One alerts you to a snakeBy sounding his alarmVocally he will display

And stop impending harm.

They’ll warn you of a dangerIt’s their duty, day and night

Do they like to see you comingWith a shotgun and a light?

While one thinks it’s rewarding,

The other is aghastAnd wants to quit the country

When he hears the weapon blast.

Now, I just got a puppy,Who’s a cute destructive clown,I obtained her from the WilsonsWho live down in Lewistown.

One day, while in the city

She’s out and running hardShe rockets down the alley

Then she orbits through the yard.

ATTORNEY’S ADVICE - NO CHARGE This is not A Joke!! Even If you dislike attorneys. You will love them for these tips. Read this and put a copy in your files in case you need to refer to it someday. Maybe we should all take some of his advice! A corporate attorney sent the following out to the employees in his company.1. Do not sign the back of your credit cards. Instead, put ‘PHOTO

ID REQUIRED.’2. When you are writing checks to pay on your credit card

accounts, DO NOT put the complete account number on the ‘For’ line. Instead, just put the last four numbers. The credit card company knows the rest of the number, and anyone who might be handling your check as it passes through all the check processing channels won’t have access to it.

3. Put your work phone # on your checks instead of your home phone. If you have a PO Box use that instead of your home address. If you do not have a PO Box, use your work address. Never have your SS# printed on your checks. (DUH!) You can add it if it is necessary. But if you have It printed, anyone can get it.

4. Place the contents of your wallet on photocopy machine. Do both sides of each license, credit card, etc. You will know what you had in your wallet and all of the account numbers and phone numbers to call and cancel. Keep the photocopy in a safe place. I also carry a photocopy of my passport when I travel either here or abroad.

We’ve all heard horror stories about fraud that’s committed on us in stealing a Name, address, Social Security number, credit cards. Unfortunately, I, an attorney, have firsthand knowledge because my wallet was stolen last month. Within a week, the thieves ordered an expensive monthly cell phone package, applied for a VISA credit card, had a credit line approved to buy a Gateway computer, received a PIN number from DMV to change my driving record information online, and more. Here’s some critical information to limit the damage in case this happens to you or someone you know. 5. We have been told we should cancel our credit cards

immediately. But the key is having the toll free numbers and your card numbers handy so you know whom to call. Keep those where you can find them.

6. File a police report immediately in the jurisdiction where your credit cards, etc., were stolen. This proves to credit providers you were diligent, and this is a first step toward an investigation (if there ever is one).

7. Call the 3 national credit reporting organizations immediately to place a fraud alert on your name and also call the Social Security fraud line number. I had never heard of doing that until advised by a bank that called to tell me an application for credit was made over the Internet in my name.

The alert means any company that checks your credit knows your information was stolen, and they have to contact you by phone to authorize new credit. By the time I was advised to do this, almost two weeks after the theft, all the damage had been done. There are records of all the credit checks initiated by the thieves’ purchases, none of which I knew about before placing the alert. Since then, no additional damage has been done, and the thieves threw my wallet away this weekend (someone turned it in). It seems to have stopped them dead in their tracks. Here are the numbers you always need to contact about your wallet, if it has been stolen:

A century ago, $1.00 would buy a new pair of shoes, six pounds of coffee, 20 pounds of crackers, or ten pounds of lemon drops. Sure, inflation may have caused a slight rise in prices since the early 20th century, but even back when a kid could buy a chocolate bar for a penny, it was important that we kept our earnings safe. BEEF STEAK I would guess that most of you have noticed the plethora of marinade and kebob recipes recently, billed as newly inspired ways to enhance the flavor of your Beef Steak. Well, it defies common logic to spend 7 to 12 dollars a pound for the finest that Beef has to offer and then mask its’ excellent flavor with exotic spices. I am not against spices, but that is where cheaper and tougher cuts of meat come in. Before we start to cook our steak, let’s get some things out of the way. I have heard many times to cut a clove of garlic in half and rub it on the steak to improve flavor. That would be a mistake. Garlic burns and becomes bitter at the temperatures required to brown a steak so any garlic should be added late in the process. Many people salt their steak before going on the grill or when they first put it on. Salt draws moisture, so any salt added before or during the cooking will pull juices and flavor out of the steak and evaporate on the grill. A room temperature steak will cook more evenly than a cold one fresh out of the fridge. A dry steak will brown and add flavor during cooking better than a wet steak, so it’s best to remove your steaks from the fridge at least 30 minutes before cooking and let them come to room temperature and surface dry. A steak should be lightly oiled on both sides before cooking. A light film of oil helps the steak to brown and adds flavor. It also helps moderate the heat transfer from the grill to the steak to protect the protein from burning. What kind of oil to use will always be a controversy, but keep in mind that most vegetable oils have a low smoke point and burn easily. The milk solids in butter also burn quickly, but clarified butter has a relatively high smoke point and imparts the best flavor, so that’s what I use. If you are afraid of butter then I feel sorry for you but would recommend peanut oil as it has a high smoke point also. Burnt protein and fat are cancer causing free radicals, so the old saw, “If it’s brown it’s cookin’, if it’s black it’s done,” does not apply anymore. To make clarified butter melt a stick of real butter over low heat. Skim the foam that comes to the top and then let the butter slowly simmer until the water has evaporated. It works well for all your frying needs and will keep in the fridge for quite a while. (I don’t know how long.) If you think you need garlic on your steak, you can make garlic butter by mashing a tablespoon of minced fresh garlic into a stick of softened butter, then adding a teaspoon of the butter to your steak as it comes off the grill. Garlic butter has a lot of other uses and you can keep it in the fridge, also. Salt and black pepper are all that are needed to finish the steak, and they should be added to each individual’s taste at the table. But, here I have a problem with most chefs when they recommend a coarse salt. Salt has to dissolve into a liquid to flavor your food and coarse salt takes longer to dissolve, so it takes a lot more coarse salt (high blood pressure, anyone?) to flavor your food unless it’s added at the beginning of cooking, which we don’t want to do with a steak. My solution is to take a good coarse sea salt and grind it to a fine powder with a spice grinder. That way I get instant flavor with a lot less salt. When it comes to steak selection we don’t have much choice anymore. We take what’s offered at the meat counter or we go without. So just a quick run down: Tenderloin is the most tender but least flavorful; Rib Eye, if it’s well marbled with fat, is still very tender with a little more flavor, but if it’s not marbled it will be a little tougher; T-Bone I would consider the king of all steaks with the best combination of tender and flavor; Top sirloin has a great flavor, but is just a little bit shy of tender; Top Round has good flavor but is tough, so it should be mechanically tenderized, and then has to be cooked to well done to be safe. I would not want a steak cut any thinner than ¾ inch or any thicker than 1 inch. Thinner is hard to cook rare and thicker is hard to flavor up. A nice brown crust on both sides of your steak is an important part of flavoring your steak. The temperature of your grill, the temperature of your steak, the thickness of your steak and how well done you want your steak are all variables that determine how long it will take to cook your steak. So let’s try this. You’ll want to start your steak on a fairly hot grill to get that brown crust. Lift the edge and peek often until you see that crust forming, then flip it to get a crust on both sides. Once you have your crust, turn the heat down to medium or move the steak to a medium spot on the grill and cook to desired degree on an instant read thermometer: 125* rare, 135* medium, 145* medium well, 155* ruined. If you don’t have an instant read thermometer, cut a small slit in the middle of the steak and watch it cook to desired degree. Do not—I repeat, do NOT—let the steak rest for five minutes when you take it off the grill. A roast, yes; a steak, no. It is best hot off the grill and any juices that run out onto your plate can be wiped up with a piece of bread and you won’t lose one drop of that delicious Beef Steak flavor. Dear Dave, My husband was recently denied term life insurance because he has a criminal record from a long time ago. The good news is that, in a year, he’ll be far enough removed from the incident that he’ll be eligible for a policy. He has a whole life policy for $75,000 from before, which he doesn’t plan to cancel. We have two small children, so is there another kind of policy he could get in the interim? ~Dana

Dear Dana, If you can’t get term life insurance, you can’t get whole life. It’s the same underwriting process. I only recommend term policies, but under these circumstances I’d keep the whole life in place because he’s basically uninsurable. There are a couple of things you can do in this kind of situation. One thing is to get a mortgage life insurance policy. These are usually available without any kind of major inspection, and they pay off your mortgage, in full, in the event of death. It’s about 10 times more expensive than regular term insurance, but at least it will pay off the house. Another thing to look into is an automatic issue-type policy. Lots of banks offer these when you open an account. Usually, they’ll send you an offer for a $10,000 life insurance policy. But if you pick up four or five of these, then he’s got another $50,000 on top of the $75,000 already in place. It’s still not enough, but it’s better than nothing. But I wouldn’t spend a lot when he’s only got a year left until he can get some good, proper coverage. I recommend people have eight to 10 times their annual income in life insurance coverage. So, if he makes $50,000 a year, he needs to have $400,000 to $500,000 in a good, level term policy. That’s what you guys need to shoot for a year from now! ~Dave
