The New Zealand Seafood Industry
New Zealand is a small, remote, natural paradise, with an abundance of seafood.
With access to over 4 million square kilometres of marine fisheries waters, ranging from sub-tropical to sub-Antarctic, New Zealand has the fourth largest Exclusive Economic Zone (EEZ) in the world.
Of some 130 commercially fished species, approximately 100 are managed through the internationally renowned New Zealand Quota Management System (NZQMS). This system ensures the long term sustainability of our individual fish stocks, the health of our marine ecosystems and the gainful employment of over 26,000 hard working New Zealanders.
New Zealand recently became one of only two countries to achieve a top ranking in a review of fisheries management systems around the world1 and in a second study was ranked first among the 53 major fishing nations for managing marine resources2.
The industry continues to invest considerable resources into the research and development of innovative practices, fishery enhancement, environmental protection and efficient production systems.
Clean, healthy, diverse and delicious, New Zealand seafood is full of natural goodness.

Talley’s
In 1936, Ivan Peter Talijancich (later known as Ivan Talley) established a small seafood business in the small coastal town of Motueka, at the top of New Zealand’s South Island.
Today Talley’s is an international exporter of a wide range of premium New Zealand produce and is still actively owned and operated by the Talley family.
Talley’s prides itself on providing its customers with healthy, sustainable, premium quality, New Zealand primary produce, harvested by skilled, hardworking New Zealanders.

Talley’s Group Limited has a number of seafood processing facilities across the South Island of New Zealand that process the fresh fish catch from over 100 Talley’s inshore fishing vessels.
Talley’s has been based in the small town of Motueka since its humble beginnings in 1936. The expansive site at Port Motueka is home to Talley’s head office, alongside New Zealand’s first registered fish pack house, a fishmeal plant, shellfish processing facilities, an ice cream factory, and a brand new state-of-the-art added value plant with complete IQF and advanced packaging facilities.
Talley’s Timaru is a specialised fish processing facility employing the latest technological advancements in machinery and production methods. Since being acquired in October 2000, Talley’s has turned this plant into one of the most technologically advanced in the country.
Talley’s Blenheim is one of a series of operations involved in the harvest and production of New Zealand’s premium GreenshellTM mussels from the pristine waters of the Marlborough Sounds. Blenheim is also the site of a comprehensive Talley’s vegetable factory.
The rugged West Coast region is in close proximity to some of New Zealand’s largest fishing grounds with an abundance of Hoki present from July through to September. The fishery also attracts the likes of other migratory species such as Tuna. Talley’s Westport, another specialised fish processing facility, is well positioned to take advantage of these seasonal fisheries.
With these strategically located seafood processing facilities, Talley’s ensures the freshest fish on the market, delivered direct, with utmost care and minimal handling.

In 2012 a custom-built twin-tunnel IQF (Individually Quick Frozen) freezer was installed at Talley’s Motueka, capable of providing rapidly frozen product of optimal quality. An entire factory has been built around this state-of-the art piece of machinery to provide a complete range of production and packaging solutions.
Individually Quick Frozen Products: from whole fish to bite-sized crumbed portions, frozen to below -18 °C (-0.4°F) in minutes.
Customer Specified Glazing: From 0 to 10% pick-up, accurately glazed product for premium presentation and protection from freezer burn.

Precise Grading: Portion and batch control to the nearest gram, using advanced automatic grading systems.

Amaltal is Talley’s premium ‘Frozen at Sea’ brand, setting the standard for at-sea processing, whether fishing the deep-sea waters of New Zealand’s EEZ, the tropical waters of the South Pacific, or the icy waters of the Antarctic.
Amaltal’s state-of-the-art modern factory trawlers (Atlantis, Columbia, Enterprise) are equipped with comprehensive automated processing facilities, producing large volumes of premium products. Specialist H&G (headed and gutted) vessels (Explorer, Apollo) deliver optimal catches of targeted species, partially processed, to our customers’ specific requirements. Built in Spain in 1997, the Amaltal Mariner is a purpose built deep-water fresh fish trawler equipped with state of the art fishing electronics.
The F.V. Captain M. J. Souza is a purse seiner that targets schooling and migratory species, both inside and outside the New Zealand EEZ. Travelling as far afield as American Samoa, the vessel specialises in catching Skipjack and Yellowfin Tuna.
The New Zealand fishing industry has pioneered what could be considered the world’s best managed and most sustainable international fishery, that of the Antarctic Toothfish Dissostichus mawsoni. Talley’s has played an integral role in this process, working closely with the relevant NZ authorities and the Commission for the Conservation of Antarctic Marine Living Resources (CCAMLR) to develop, manage, and police this leading fishery. The long-lining fishing vessels Janas and Antarctic Chieftain fish Antarctic and sub-Antarctic waters for this delicacy.

