Golden Age of Classics

Here comes the section for cocktails of the Golden Age! While we’re living in a new golden age of cocktails, where bartenders from all over the world are breaking new ground and putting together ingredients never before combined,

the first Golden Age of the cocktail which took place between the 1900s and 1950s, Was the magical years for bar keeps. During these years, the golden age was in full swing. Bartenders were soon highly sought after assets when wanting to build

a public house of good repute. Cocktails were ofter what drove guests to respective saloons and clubs and a bartender that could create a famous signature cocktail became darlings in the eyes of the public and media. The art of mixing drinks was firmly in place. Cocktail recipes created during this period are still prevalent today.

A much celebrated period on cocktail history is worth remembering. Cheers to the golden aged drinks!

Aviation 299Gin, Maraschino Liqueur, Citrus, Aromatic Violet This classic was created by Hugo Ensslin, head bartender at the Hotel Wallick in New York, in the early twentieth century. It first appeared in print in a book by Ensslin’ Recipes for Mixed Drinks in 1916.The drinks name, The Aviation, was an honor to the burgeoning era of flight that was, literally,taking off at that time. Ensslin’s addition of the mere 1/4 ounce of the dark purple creme de violette gave the drink a sky blue hue which only added to the romance of the idea.

Blinker 299Rye Whiskey, Fresh Pink Grapefruit, Raspberry Gomme The Blinker first appeared in Patrick Gavin Duffy’s The Official Mixer’s Manual 1934. It is named for the horse blinders that were also referred to as “blinkers,” so this drink should help you keep your eyes on the road. The Blinker uses rye’s funky assertiveness and raspeberry’s sweet fruitiness to disarm the grapefruit of its malicious intent. The citrus bite remains, along with the grapefruit’s distinctive bitterness, but in a mix such as this it’s made to play its part.

Brandy Crusta 370Cognac, Cointreau, Citrus, Aromatic Bitters Many things can be said about these golden oldies, but one thing remains; they stood the test of time.The crusta is said to be invented by Joe Santini at his bar “The Jewel of The South” in New Orleans in 1852. This recipe then made its way to “Professor” Jerry Thomas’s book – “How To Mix Drinks” in 1862. Dark & Stormy 299Dark Rum, Fresh Ginger, Lime, Ginger Beer The Dark & Stormy embodies two great tastes of the tropics that and is darker than most tropical drinks, but is just as refreshing. The simple mixture of dark rum and ginger beer makes for a great cocktail in any weather. This classic highball is a brand-specific mixed drink that created by the makers of Gosling's Black Seal rum. It is also the national drink of Bermuda, where ginger beers are produced!

Hemingway Daiquiri 299White Rum, Maraschino Liqueur, Fresh Pink Grapefruit, Lime As an offshoot of the well-known Daiquiri, comes the Hemingway Daiquiri, the decadent author Ernest Hemingway’s own version of his favourite cocktail. Created by Constantino Ribailaqua Vert, the legendary owner of La Floridita, Havana, Cuba for Ernest Hemingway, after the great man wandered into the bar to use the toilet so the Hemingway Special was born!

Golden Age of Classics

Last Word 320Gin, Green Chartreuse, Maraschino Liqueur, Lime It was created sometime in the 1920s at the Detroit Athletic Club — by a vaudeville performer, not a bartender —The drink was all but forgotten until It was rediscovered about 8 years ago, when Murray Stenson (of Seattle’s Zig Zag Café) saw the recipe while flipping through Saucier’s Bottoms Up.The Last Word made its way to New York - and then to cocktail glasses around the globe.

Mai Tai (Trader Vic’s Style) 320White Rum, Aged Rum, Cointreau, Sweet Almond, Lime, Aromatic Bitters Victor Bergeron, the proprietor of the famous Polynesian-themed restaurant-chain “Trade Vic’s” is credited for the creation of Mai Tai. This is because, in the 1940s when having friends over from Tahiti, he served them the first ever Mai Tais. One of his friends raised the glass after the first sip and said “Mai Tai Roa Ae”, which roughly translates to “Out of this world! The best!”.

Mint Julep 299Bourbon, Peach Liqueur, Fresh Mint Simple and magnificent, the Mint Julep is mostly famous as the signature cocktail at the Kentucky Derby, where hundred-thousands of it is made every year. But as far as a Julep is considered, it can be based on any spirit of choice. Before the now popular bourbon expression was concocted, brandy was used, both pure and peach or apricot flavoured. Thus, Mint Julep can be a wide range of things, but here at Hyde & Seek Gastro Bar, we serve it with bourbon, unless otherwise requested.

Negroni 299Gin, Sweet Vermouth,Campari As most other classics, the history has plenty of versions, but most common for the Negroni must be when the highly respected Count Camillo Negroni asked the bartender at Caffè Casoni in Florence, Italy to spice up his regular drink of choice, the Americano aka Milano-Torino. The year was 1919 and the bartender Fosco Scarselli replaced the soda water with gin and sim-salabim, the legendary aperitif cocktail was born.

Pisco Sour 299Pisco Grape Brandy, Citrus, Aromatic Bitters Pisco, which is a clear grape eau de vie or brandy, has its origins in both Chile and Peru as both have made their claim for its origin. Nevertheless, Peru does have a city called Pisco, so it is a tough call. The Pisco Sour is consumed in both countries in equal amounts. Peru, however, celebrates its national Pisco Sour day during the first week of February. How cool is that?!

