Competition Rules;
1. Judges Decision will be final
2. All exhibits must be home grown/produced/made with exception to the flowers/foliage used in floral art
3. Points system for perpetual cups are;
1st - 3pts; 2nd - 2pts; 3rd - 1pt
4. No more than 2 exhibits per person per class
5. Cookery entries must be covered by see through materials
6. No exhibits to be removed before 4pm
7. The committee takes no responsibility for damage or loss that may occur to property or persons

Olive Oil Cake Ingredients
320ml extra virgin olive oil (plus extra for the tin)
300g caster sugar
4 large eggs
½ tsp fine salt
1 tsp vanilla extract
250ml whole milk
1 lemon, zested and juiced
1 orange, zested and juiced
2 tsp baking powder
350g ‘00’ flour
Method
1. Oil and line a 24cm cake tin. Heat oven to 180c/160c fan/gas 4.
2. Put the sugar, eggs, salt and vanilla extract in a large bowl and beat until pale and
fluffy. Using a wooden spoon, slowly stir in the olive oil, milk, lemon and orange
juice. Add the zests.
3. In a separate bowl, mix the baking powder and flour and once combined, fold into
the olive oil mixture.
4. Pour the cake mixture into a tin and bake for around 45 mins, until the top feels
springy.
5. Cool on a wire rack and serve.