Dredge Oysters are endemic to New Zealand, where they are widely distributed around the coast, and form dense beds in gravel or coarse sand from 25 to 50 metres deep.
The Dredge Oyster fishery is strictly controlled and only open when the oysters are in their best condition. They are harvested from the Foveaux Strait but also from Tasman Bay and Cloudy Bay. Dredge Oyster flesh has shades of white, grey, gold and black.
The creamy coloured meat is delicate and succulent, with a medium oil content; best consumed fresh.
New Zealand’s Scallops are unsurpassable in comparison with others. Caught during an annual season from spring through until early summer, Talley’s Scallops are caught locally in Tasman Bay, Golden Bay and the Marlborough Sounds.
New Zealand Scallops are considered an international delicacy, refined in both texture and flavour. The flesh is a milky white with an orange roe.

Unlike many of the clams now available on the international market, Talley’s clams are 100% wild; harvested from the soft mud flats and silty sand beaches of the north-west of New Zealand’s South Island.
Cockles are one of New Zealand’s largest untapped seafood resources; found in estuaries and harbours all around our nation’s coastline.
Cockles have a delicate creamy flesh with a low oil content, great served with a cream sauce or in a chowder.

Prefering cold water and either muddy or sandy ocean floors, Knobbed Whelks can be found all around the New Zealand coast to depths of several hundred metres.
Knobbed Whelks should be considered as an alternative to clams as they are a small but versatile shelfish. Tender, with a smooth texture and delicate flavour of Knobbed Whelks contain an array of vitamins and high levels of calcium and taurine, effective for anti-aging and cholesterol reduction.

Lemon Sole are widespread in New Zealand waters, particularly in the South Island locations of Tasman Bay, Pegasus Bay, and off the Otago and Southland coasts. Lemon Sole have moist, white flesh with a low oil content. Fillets hold their shape well when cooked.
New Zealand Sole are found only in New Zealand and are most abundant around the South Island, spawning in shallow water during late winter or spring. New Zealand Sole have moist flesh with a low oil content. The upper fillets are slightly darker but whiten on cooking.
Turbot are found inhabiting theshallow coastal margins of New Zealand’s waters. They are the largest of New Zealand’s flatfish. Turbot has a tasty white flesh with relatively smaller flakes than other New Zealand flatfish.

Sand Flounder are endemic to New Zealand and are the most abundant of the flounder species. They are more common in the South Island and widespread around inshore areas, especially at the mouths of large rivers or over sandy bottoms. Female Sand Flounders grow faster and larger than males.
Yellowbelly Flounder are a shallow-water fish most abundant in harbours, estuaries, and muddy bays, particularly in the north of New Zealand. They look similar to Sand Flounder but are plumper, have smaller eyes and larger, dark-edged scales. Their flesh is moist and delicate with a low oil content.
Brill are found only in New Zealand and look very similar to Turbot, however they have a more mottled brown appearance. Brill grow up to 1.5kg in weight and inhabit sandy areas in shallow waters. They have delicate apricot coloured flesh that turns white upon cooking.

Hoki
Hoki flesh is white, moist, delicate and boneless. Above all it is delicious! In New Zealand and many other countries, you will find your McDonald’s Filet-o-Fish is made with Talley’s sustainable Hoki.
Hoki is New Zealand’s most important commercial fish species and we take pride in the fact that our stocks are among the best managed in the world. In 2012 both of New Zealand’s two hoki stocks were re-certified by the Marine Stewardship Council (MSC) as sustainable seafood.
The fishery is managed by strict quotas which determine the Total Allowable Commercial Catch (TACC), which was increased to 130,010 metric tonnes for the 2011/12 fishing year.
The premium fillet of Hoki is highly regarded for it’s versatility and is often used for further processing into a diverse range of consumer products. Hoki is in high demand around the world and is available in a variety of forms. Although the fishery experiences a peak season, Hoki is available year-round.

