It’s August already and summer is nearly over, at least that’s what the calendar says, certainly not what the weather is saying. A few updates on what the Board is up to these days.... While the lodges are quiet during the summer for the most part, our treasurer and

secretary have been busy cleaning up records with updates from the lodges, and getting things in order for our fiscal year end reporting, which is the last day of August. We’ve had some website troubles, a few bugs in the system, but we seem to have it under control now. We have new items for the store coming in, so be looking for that, and a new banner for use at events (indoor). It’s a beauty, and you should see some promotion of that and how to obtain use of it soon. We continue to receive updates from the museum on the progress with archiving our materials. They have inventoried every single tiny item, which was a job in and of itself, and now the big task of documenting it with photos etc. Lots and lots more to do on this. And lastly, we are gearing up for our fall board meeting in October, which will take place on the east coast this time. Lots of good stuff! Continue to enjoy your summer.

Dear Sisters,

One of my favorite things about Denmark is the food, but especially smØrrebrØd. Growing up, I remember my grandma, aunts, and father all getting together to make smØrrebrØd for special occasions. They made small, half-sized sandwiches with a wide range of toppings. As a kid, I was a picky eater, so I didn’t eat many of them. As I grew up, I learned to like new and different tastes. Our Danish friends began serving smØrrebrØd at get-togethers and I learned about many new and different kinds that I had never tried before. A few years ago, I visited Denmark again and my cousin took me out to lunch–to an authentic smØrrebrØd restaurant in Aalborg. She said, “You must try the traditional herring one. And you must order one that you want to try as well!” So I ordered one herring and one roast beef. When the food came to the table, I was shocked to find that the sandwiches were almost the size of my head! But I did my best to eat as much as possible. Of course, we also washed them down with Aalborg akvavit and a Carlsberg beer. It was one of the best meals I have ever had! And while the smØrrebrØd in each of these memories was incredible, I think the best part of smorrebrod is how people are brought together. No matter if you’re learning how to make it or you’re creating them yourself or you’re lucky enough to have it made for you, you’re undeniably surrounded by other people. I hope you enjoy this issue with several tibits about smØrrebrØd and I hope you continue to surround yourself with Danish culture and wonderful people. Gracing the front of our cover this month is a beautiful selection of Danish smØrrebrØd. I took this photo when in Solvang, visiting the Madrid’s family home. SmØrrebrØd is a very traditional (and delicious!) Danish meal. And while it’s not pictured, you always must remember to have akvavit and a Carlsberg with your meal!

Wisconsin Lodges Share SmørrebrodBy Annette Lind Lodge #15 and Lisa Zanin Lodge #20

Lodge #20 of Kenosha and Lodge #15 of Milwau-kee joined together on July 19, 2017 in Racine, Wisconsin to enjoy a July afternoon getting to know each other a bit better and learning the Dan-ish art of Smørrebrod. Thanks to the organizational efforts of Anna Nielsen of Lodge 20 and Kirsten Weiss of Lodge 15 the two Lodges were able to meet at the Lutheran Resurrection Church in Racine to watch a demon-stration provided by both women on the making of Smørrebrod. After the demonstration, those in attendance lined up to go through a magnificent buffet line and make their own sandwiches and enjoy a delicious lunch complete with a fruit salad, desserts and beverages. After a welcome by Bette Lasch, President of Lodge #20, all of the sisters present introduced themselves with a comment on their preference for warm or cool weather. Wisconsin has been enjoy-ing or suffering, depending on your preference, a lot of hot and humid weather, but when you live in the North, it is hard to complain about heat when you know the winter is just around the corner. After the introduction and a few announce-ments Kirsten and Anna began their wonderful presentation. They demonstrated the making of nine lovely open-faced sandwiches. Included were the following:

They shared a bit of the history of Smørre-brod and several hints on making the sandwiches. We then all had a chance to try our newly learned skills in the delicious buffet they provided. There were three kinds of delicious bread, lots of butter and the main ingredients for all of

the sandwiches demonstrated. In addition there were the toppings: pickled beets, cucumber salad, white asparagus, parsley, peas and carrots salad, red cabbage, pickles, anchovies, lettuce, mustard and on and on. As we sat and enjoyed the delicious lunch there was lots of talk of travels to Denmark, eating Smørrebrod with friends and family, the rules of

