• 2006– French fry makers were struggling to stand apart in a market that was shrinking 10% a year.

• Industry assumptions (pain points): to make french fries, you have to fry them; frying requires a lot of oil.

• Cooking oil is expensive, and dangerous when hot. Cleaning and disposing is difficult. Using so much oil is unhealthy and fattening.