Orange Roughy are a deep-water species, generally found at depths of 750 to 1200m. Named for its distinctive colouring (it has a reddish body and bluish-tinged belly regions, but turns orange after being caught) and famous for its quality, Orange Roughy is a cornerstone of the New Zealand fishing industry.
New Zealand pioneered the fishery in the 1970’s and is still one of the world’s largest suppliers. Catches are mainly from the Chatham Rise, the southern part of the South Island’s West Coast and some parts of the Challenger Plateau. Targeted specifically for export, the Orange Roughy is a prized catch and valued highly around the world.
Orange Roughy has a delicate flavour, with firm, pure white flesh. Their pearly white fillets are considered a delicacy around the world. The skin and subcutaneous layer is also rich in oil that can be used in a range of applications. Orange Roughy is suitable for all cooking methods, but should be savoured as a premium fillet and cooked in an appropriate fashion.

Arrow Squid are common throughout New Zealand waters but are mainly caught off the South Island coast and the Campbell and Auckland Islands by mid-water trawling.
There are two commercial species of Arrow Squid in New Zealand (Nototodaurus Sloanii and Nototodaurus Gouldi) however the differences between them are so insignificant that they are not differentiated between at a catch level. Both species have smooth cylindrical bodies with short pointed fins. Catches fluctuate depending on seasonal conditions because of a short life cycle, common to all squid species.
Talley’s Arrow Squid is either frozen at sea whole or brought ashore fresh for further processing. With a light, subtle taste and firm, yet tender flesh, Arrow Squid have proved popular all around the world.

Antarctic Toothfish inhabit the cold seas surrounding Antarctica, at depths ranging from 200 to over 2000 metres. The main fishery is centred in Antarctica’s Ross Sea (directly to the south of New Zealand) and is only active over the summer months, during which time the sea ice thaws allowing access to the fishing grounds. Toothfish are caught on demersal longlines, mainly at depths ranging between 700-1800m.
The Antarctic Toothfish fishery is strictly managed under the Convention for the Conservation of Antarctic Marine Living Resources (CCAMLR), an international treaty agreed to by New Zealand and 24 other nations. These nations form a Commission that manages Antarctic fisheries with the goal of preserving species’ diversity and stability of the entire Antarctic marine ecosystem while allowing for rational harvesting of marine species.
The fishing vessels Janas and Antarctic Chieftain fish for Talley’s through New Zealand Longline Limited, catching Toothfish in the Ross Sea over the summer months and in sub-Antarctic regions over the rest of the fishing year.

Albacore Tuna belong to the Scombridae family and are widespread in the warmer tropical waters north of New Zealand, where they arrive in the summer months. Generally they are found over the outer continental shelf and are attracted to current boundaries. Some deep-swimming adults may be found as far as 45° South. Smaller, surface-schooling juveniles appear in the summer from the Bay of Plenty to Cook Strait and down the west coast of the South Island.
Albacore are caught by smaller New Zealand vessels using the troll/pole method. New Zealand’s Albacore fishery has been certified as sustainable by the MSC. Catches for the 2010/11 year were in excess of 3,000 tonnes.
Albacore have medium-firm pinkish flesh with a steak-like texture and large moist flakes. They have a medium oil content with more Omega-3 than other tunas. When canned it is called ‘white tuna’.

Skipjack Tuna are typically a schooling species, with juveniles and adults forming large schools at or near the surface in tropical and warm-temperate waters to at least 40° South in New Zealand waters.
The western and central Pacific Ocean supports the largest tuna fishery in the world by volume. A large portion of this catch comes from purse seine fisheries for Skipjack Tuna.
Skipjack movement is variable but is thought to be influenced by large-scale oceanographic conditions. Individual tagged Skipjack Tuna have shown movements of over several thousand nautical miles but also exhibit periods of residence around islands in the central and western Pacific. They migrate to warmer waters for the winter months. Spawning occurs year-round in tropical waters.
Based in the Western and Central Pacific for most of the year and returning to New Zealand during the summer months, the Talley’s Fishing Vessel Captain M. J. Souza specialises in catching Skipjack Tuna.