Dike, Iowa Danish Sisterhood Lodge # 176Our May meeting featured many delicious open-face sandwiches as well as a beautiful Danish flag cake to celebrate our 55th anniversary. Our special speaker that evening was an exchange student at our local high school. Frederik Kjaergaard from Denmark came after a golf meet to tell us about his impressions of the United States. He had been to California several times before with his family, but really enjoyed his time in Dike this past year. His involvement in golf helped the local team and gave him some very positive experiences with fellow students. Our annual picnic was held in June with a good time of visiting and getting reconnected. In July we met at Lois Stork’s heritage farm for a potluck meal. We were delighted to have Janeen Danielsen, our former president, and her husband attend. After the meal we left the beautiful view from the old 2 story home and toured Lois’s newest addition to her historic building site--a railroad display. She remod-eled a former school bus into a railroad car complete with seats and many train items. It was a fun eve-ning with a beautiful summer setting. We will not meet in August, but wish everyone a good ending to their summer!Janelle Willis, Correspondent

It was a wonderful opportunity to spend some time with Sisters from another lodge and get to know them in an educational and social event and share a little hygge. So often we only see Sis-ters from other lodges at meetings with little time to socialize. There were, at one time, 12 Danish Sisterhood Lodges in Wisconsin. Now only Keno-sha and Milwaukee Lodges survive. It is events such as this that keep our Lodges, not only alive, but thriving. It was a great time.

LODGE #100 NEWSOur June meeting was a social one, celebrating the 110th anniversary of the founding of our lodge. It took place at the Stone Lodge at Port Sanilac, with nine present. A delicious lunch was enjoyed by everyone and they decided to change the July meeting to July 13th. The July meeting took place at Hope Lutheran Church with nine members and one guest. A lovely lunch was enjoyed together put on by co-hostesses, Donne Meddaugh and Dawn Grabitz. A card was passed around to be signed by everyone for Doris Scott’s 90th birthday. A short business meeting took place and directions were given to the home of Anita Seiferlein, who is hosting the August 6th picnic. We sang “Happy birthday” to Dawn Grabitz, who had just celebrated her birthday.

Signe MortenSen

Hej! My name is Signe Mortensen and I am from North Olmsted, Ohio. In the fall I will be a freshman at Shenandoah University in Winchester, Virginia. I plan to pursue a degree in Music Education, it is my hope to teach orchestra and band at a middle school or High school level. I have been a member of the Danish Sisterhood of America for three years. The local lodge, Dankse Damer Lodge 185 has helped me attend Skosoven, a Danish camp in Minnesota, which was an amazing experi-ence for me. With my family, I have had the opportunity to visit Denmark three times to visit our Danish family. I enjoy a variety of activities including dance. I have studied ballet and contemporary dance for the last 12 years. My primary instrument is violin and I have been the concertmaster for my school orchestra for the last three years. I have had an amazing opportunity as a member of

the Contemporary Youth Orchestra for three years. Through this orchestra I have had many amazing experiences including performing at Severance Hall in Cleveland, Ohio. I enjoy playing the piano, clarinet, oboe and cymbals in band at High School as well as I like to go hiking, biking and running in the local park close to my house. I’m very excited to attend Shenandoah University in the fall, and mange tak to the Danish Sis-terhood of America for giving me this generous scholarship.

Colin Crabtree

Colin Crabtree is an incoming sophomore at the University of Central Florida. He enjoys creating and performing music. He performed in his high school’s theater company, school choir and concert band all four years. Colin also enjoys being active in politics and promoting positive change in society. Colin works throughout the summer and schools years and believes that working hard will always pay off. He hopes to travel frequently to foreign countries due to his love of languages and other cultures. He hopes to visit the U.K. and Italy in the near future. Colin be-lieves that understanding people with cultures unlike your own are vital to the human experience. At the same time, recognizing and embrac-ing one’s own culture and heritage is equally as important. As a proud Dane, Colin also plans on visiting Denmark and immersing himself in the

countries’ traditions. He also hopes to become fluent in Danish and be able to truly connect with his heritage. Colin’s main goal is to simply make a positive impact on the world, spreading the message of love and acceptance. I would like to thank the sisterhood again for this opportunity.

HannaH Funk

Hannah Funk was born in Middlebury, Vermont in 1997 to Tom Funk and Elizabeth Maher. Hannah is the eldest of three sisters and six cousins. Her family is a blend of Irish, German, English, and of course, Danish heritage. Her great-great grandparents Christen and Gertrud Hvilsom and their children emigrated from Terndrup, North Jutland to Waterloo, Nebraska, in 1898. Growing up in Vermont, Hannah played ran, skied, and read a lot. She was a member of the varsity soccer team, an enthusiastic ensemble member in school musicals, and the co-leader of the Environmental Ac-tion Group. Hannah spent her junior year of high school studying abroad and learning Spanish in Lima, Perú. Hannah is now completing her first year at Georgetown University’s School of Forest Service in Washington, D.C. Hannah plans to major in

Culture and Politics and minor in Latin American studies. She is currently learning Portuguese and hopes to study abroad in Brazil. At Georgetown, Hannah works in the Office of Sustainability and the on-campus child care center, and is an active member of the Georgetown Renewable Energy and Environment Network (GREEN). This summer, Hannah will be working as a camp counselor in Santa Monica, California at the Painted Turtle, a camp for kids with serious medical conditions. Hannah is proud to be a recipient of the Betty Hansen National Scholarship, and cannot wait to be-come more involved with the Danish Sisterhood!

