The custom of a Christmas tree, undecorated, is believed to have begun in Germany in the first half of the 700s.

The earliest story relates how a British monk and missionary, St. Boniface, was preaching a sermon on the Nativity to a tribe of Germanic Druids, outside the town of Geismar.

To convince the idolaters that the oak tree was not sacred and inviolable, the “Apostle of Germany,” fell one on the spot. Toppling, it crushed every shrub in its path except for a small fir sapling.

A chance event can lend itself to numerous inter-pretations, and legend has it that Boniface, attempt-ing to win converts, interpreted the fir’s survival as a miracle, concluding, “Let this be called the tree of the Christ Child.”

Subsequent Christmases in Germany were cel-ebrated by planting fir saplings.

The history of the modern Christmas tree goes back to 16th century Germany.

In Alsace (Elsass), dated 1561, states that, “no burgher shall have for Christmas more than one bush

of more than eight shoes’ length.”The decorations hung on a tree in that time, the

earliest we have evidence of, were “roses cut of many colored paper, apples, wafers, gilt, sugar.”

Around Strasbourg, there was a widespread prac-tice of bring trees (evergreens, not necessarily a fir tree), into houses for decoration during Christmastide.

The modern custom is also connected with the Paradise tree hung with apples, present in the medi-eval religious plays.

The decorations could symbolize the Christian Hosts.

Instead of trees, various wooden pyramidal struc-tures were also used.

In 17th century, the Christmas tree spread through Germany and Scandinavia.

Eventually, the tree was extensively decorated, first with candles and candies, then with apples and confections, later with anything glittering mass-pro-duced paraphernalia.

The success of the Christmas tree in Protestant countries was enhanced by the legend, which attribut-

ed the tradition to Martin Luther, himself. It is a wide-ly held belief that Martin Luther first added lighted candles to a tree.

Walking toward his home one winter evening, composing a sermon, he was awed by the brilliance of stars twinkling amidst evergreens.

To recapture the scene for his family, he erected a tree in the main room and wired its branches with lighted candles.

In England, the tradition was made popular by the German Prince Albert, husband of Queen Victoria.

The German immigrants brought the Christ-mas tree to America in 17th century. Public outdoor Christmas trees with electric candles were introduced in Finland in 1906, and in the United States in 1912.

The claim of the Pennsylvania Germans to have initiated the Christmas tree custom in America is un-disputed today.

And, it’s in the diary of Matthew Zahm of Lan-caster, Pa., under the date Dec. 20, 1821, that the Christmas tree and its myriad decorations, received their first mention in the New World.

The earliest Christmas tree

Chocolate macaroonsIngredients:4 ounces semi sweet or bittersweet chocolate,

chopped3 large egg whites1/4 cup cocoa powder3/4 cup granulated white sugar1/4 teaspoon salt1 teaspoon vanilla extract2 1/2 cups sweetened coconut

Preparation:Gently melt the Chocolate in a double boiler or

place a stainless steel bowl over a pan of water on low boil. Stir chocolate until smooth. Remove from heat and set aside. In a large bowl, whisk the egg whites, vanilla extract, cocoa powder, salt and sugar together. Mix in the melted chocolate and coconut.

Cover bowl with plastic wrap and refrigerate until firm, about 30 minutes to an hour. Overnight is also fine.

If you are going to bake two sheets of choco-late macaroons at a time, then arrange the racks in your oven to divide it into thirds. For baking with one sheet at a time, put one of the oven racks in the center of the oven.

Preheat your oven to 325 degrees F.Cover cookie sheets with parchment paper or

grease them with cooking spray. Drop batter by small mounds (about 1 tablespoon) and space them two inches apart onto prepared baking sheets. (a cookie scoop works well)

Baking time is about 15 minutes or when the macaroons have a shiny appearance. If you are baking with two sheets at a time, switch baking

pans from top to bottom racks halfway through the cooking time. If you are baking with one sheet at a time then rotate the pan halfway through the cook-ing time. This will ensure that the cookies cook more evenly.

Remove from oven and place baking sheet on a wire rack to cool for ten minutes. Remove cookies from baking sheet and let cool completely on rack.

The Perfect Cheese Plate

To add another ele-ment of deliciously easy elegance, set up a cheese plate for guests. Here are some quick tips and rec-ommendations.

• Plan on serv-ing one to two ounces of cheese per person.

• Set out a varietyof cheeses with different textures and flavor pro-files.

• Servethecheesesat room temperature.

• Use a separateknife or spreader for each kind. Cut up a portion of each cheese to let guests know that they can dig in.

Serve complemen-tary finger foodswith thecheeses to help make the most of all the flavors.

Seafood Thermidor DipYield: 3 cups

6 ounces cooked lobster tails and claws, coarsely chopped

1 medium shallot, minced

1 large garlic clove, minced

2 cups Alfredo sauce

3 t a b l e s p o o n s cream sherry

1/2 teaspoon fresh lemon juice

1 1/2 c u p s Grand Cru Gruyere cheese, shredded

6 1/8 ounces crab, lump-style

1/4 cup bread-crumbs

Preheat oven to400°F.

In mixing bowl com-bine lobster, shallot, gar-lic, Alfredo sauce, sherry, lemon juice and cheese; stir together until well-combined. Gently fold in crab.

Placemixtureinshal-low baking dish (approxi-mately 8 x 8); top with breadcrumbs and bake for 15 to 20 minutes.

Spinach Pesto CrostiniYield: 30 servings

Pesto:1 head garlic3 tablespoons extra

virgin olive oil1 pound spinach3/4 cup unsalted sun-

flowerseeds,toasted6 ounces GranQue-

so cheese, grated

Crostini:

1 medium baguette, cut into 1/2-inch-thick slices

1 tablespoon extra-virgin olive oil

Saltandpeppertotaste

8 sundried toma-toes, quartered lengthwise

3 ounces GranQue-

so cheese, grated

Preheatovento375°F.Place garlic in alumi-

num foil, drizzle with olive oil, and wrap. Roast for 45 minutes.