Southern Blue Whiting belong to the Gadidae family (true cods) and have a slender but moderately rounded body, large eyes and mouth, and loose scales that are easily dislodged. They are a schooling species generally confined to sub-Antarctic waters. Although dispersed for much of the year, they form aggregations when spawning (August - September) that are the focus of the commercial fishery. Four spawning areas have been identified: Bounty Platform, Pukaki Rise, Auckland Islands Shelf, and Campbell Island Rise.
Southern Blue Whiting have highly variable recruitment with large but infrequent year classes often dominating the population. Despite this, Southern Blue Whiting is extremely well managed and has been certified as sustainable by the MSC. Each stock is subject to independent scientific assessment and has a stock-specific TACC which is set by the New Zealand Government.
Southern Blue Whiting are an excellent fish for high level processing, being used in the production of fish balls, fish-cakes, etc. There is also huge potential in fillet production.

Three Jack Mackerel species are found around New Zealand, varying in colour and number of scutes. All three species are managed under the same collective TACC.
They are pelagic fish, preying on plankton and small fish, schooling mid-water in coastal waters all around New Zealand. Jack Mackerel belong to the family Carangidae which also includes Trevally, Kōheru, and Yellowtail Kingfish. They can be distinguished by their lateral line, which has a distinct kink midway down the side of the body.
Jack Mackerel are summer spawners and often occur in large schools. It is thought that they live close to the bottom at night and near surface during the day. They are fast growing and live for 15 to 25 years, reaching sexual maturity after around 6 to 7 years. They are caught mainly off the west coast of North Island.
Jack Mackerel fillets are dark but lighten on cooking. They are oily and are high in Omega-3. Jack Mackerel is suitable for most cooking methods.

Smooth Dory belong to the Oreosomatidae family (Oreos) and are a deep-water species found only in the Southern Hemisphere. Smooth Dory is the only species in the genus Pseudocyttus. They are caught along the Chatham Rise and in the south-eastern area of New Zealand’s EEZ at depths between 600 and 1200 metres.
Smooth Dory spawn from late October to December, particularly on the southern Chatham Rise. The New Zealand Oreo fishery encompasses four species of Oreo Dory (Smooth, Black, Spiky, and Warty) managed in unison.
Smooth Dory gets its name from the fact that its scales are very small (and easily dislodged) and because it lacks the large dorsal spike present on the closely related black and Spiky dories.
Smooth Dory fillets are large and white; they are firm and do not flake easily, holding together well when cooked. Because of this they are a versatile fish species, suitable for most cooking methods.

Black Dory school near pinnacles and feed on crustaceans, fish and squid. They have a very dark body with blackish fins and small, firm scales that cannot be dislodged. The body is wide and angular and is dominated by a very large, green eye.

Barracouta grow to over a metre in length and over 3kg in weight. They are found throughout New Zealand, usually occurring in surface schools. The Barracouta is a predatory species and is notable for the unrelenting fury with which it attacks other fish, sometimes larger than itself. The Barracouta is most abundant around New Zealand’s South Island, where it is regarded as an important edible fish.
The species spawns from August to September off the coasts of both of the main islands, and from November to December around Southland and the Chatham Islands.
This fish is not related to the tropical Barracudas and can be distinguished from the related Gemfish by a single lateral line. The New Zealand fishery is a large resource managed in five stocks and caught by trawling to depths of 200 metres.
Barracouta is most often prepared by grilling, frying or smoking. It is an oily fish with very fine scales that are almost undetectable, and consequently unnecessary to scale. Barracouta has a very distinctive taste.

Red Cod are members of the Moridae family and, although found throughout New Zealand, are more common in southern waters. They are available year round but the catch is largely from November to May/June, peaking in January and May. In spring and summer Red Cod are caught inshore before they move to deeper waters in the winter. They are caught mainly in the Canterbury Bight and off Westland.
By one year of age Red Cod are about 22cm in length, after two years they measure around 35cm and by the time they reach sexual maturity at four years they measure 50cm long. Large mature females may produce a staggering 30 million eggs in a single breeding season.
Red Cod have scales that are soft and easily removed. Fillets are delicate and flake easily when cooked; they are often smoked.