Megan MaCgregor

My name is Meg MacGregor and I am a recent graduate from Ama-dor Valley High School in Pleasanton, California. I am a dedicated stu-dent-athlete who loves to learn new things and help others. In high school, I competed on the Varsity water polo and swim teams. I also served as the Wellness Co-Chair on the PTSA and worked to address student concerns about stress and mental health. When I am not in the pool or studying, I love to hike, listen to music, spend time with friends and family, and explore the Bay Area. Outside of school, I also work as a lifeguard at my community pool, which has taught me how to enforce rules while showing respect to adults and their children. This fall, I will be studying Psychology with a minor in Spanish at the University of San Diego. This would not be possible for me without your generous schol-

arship. After I graduate, I want to continue my studies in hopes of becoming a clinical psychologist. I would like to do this in order to help others better understand themselves and their emotions so that they may be the best version of themselves that they can be. I would like to thank you for awarding me this scholarship and for making it possible for me to attend the college of my dreams.

SCHOLARSHIP RECIPIENTS

CaSey o’Connor

Throughout my life, I’ve been a very active member or the Tupper Lake School district, participating in anything I could get my hands on. I started by playing baseball and soccer a few days a week in 1st grade, adding on basketball in 5th and 6th grade then joining every club and sport possible once in middle school. By the time that I graduated I was advanced in the art program and two core classes, a part of the Green Team, SADD, Friends of Rachel, Junior Honor Society and then Nation-al Honor Society, junior/senior class treasurer, theater club, Band and Chorus all while balancing three sports every year. I was very immersed in these activities, but never knew what to do beyond that. I had a few ideas, but never knew exactly what it was that I wanted to do. I constant-ly swapped between different fields- ranging from branches of psychol-

ogy to studies in the arts to varying medical fields, including OB, pediatrician, and even declared in 6th grade that I was going to be an ER Surgeon. I never knew exactly what it was that I wanted to do, all I knew is that I wanted to help people in any way that I could- to make a positive change is all I could ask for. It wasn’t until about my sophomore or junior year that I was introduced to art thera-py, where I could make a difference in people’s lives all while doing the thing I love most- art. I fell in love with the concept of this career and then ultimately the school where I could make it all come true, Pratt Institute, where I will be attending in the Fall of 2017 to chase my dreams and help to make even the smallest ripple of change, which is now that much easier, thanks to the Danish Sister-hood for granting me the Betty Hansen National scholarship.

My name is Thomas Wilcoxon and I am currently a student at Northland College in Ashland, Wisconsin. In the fall of 2017 I will be entering my second year of education at Northland, continuing in my studies of envi-ronmental science and natural resources. Northland College has given me a focused, in-depth education in this designated field of study. I am very grateful for the financial help that the Supreme Lodge of the Danish Sisterhood of America has provided me, and the Betty Hansen National Scholarship will help me continue my education, and follow my passion.

In addition to my studies, there are limitless opportunities for com-munity service, and extracurricular outdoor activities. My studies here at Northland have been enhanced by having the opportunity to work and learn at a local sustainable farm.

With Denmark being one of the leaders in environmental research, I plan on visiting during a semester abroad, possibly to the environmentally self-sustaining Samso Island. My Danish heritage is very important to me and I enjoy learning about my family background and our Danish history!

My name is Jessica Kahmar. I am honored to have been awarded the Olga Christensen National Scholarship. I am graduating in June 2017 from Franklin Towne Charter High School in Philadelphia, PA. I am very involved in activities at my school. At Franklin Towne, we have a mentor program. The mentor program involves upperclassmen assisting the incoming freshmen to help ease their transition to high school. I am on the Mentor Council with 11 other students. Mentor Council supervis-es and supports the other mentors. I have enjoyed being a part of this program for the past 3 years. Even though at times it was challenging and forced me to get out of my comfort zone, it has been very reward-ing knowing that I have helped others. When I am not busy with school activities, I have a part time job at Rita’s Italian Ice. It is fun to have a job right in my neighborhood. I am enrolled in classes at the Community

College of Philadelphia beginning in the fall. I am looking forward to starting my college experience. I am grateful to receive scholarship support as it will help me achieve my educational goals.