Remove roasted garlic cloves from skin.

Blanch spinach in hot water for 30 to 40 seconds. Remove spinach from wa-ter, and pat dry.

In food processor, blend roasted garlic, spin-ach, sunflower seeds and

cheese until smooth.Reduce oven heat to

350°F.

Place baguette sliceson baking sheet, brush with olive oil, then season with salt and pepper.

Bake for 5 to 7 min-utes, until lightly toasted.

Remove from oven and cool for 10 minutes.

Evenly spread pesto onto crostini.

Top with sundried to-mato and grated cheese.

They’ll love the marshmallow-y Holiday House Treat made of cin-namon toasted oats cere-al. Once the house is built, watch the kids dec-orate their yummy cre-ation with a variety of gumdrops, licorice, icings and candies.

To cater to a more sophisticated palate, Siler suggests Salted Caramel Bacon Cordial Cups. A lavish blend of vanilla pudding, crisp-cooked bacon and whipped cream is fla-vored with caramel ice

cream topping and piped into edible, dark cocoa Candy Melt cordial cups. They’re bite-sized holi-day bliss.

Holiday House TreatMakes about 12 serv-

vored toasted oats cereal4 tablespoons (1/2

stick) butter1 bag (10 ounces) mini

marshmallows1-1/2 teaspoons ground

ginger1 teaspoon ground cin-

namon Assorted Tube Icing,

Decorating Gel, Sprinkles, Colored Sugars,

Icing Decorations and other favorite candy

Prepare Wilton Stand-Up House Pan with vege-

table pan spray. Place cereal in large

bowl. In large saucepan, melt butter; add marsh-mallows, ginger and cin-namon. Cook and stir constantly until melted.

Pour over cereal and mix well. Spread cereal mixture into prepared pan.

When cool to touch, remove from pan; secure to foil-wrapped cake board with icing.

Decorate as desired with icing, sprinkles, sug-ars, icing decorations and candy.

Salted Caramel Bacon Cordial Cups

Makes about 24 filled cordial cups

1-1/2 cups Dark Cocoa Candy Melts Candy

3 containers (3.2 ounces each) vanilla pre-pared pudding

1/2 cup finely chopped crisp-cooked bacon

1 tablespoon cara-mel ice cream topping plus additional for driz-zling

1/2 cup heavy whip-ping cream, whipped

Sea salt

Fill cordial cup candy mold 1/3 full with melted candy.

Using a decorator

brush, paint the candy up the sides of each mold to the top edge. Coat mold so that no light can be seen through the shell.

Refrigerate until firm, about 5 minutes. Repeat if needed. Carefully remove shells from mold.

In medium bowl, com-bine pudding, bacon and

1 tablespoon ice cream topping; mix until thor-oughly combined. Fold in whipped cream. Refrigerate at least 1 hour.

Using tip #33, pipe fill-ing into candy cordial cups. Drizzle with addi-tional ice cream topping and sprinkle with sea salt.

Creating, decorating a gingerbread house fun for all

(Family Features) From sugar plums to sugar cookies, the holi-days may well be the sweetest season of all. But when all of that cel-ebratory goodness comes with extra calories, the most wonderful time of the year suddenly becomes less sweet.

Fortunately, there are ways to trim calories in your favorite recipes this holiday season without sacrificing flavor. Simple substitutions for higher-calorie, higher-fat ingre-dients can help make a big impact.

Follow these easy tips to convert original reci-pes—like Grandma’s famous apple crisp, sweet potato casserole or cut-out sugar cookies—into great-tasting, reduced-calorie treats:

Substitute the Sugar: Sugar adds sweetness,

structure and moistness to baked goods, but the calories add up at 760 calories per cup. Try a natural sugar substitute specially formulated for baking, such as Truvia Baking Blend. Truvia Baking Blend is a mix of sugar and zero-calorie Truvia sweetener, which is made with the best tasting part of the stevia leaf. Use half as much Truvia Baking Blend as you would sugar to cut up to 75 percent of the calories per serving from sugar.

Cut the Fat: Use cano-la oil to replace all or a

portion of shortening and butter in the recipe, in order to reduce satu-rated fat in cakes, cup-cakes, cookies and muf-fins. To cut total fat, use applesauce or nonfat Greek style yogurt for a portion of the oil in a recipe. Limit fat reduc-tion to no more than 50 percent to help keep the recipe texture close to that of the original.

Sugar Cookies Yield: 6 dozen cookies1 cup unsalted butter 1 cup Truvia Baking

Blend2 eggs 2 teaspoons vanilla

extract1 tablespoon skim

milk4 cups all-purpose

flour1/2 teaspoon baking

soda1/2 teaspoon salt

In large bowl, cream together butter and bak-ing blend until smooth. Beat in eggs, vanilla and milk.

Combine flour, baking soda and salt in a sepa-rate bowl. Gradually add flour to creamed mix-ture, beating well after each addition.

Place dough on lightly floured work surface. Divide dough in half; pat each into a circle and wrap with plastic wrap. Chill dough for 30 min-utes or until slightly firm.

Preheat oven to 350°F. Roll chilled dough to 1/4- to 1/8-inch thickness on lightly floured surface.

Cut with cookie cutter and place cookies 1 inch apart on lightly greased cookie sheets.

Bake for 10 to 12 min-utes or until edges of cookies are lightly browned.

Allow to cool 5 min-utes on pan, and then place cookies on wire rack to cool completely.