Ling is a member of the cusk eel family and is a bottom dwelling fish mainly caught around the bottom of the South Island and over the Campbell Rise by longlining or trawling .
Ling are widely distributed throughout the middle depths of the New Zealand EEZ, particularly south of latitude 40°S. They live to a maximum age of about 30 years and females grow significantly faster and larger than males.
Ling appear to be mainly bottom dwellers, feeding on crustaceans such as Munida and Scampi and also on fish, with commercial fishing discards being a significant dietary component. However, they may at times be caught well above the bottom, for example when feeding on hoki during the hoki spawning season.
Despite their ugly outer appearance, Ling are regarded as very good eating. They are a versatile, firm-fleshed fish that can be cooked in practically every way or can be served raw as sashimi. The have large, moist bone-free fillets that are ideal for pureeing and making into mousselines or terrines.

Alfonsino is the name used for two deepwater species related to the Red Snapper. Their bodies are smoother than the related Red Snapper that has rough scales with coarse spines on their margins. Alfonsino are widely dispersed within New Zealand waters and are commonly found around seamounts and deepwater reefs in waters 200 to 800m deep.
Alfonsino have a maximum recorded age of 17 years with females known to grow faster than males. Sexual maturity is reached at 4-5 years old and a length of 30cm. No information on spawning is available, but prespawning Alfonsino have been recorded in New Zealand waters. Based on international data, spawning occurs during summer and autumn.
Alfonsino have a white flesh with a firm texture that suits most methods of cooking.

Black Cardinal is a deep sea species (in contrast with the more common shallow water and bright red cardinal fishes of tropical and subtropical seas).
Black Cardinal can be found in deep oceans in many parts of the world and is widely distributed around New Zealand but most common off the east coast of the North Island. They occur at depths of 300 to 1100m, generally in very mobile schools up to 150m off the bottom, over hills and rough ground.
The reproductive biology of black cardinalfish is not well known. Indications are that spawning may occur in May to June and that sexualy maturity occurs at an age of approximately 35 years and length of 50cm.
Cardinal have large loose scales and their flesh has a darker layer immediately under the skin and a darker strip running along the centre of the fillet. This darker meat is easily removed by deep skinning and trimming. The fillets are meaty, and range from 2-4cm thick. Fillets whiten when cooked, are moist and readily separate into substantial flakes.

Monkfish belong to the Uranoscopidae family. Their prominent bony head has eyes that look upwards, giving them their alternative name Stargazer. Monkfish do not have scales.
A number of related species of Monkfish are caught under the STA TACC but only Kathetostoma giganteum is caught in commercially significant volumes. They are very similar to species found around Japan and Europe.
Monkfish are widespread in New Zealand coastal waters and more common around the southern part of the South Island at depths between 50 metres and 500 metres off the continental shelf, although they are also found in deeper waters. They dwell on the ocean floor and bury themselves in soft sediment, preying on passing fish and crustaceans.
Monkfish have dense pearly white flesh that is low in oil content, does not readily flake and has often been compared with that of Crayfish (Rock Lobster).

Sea Perch occur all around New Zealand. They can be found in waters from the shoreline out to depths of 1200m, but are most common at depths of 150-500m. Sea Perch is related to the Northern Hemisphere’s redfish. They have a maximum age of 32-43 years and reach sexual maturity after 5-7 years, at a length of 15-20cm. Sea Perch are opportunistic feeders on seafloor animals.
Tarakihi are common around New Zealand and are regarded highly by both commercial and recreational fishermen. For many years, they were New Zealand’s second most important commercial catch. They are caught around New Zealand throughout the year mainly by trawling, with catches increasing from February to June.

Red Gurnard belong to the Triglidae family and are widespread around New Zealand. They are found on sandy shell seabed to a depth of approximately 180 metres. Small juveniles prefer shallow waters and are therefore often caught in shallow harbours.
They have succulent medium textured flesh with a low oil content, consequently fillets hold together well when cooked.
Leatherjackets are widespread around New Zealand and commonly found in rocky, weedy areas from the shore to depths of around 60m. They live to at least 7 years, maturing after 2 years at a length of 19–22cm. The males defend territories and eggs are laid within nests on the seafloor in spring and summer.