Golden Age of Classics

South Side 299Gin, Citrus, Gomme, Aromatic Bitters, Mint A refreshingly balanced classic of gin and mint with a splash of lime. This vintage cocktail has dodgy past. It is purported to have originated at New York's Twenty-One Club. Some say that Chicago gangsters first created it in an effort at masking the horrid taste of their bootlegged spirits. Some say it was a country club’s summer drink, and others say it was a prohibition speakeasy’s tipple, invented to mask the poor quality of the illegal sprits and bathtub gins.

Whiskey Sour 320Bourbon, Citrus, Egg White, Aromatic Bitters More like a category than a cocktail, the sours come in many forms: whiskey, brandy, liqueur, and etc. A very famous expression is the “Pisco Sour”, which contains a Chilean/Peruvian grape brandy called pisco and is a common cocktail served throughout the region, much like a Caipirinha in Brazil. Here at Hyde & Seek Gastro Bar, we are happy to serve a sour with any base spirit, but for unspecified orders, it will contain bourbon.

Whiskey Smash 299Bourbon, Citrus, Gomme, Aromatic Bitters, Mint Jerry Thomas, who is generally considered the patron saint of bartenders, briefly mentions a Whiskey Smash in his landmark cocktail guide,How to Mix Drinks, or the Bon-Vivant’s Companion, first published in 1862. “This beverage is simply a julep on a small plan,” he writes, and then lists the ingredients as 1/2 tablespoon sugar, 1 tablespoon water, and 1 wine-glass of whiskey.

Don the Beachcomber’s Zombie 499Tiki Rum, Apricot Brandy, Absinthe( Garnish), Aromatic bitter, Fresh Passion Fruit, Pineapple, Brown Sugar, Lime Zombie is a cocktail made of fruit, liqueurs, and various rums, so named for its perceived effects upon the drinker, It first appeared in the late 1930s, invented by Donn Beach (formerly Ernest Raymond Beaumont-Gannt) of Hollywood's Don the Beachcomber restaurant it was popularized soon afterwards at the 1939 New York World's Fair.

Classics Old Fashioned

A section dedicated to some of the tried-and-true-classics that were iconic and widely sipped beverages circa 19th century. Travel back in time and have a sip of the good old stuff!

Bobby Burns 340Scotch Whisky, Sweet Vermouth, Benedictine, Angostura Bitters A classic brown liquor cocktail in a single glass. With its complexity of the Vermouth, the briny Scotch, and the slight sweet herbaceousness of the Benedictine, it really doesn’t get much better than this. Most people would associate the drink with Robert Burns, the famed Scottish poet of the 1700's, but according to Albert Stevens Crockett in The Old Waldorf-Astoria Bar Book it may have been named after a cigar salesman who was a regular at the bar.

Boulevardier 340Bourbon, Italian Vermouth, Campari This classic appeared in Harry McElhone's 1927 bar guide, Barflies and Cocktails. It was the signature drink of Erskine Gwynne, expatriate writer, socialite and nephew of railroad tycoon Alfred Vanderbilt. Gwynne edited a monthly magazine, a sort of Parisian New Yorker, named The Boulevardier, to which the cocktail was named. It is basically a Negroni with bourbon replacing gin. A combo which Negroni lovers should try.

El Presidente 340Rum, Italian Vermouth, Cointreau, Grenadine The El Presidente is a Cuban-born cocktail from the Dark Days of American tippling – Prohibition. The history of the cocktail is somewhat hazy, with several different bartenders credited with creating it in honor one or more Cuban presidents in various different bars. First accurately described in a 1919 article in the New York Evening Telegramam and was apparently christened in honor of Mario García Menocal, president of Cuba from 1913 to 1921 and a man who didn’t mind throwing a lip over a cocktail.

Hanky Panky 340Gin, Sweet Vermouth, Fernet Branca A singular, unlikely and delicious classic cocktail that provides a window onto one of the great cocktail bars and one of the great, forgotten bartenders. Created in the early 1900s by Ada Coley Coleman at The Savoy’s American Bar London for actor Charles Hawtrey. He often said to Coley “I am tired. Give me something with a bit of punch in it” this drink was her answer.After finishing his first one, Charles told Coley “By Jove! That is the real HANKY PANKY ” And so it has since been named.

Martinez 340Gin, Italian Vermouth, Bitter The origin of this cocktail is a bit unclear, but it makes sense to assume it was created around the 1880s, when it first made its way into print in 1884 in O.H. Byron’s book “The Modern Bartender’s Guide”. This is most likely an evolved version of the “Fancy Gin Cocktail”, which uses curaçao as a sweetener instead of vermouth, which wasn’t available until the 1950s in America.

Old Fashioned 340Bourbon, Sugar, Bitter The Old Fashioned is believed to have been created at the Pendennis Club, a gentlemen’s club in Louisville, Kentucky around the 1880s. It is said that the cocktail was created by the bartender at the club and was popularized by a club member and a bourbon distiller, Colonel James E. Pepper, who brought the cocktail to the Waldorf-Astoria in NYC.

Vieux Carre’ 340Cognac, Rye Whiskey, Italian Vermouth, Benedictine, Angostura & Peychaud’s Bitter Named for the old French term for New Orleans’s French Quarter-Le Vieux Carre’ “the Old Square”.