kriSten Maling

My name is Kristen Maling and I am currently a nursing student at Co-lumbia College of Nursing in Glendale, WI. From an early age I realized that I had a passion for helping other people. Working as a Certified Nursing Assistant my Freshman year confirmed that Nursing was the right career for me. After graduation I hope to work in either mental health or OB/GYN nursing and eventually go on to become a Nurse Practitioner. Besides Nursing, another interest I have is my Danish cul-ture. I am proud of my heritage and celebrate a very traditional Danish Christmas every year with my relatives. I have not mastered making Ae-bleskivers yet, but I love to eat them and I have my own pan to practice with. One of my goals is to travel to Denmark to meet my cousins there and see all of the sites that my mother talks about. I feel very privileged and thankful that the Danish Sisterhood is supporting me in my pursuit to become a nurse.

brett beeHler

My name is Brett Beehler. I grew up in the Santa Ynez valley in California. My mom’s side of the family is 100% Danish, and my great-grandfather was one of the original settlers of Solvang, CA. I went to Santa Ynez Valley Union High School, graduated and moved to San Luis Obispo (SLO) where I got a degree from Cal Poly, SLO in wine and viticulture. After graduation, I got a job at a startup distillery in Buellton, CA as an assistant distiller where I was in charge of the production/blending of all the products. From there, I had a brief stint at a wine bottling facility where I was an assistant bottling line operator (facilitated the bottling of wines produced). Eventu-ally, I moved back to San Luis Obispo and got a job with Firestone-Walker Brewing Company in Paso Robles, CA as a Quality Control Packaging Technician. While working at Firestone-Walker, I did not see myself in that line of work anymore and decided to pursue a different career. Helping

people had always been a quality of mine so I started to look into public service jobs and firefighting stood out to me. I took classes starting last August, got my EMT certification early May of 2017, and also started working as a wildland firefighter in May of an engine in Los Olivos, CA. I have hit all my goals so far and there are a lot more to be completed. This scholarship will help me pay for my upcom-ing fire academy through Allan Hancock College in the spring of 2018. Thank you very much for this scholarship. I am very humbled that I was chosen for this honor.

5 THINGS YOU MAY NOT KNOW ABOUT DANISH SMØRREBRØD

SmØrrebrØd is the Danish word for open-faced sand-wiches. The word smØrrebrØd has the literal mean-ing of “buttered bread.”

SmØrrebrØd was first made by farm-ers. They would pack several left-overs for lunch and use a piece of bread for a plate. They used to throw out the bread, but then began eating that too once they discovered how tasty it was!

Restaurant Oskar Davidson is one of the first known to have served smØrrebrØd. Oskar originally sold wine and his wife made sandwiches for their customers. They created over 170 different smØrre-brØd recipes.

Oskar Davidson’s great-grandaugh-ter, Ida Davidson, continues her family’s tradition with her own famous restaurant in Copenhagen.

SmØrrebrØd is typically made on rugbrØd, a dense rye bread.

Danish Sisterhood of America2018 Denmark Island Tour

Thursday: 9/20/18 - 9:30 am Copenhagen - Tour start, welcome meeting at Hotel WakeUp in Borgergade near Kgl. Nytorv and Nyhavn. Load the bus and

start for Jutland. Overnight at Hotel Jutlandia, Frederikshavn. Dinner at 7 pm.

Friday: 9/21/18 - 9:00 am - Depart for ferry to Laesoe. Tour Laesoe Spa, Laeso Salt production. Overnight at Hotel Laerkely and Østergaards B&B.

Saturday: 9/22/18 - Island tour; Museum of Laesoe. Island history/life presentation at dinner by Laesoe residents.

Sunday: 9/23/18 - Travel by ferry to Frederikshavn; on to the island of Samsoe, which is 100% self-sufficient by renewable energy. Overnight at Hotel Isle Made and summerhouses close to hotel. Dinner at Hotel Ilse Made.

Monday: 9/24/18 - Tour north side of Samsoe and towns of Nordby, Ballbjerg, Mårup and Langør. Visit Samsoe Vinyard. Dinner at 6 pm.

Tuesday: 9/25/18 - Tour Samsoe Energy Academy; visit a lighthouse, the Manor Vadstrup 1771 and towns of Tranebjerg and Balle.

Wednesday: 9/26/18 - Depart for 7 am ferry to Kalundborg, on to Copenhagen; over the bridge to Malmoe, Sweden. Tour Malmoe and Ystad. Ferry from Ystad to Rønne, Bornholm arriving 7:50 pm (dinner on the ferry). Stay four nights at Hotel Siemsens Gaard on the Baltic Sea.

Thursday: 9/27/18 - Free Day on Bornholm! Dinner at 6 pm at Hotel Siemsens.

Friday: 9/28/18 - Christiansoe and Frederiksoe island boat tour; back to Bornholm for tour of Gudhjem. Dinner at 6:30.

Price Includes:11-day guided tour; Transportation in 4/5 star coach bus; 10 nights lodging; Ferries, bridges, island ticket fees; all breakfasts and dinners; Entrance fees to exhibits and more.