Mainly fished from grounds in the Cook Strait and off the west coast of the South Island at depths of around 400m, Blue Warehou have a medium-textured flesh with medium to low oil content. They are best cooked by moist heat methods; ideal in strong-flavoured dishes such as curries.
Silver Warehou are more slender in shape than Blue or White Warehou. They are generally found at depths of 300-500m on the Chatham Rise, the outer Canterbury Bight, off the west coast of the South island and along the shelf edge south east of Stewart Island.
The White Warehou is uniformly greyish white, has no apparent scales or pits, no pectoral blotch, and has a relatively larger eye. It is found in deeper water than the other Warehou species and is most common south east of New Zealand and on the Campbell Plateau in 400-600m of water.

Hake is not generally targeted, but is usually caught by mid-water trawls targeting Hoki at depths of 200-800 metres. Juveniles are predominantly found in inshore regions shallower than 250 m. The Hake caught here is a native to our waters, but similar species are also found around South Africa and South America.
Hake are widely distributed throughout New Zealand waters south of 40°S and reach amaximum age of around 25 years. Most Hake is caught off the west coast of the South Island, but smaller amounts are taken from the southern tip of the South Island and from around the Chatham Islands.
Hake are known to spawn in three areas in New Zealand waters: off the west coast of the South Island, on the Chatham Rise and on the Campbell Plateau.
Hake flesh is moist and white with few bones and a delicate texture. Hake fillets are ideal for portioning as they are of a relatively consistent thickness and texture.

A member of the sea bream family, Snapper are found in New Zealand’s warmer coastal waters - particularly in the northern North Island and Bay of Plenty regions. This fish is mainly taken by bottom longline or trawling, generally from depths of 10-100 metres. Snapper has a tender white to pinkish flesh with a sweet, mild flavour. It can be cooked in practically every way, or alternatively served raw as sashimi.

Typified by large heads with large mouths and eyes, Grenadier Cod have slender bodies that taper greatly to a very thin caudal peduncle or tail. There are a variety of Grenadier Cod species present in New Zealand waters and they are generally caught as by-catch in larger deep-water fisheries. Large scales present on many species make processing difficult but as a result, Grenadier Cod is an excellent, economical alternative to more expensive species as its fillets make for great eating.

John Dory belong to the Zeidae family and are solitary fish that have a range of habitats, from reefs to sand and mud bottoms. John Dory are found in the warm waters around the New Zealand - most commonly in the North Island. They are caught year-round, often in mixed species trawl catches of Snapper and Tarakihi. John Dory has medium flakes and is white when cooked. It is suitable for most cooking methods and has good Omega-3 levels.
Lookdown Dory, also known as King Dory, is found all around New Zealand. It is distinguished from the related Silver Dory and Mirror Dory by the grey fins and higher eye position-well above the upper jaw. Lookdown, Silver, and Mirror Dories are offshore species, while the related John Dory is an inshore species. Lookdown Dory occurs around New Zealand in depths of 200-800m and is the most common of the three offshore dory species.

Bluenose are found in temperate waters of the Southern Hemisphere. They like rough ground on the outer shelf and upper slope, especially from 100 to 500m. Bluenose flesh has medium to thick moist flakes and is white when cooked.
Groper are most commonly caught over or near rocky areas to depths of 250m and often in association with Bass (P. americanus). Collectively, both species are managed under the HPB TACC. Groper make good steaks and have firm white flesh with large flakes.
Also commonly known as Gemfish, Silver Kingfish can usually be found in coastal waters around mainland New Zealand; target fisheries are off the northern and eastern coasts of the North Island. They have delicate white fillets.

Blue Cod are common in colder waters south of the Cook Strait and around the Chatham Islands. Juveniles are often found in shallow water and adults at depths of up to 150m. Blue Cod have medium-textured white flesh with a low oil content and suitable for most cooking methods.
Ribaldo are a deep-water, bottom-dwelling species found at depths of 300 to 1,200m. They are usually caught as by-catch but occasionally by droplines. Their flesh is very soft and moist with a mild flavour and medium oiliness.
Trevally are common around many parts of the North Island and the top half of the South Island at depths of about 80m. They have medium to soft flesh that is marbled pink with a darker fat line that can be filleted out. For peak eating quality, Trevally are bled immediately after capture.

