 10 ingredients and mix with your hands. Once the ingredients are combined, shape into meatballs. You can use a medium sized cookie scooper or 2 tablespoons would work. Add olive oil to a large skillet at medium heat. Brown meatballs on all sides, do not overcook. You just want to give the meatball a nice sear. Cook meatballs in batches - don't over crowd the skillet. Add cooked meatballs to a slow cooker coated with cooking spray. Once all of the meatballs are in the slow cooker, pour in beer or broth. Cook on LOW for 5 to 6 hours.

2. For the sauce: In a sauce pan set at medium heat, add oil & onions. Cook until the onions are translucent. Add garlic and stir. Cook until fragrant. Add chipotle peppers and sauce. Stir until combined with onion & garlic. Stir in the ketchup, vinegar, water, mustard, molasses, and peach preserves. Simmer for 10 to 15 minutes. Taste and add salt if needed.

3. Once the meatballs are cooked, remove from slow cooker. Drain out the liquid. Return meatballs to slow cooker and cover with BBQ sauce. Turn slow cooker setting to warm and cover with lid. Let the meatballs sit in the slow cooker for at least 10 minutes. Serve BBQ meatballs on slider rolls.

INGREDIENTS

1 pound lean ground beef

1 onion, diced

2 cups mushrooms, diced

¼ cup soy sauce

½ cup beef broth

1 tablespoon pre-minced garlic

1 tablespoon sriracha

2-3 tablespoons curry powder

1 teaspoon cumin

1 tablespoon salt

1 teaspoon black pepper

pinch of cinnamon

1 cup brown rice, dry

1-2 heads of romaine lettuce, cleaned and dried

chopped green onions and chopped romaine, to garnish

INSTRUCTIONS

1. Combine beef, onion, mushrooms, soy sauce, broth, and all spices in the slow cooker. Stir to combine.

2. Turn the slow cooker to LOW and cook for 7 to 9 hours. 3. Come back and stir in 1 cup of brown rice. 4. Turn the slow cooker to high and cook for an additional 30 minutes to an hour, or until the

rice absorbs the liquid. 5. Serve beef mixture in lettuce leaves, topped with green onion and chopped romaine.

SAUCE INGREDIENTS

1 cup balsamic vinegar

¾ cup ketchup

⅓ cup brown sugar, packed

¼ cup honey

1 tablespoon Worcestershire sauce

1 tablespoon Dijon-style mustard

1 clove garlic, minced

½ teaspoon pepper

¼ teaspoon salt

INSTRUCTIONS

1. Trim fat from meat. In a 3-½- to 4-quart slow cooker, combine onion and bell pepper. Add meat. Sprinkle with thyme, rosemary, salt, and pepper. Pour broth over meat. Cover and cook on LOW 9 to 10 hours or on HIGH 4 ½ to 5 hours.

2. In a medium saucepan, combine vinegar, ketchup, brown sugar, honey, Worcestershire sauce, mustard, garlic, pepper, and salt. Bring to a boil. Reduce heat. Simmer, uncovered, for 20 to 25 minutes or until slightly thickened, stirring occasionally.

3. Transfer meat to a cutting board. Using two forks, pull meat apart into shreds, discarding fat.

4. Strain vegetable mixture, discarding liquid. Return shredded meat and strained vegetables to cooker. Stir in barbecue sauce.

There's no need to add water. This is for two reasons: 1, the hotdogs will release moisture all on their own, and 2, if you have a slow cooker full of hot dog water it'll just be kind of gross to dig through the water to pick them out, and 3 (I lied, there are 3 reasons) if the hotdogs hang out in hot water for too long they'll end up splitting on you.

3. Cover, and cook on LOW for 4 hours, or on HIGH for about 2 hours--check to make sure the ones in the middle are fully hot before serving.

4. Serve with tongs into buns and top with desired fixings.

1 package dry ranch dressing

1 package onion soup mix

1 egg

1. Take some foil and crumple it loosely so that it lines the bottom of your crock. Pour your cup of water in the bottom now as well.

1. To make dry rub, combine all ingredients in a jar with a tight-fitting lid. Shake to blend. Yield: ⅔ cup.

a brush to ensure all ribs are covered. 10. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 4 to 5 hours.

3. Brown chicken breasts on one side over medium-high heat. Flip breasts over and add the garlic to the pan. Cook the garlic until lightly golden and brown the other side of the breasts.

