office in Chinatown. The company was origi-
nally founded in 2006 by Tyler Balliet as a side
project but really took off when he partnered
with Morgan First in October 2008. Since then
the team has grown with two more full-time employees, a small handful of part-timers, fantastic

Swirling the wine in your glass adds
oxygen and intensifies the
smell of the wine.
Really get in there for the full aromas. If your nose gets wet, you’re doing a good job!
Move the wine to the
different areas of your
tongue and mouth for the
full taste.
In order to taste as many wines as possible, spit into dump bucket. It’s what all the cool kids do!
BALANCE: the harmony between major components in wine (alcohol, acidity, tannin, fruit, etc.).
BODy: the weight of a wine in your mouth. Think light body = skim milk and full body = whole milk.
BLEND: to combine two or more lots of wine to achieve a more flavorful and complex wine greater than the sum of each part. Often these wines contain multiple grapes.
DRy: the opposite of sweet. The less sugar a wine has the drier it is.
FERMENTATION: the process of yeast eating the sugar from crushed grapes. This produces alcohol and carbon dioxide.
FINISh: the flavors left in your mouth after you’ve swallowed (or spit) the wine.
NOSE: how a wine smells.
OAk: many wines are aged in oak barrels. The flavor imparted depends on the kind of oak and length of time in barrel.
OLD WORLD: refers to the wine producing countries in Europe. New World refers to countries that “recently” started making wine like the US, Argentina and Australia.
TANNIN: a gritty, puckering quality (similar to the qualities in tea), usually found in young red wines. It come from grape skins and mellows as a wine ages.
VARIETAL: a fancy word for what type of grape was used.
VINTAGE: the date on the bottle that refers to the year the grapes were harvested.