Blue Moki is a type of Trumpeter found throughout mainland waters from the Three Kings Islands to the southern edge of the Snares Shelf and off the Chatham Islands.
Frostfish are widely dispersed over the outer shelf at depths between 200 and 500m and often caught as by-catch in the Hoki and Jack Mackerel fisheries off the West Coast.
Butterfish are a premium fresh fish, only found along the New Zealand coast, where they are widespread and caught in set nets at depths rarely greater than 15 metres. Butterfish flesh has medium to thick flakes and is white when cooked.

Kahawai are a pelagic fish seen in large schools close to the shore around the North Island, in the Cook Strait and north of Kaikoura in the South Island. Commercially, most Kahawai are caught by purse-seine (before being bled). Kahawai fillets have medium to thick flakes with a high oil content.
Ray’s Bream are generally found in offshore waters and occur sporadically. They are common by-catch when fishing for Groper and Bluenose and often caught in the Bay of Plenty and Cook Strait regions. Ray’s Bream are white fleshed and excellent eating.
This species is found in New Zealand waters off the continental shelf, usually at depths of 200-600 meters. Silverside is caught year round as a by-catch species, mainly on the Campbell Plateau. Their flesh is very translucent and of a delicate texture.

Ghostshark is most abundant off the west coast of the South Island and on the Chatham Rise at depths of between 150 and 500m. Much of the landing is a by-catch from the Hoki fishery. Ghostshark has white, firm textured and boneless fillets often called Pearl.
Pale Ghost Shark is similar to Dark Ghost Shark and generally shares the same distribution; however, they do have noticeably different colourings and also softer skin that damages easily but is preferred when cooking skin-on.
Elephant Fish is only found in New Zealand, occurring around the South Island, most commonly off Banks Peninsula, and is clearly distinguished from other chimaeras or ghost sharks by its hoe-like extension of the nose.

A similar species to those found around the world in the family Rajidae, both the Rough and Smooth Skate species can be found all around New Zealand, although the Rough Skate is more common in coastal waters.
Smooth Skate is the larger of the two New Zealand skate species and is usually found in deeper waters. Smooth Skate can also be distinguished by a more pointed snout and flatter disc.
Conger Eel have white flesh, of a firm texture, that is less oily than the flesh of freshwater eels and does not flake readily on cooking.

School Sharks are found throughout New Zealand’s coastal waters but are more common in the the north. Typically School Sharks inhabit the shallower waters of the continental shelf but are known to occur at depths of at least 200m.
Spiny Dogfish occur almost worldwide in cool temperature waters. In New Zealand they are most common off the south and east coasts of the South Island in waters from 100 to 700m deep.
Rig are caught in coastal waters around New Zealand, usually in long set nets in water less than 50m deep. Rig have firm, white and boneless flesh with a low oil content; fillets do not flake easily. Rig is a favourite of New Zealand’s ‘fish and chip’ shops.

Talley’s also produces fish oil both on-board our factory vessels and onshore at our processing facilities.
Derived from the tissues of oily fish, Talley’s fish oils contain the Omega-3 fatty acids eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA), both well known to provide extensive health benefits. In addition to its dietary attributes, fish oil is also valuable in wide range of applications such as aquaculture feed, cosmetics, etc.
Talley’s high grade fishmeal is produced both on-board our factory vessels and onshore at our processing facilities. It is made through a process of grinding, cooking and drying the fish and offal from our processed fish.
Our powdered fishmeal is a nutrient-rich and high protein supplement feed ingredient that stores well, and is used primarily as animal feed. It is sold in 30kg bags.
Fish fertiliser vastly improves soil structure, grows beneficial bacteria and fungi for better nutrient and moisture retention, reduces the compaction of the soil making it loose and airy, increases topsoil over time, acts as a great foliar spray to bring the nutrients directly from the leaves into the plants, helps keep the nitrogen in the soil to be released when the plants need it, has been known to outgrow chemical fertilizers with much higher N-P-K values and has a shelf life of years, as long as it is undiluted.
