Build a business plan for your business idea. Explore entrepreneurial characteristics and behaviors, create a business model and spend two weeks evaluating the business concept. Write a marketing plan, management plan, a customer service plan and financial plan. This course is required for all program-specific Entrepreneurship Certificates. Class provides the basic principles of food safety and sanitation as they apply to food service operations.

Includes instruction on federal, state, and local sanitation regulations; personal hygiene; HACCP protocol; microbiology; preventing foodborne illnesses through fl ow of food systems; development and management of a comprehensive cleaning and sanitizing program; and basic concepts of workplace safety.

Also includes training on responsible alcohol service. National Restaurant Association ServSafe Test will be given as a course assessment and certifi cation may be received with a passing score.

A combination of lecture and lab sessions. An introduction to fundamental culinary principles, techniques and operations.
