THAI RICE: ITS IDENTITY, QUALITY, AND INNOVATION It is not by chance that Thailand has been given the name “the Kitchen of the World”. A famous ancient stone inscription, “there is rice in the fields, fish in the water”, portrays Thailand as an abundant land. Blessed with geographical and climatic conditions suitable for agriculture, rice cultivation has been a principal occupation of more than half of the country’s population. For Thais, it is not an overstatement to say that rice and Thai culture are deeply intertwined, as reflected by a common greeting “kin khao laew young?” or “Have you eaten rice yet?”. The home of more than 20,000 strains of rice, Thailand has taken advantage of such diversity to develop new rice varieties through cross-breeding which has been made possible by technological advancement. In recent years, innovation has also played an increasingly important role in the Thai rice industry. It has revealed the many facets of Thai rice, which is no longer limited solely in the realm of food products. Today, it is also used for producing other non-food products such as medical supplies and cosmetics. In effect, this means that Thai rice industry can be more responsive to consumers’ demand and their behavioral changes, and with astonishing innovations, it is now more appealing than ever!