4. Add garlic and chicken to the slow cooker mixture. Stir all together and cook for 6 to 8 hours on low. Check at 6 hours and stir barbecue sauce so it doesn't burn on the side of the slow cooker. Serve with your favorite sides.

INSTRUCTIONS:

1. Slice 2/3 of the onion and place in a single layer at the bottom of a slow cooker. 2. Salt & pepper chicken breasts and place whole on top of the onions. 3. Pour 3/4 Cup of BBQ sauce over the chicken. Cover and set to cook on LOW for 6 to 8 hours. 4. Add the remaining onion and carrots to a food processor using the shredding attachment

until finely shredded. (If you don't have this you can just grate or slice very thinly). Slice the cabbage thinly and toss in a large bowl with the carrot and onion.

5. Using a blender, food processor or immersion blender, combine the dressing ingredients (avocado, yogurt, mayo, pickle juice, vinegar, oil, salt & pepper) until smooth & creamy. If the dressing it too thick, you can add a tablespoon of water to thin it out.

6. Pour the dressing over the cabbage carrot mixture and toss well to coat. Refrigerate for a few hours to let the flavors meld.

7. When BBQ chicken is done, carefully remove the breasts and shred using two forks. Toss in a bowl with some of the cooking liquid and the remaining BBQ sauce.

8. You can choose to let the chicken cool in the fridge and toss with the coleslaw mixture. Or serve warm with cole slaw on the bottom and pulled BBQ chicken on top.

INSTRUCTIONS:

1. Place beans in a large soup pot or sauce pan and cover with at least 4 inches of water. Soak overnight. The next day, drain the beans and cover with clean, fresh water plus a bit of sea salt. Bring to a boil, reduce heat and simmer for 10 minutes. Drain and rinse.

2. Place the cooked beans in the slow cooker. Add at least 6 cups of water, completely covering the beans. Place on low (long cook) setting and cook for 10 hours. The beans are ready when the skins split. Scoop out 2 cups of the cooking liquid and set aside. Discard the rest of the liquid and return the beans to the slow cooker.

3. In a medium skillet heat 2 tablespoons olive oil. Add onion and garlic. Reduce heat and sauté until soft. Add to beans in the slow cooker.

4. In a small bowl combine tomato paste, ketchup, molasses, agave nectar, mustard, sea salt and black pepper. Add reserved 2 cups bean-cooking liquid. Mix well. Pour over bean/onion mixture. Cover and cook on LOW for 6 hours.

5. Stir in crumbled bacon, reserving a little to sprinkle on top if desired.

1. Rinse and drain the black and white beans. Place in slow cooker (placed in separate slow cookers so that the white beans wouldn’t look gray). Add 4 cups water (to each slow cooker). Cook on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours, or until tender and cooked through.

2. The wheat needs to be cooked as well. Add it to a slow cooker with 4 cups of water and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. You can prepare these all ahead of time. When the wheat and beans are cooked, drain off all the water.

1. In a large bowl, combine 1 cup flour, 2 tablespoons sugar, baking powder and cinnamon. In a small bowl, combine the egg, milk and oil; stir into dry ingredients just until moistened. (batter will be thick). Spread batter evenly onto the bottom of a 5-quart slow cooker coated with cooking spray.

2. In a large bowl, combine the salt, remaining flour and sugar; add berries and toss to coat. Spread over batter.

3. Cover and cook on HIGH for 2 to 2-1/2 hours or until toothpick inserted into cobbler comes out clean. Serve with vanilla ice cream.

S’MORES BROWNIES IN A MUG

Did you ever wonder if you could make brownies in a slow cooker? You can with this recipe for S'mores Brownies in a Mug, which makes individual portions of the delightful dessert. Make these slow cooker brownies straight from the boxed mix. It's so quick and easy, especially with only three ingredients. Add graham crackers and marshmallow cream on top and you have a delicious slow cooker brownie recipe that the whole family will enjoy.

SERVES: 4

COOKING TIME: 3 HRS ON HIGH

INGREDIENTS:

brownie mix

ingredients brownie mix calls for

marshmallow crème

graham crackers, crushed

INSTRUCTIONS:

1. Mix brownies according to directions. 2. Spray inside of 4 mugs with cooking spray. Fill them no more than halfway with batter. 3. Set in slow cooker and cook on HIGH for approximately 3 hours, or until inserted toothpick

comes out clean. 4. Use an oven mitt to remove mugs from slow cooker. Let them cool. 5. Top with marshmallow crème. Sprinkle crushed graham crackers on top.
