Chicken Chow Mein
Celebrate the Chinese New Year which lands on Valentine’s Day this year with a quick and easy stir-fry. The trick to a good stir-fry is to keep the food moving in the wok all the time and not to overcook the vegetables – they should still have a slight crunch to them.
Serves 4 Ready in 25mins
Cook the egg noodles in a large pan of boiling 1. water according to the packet instructions. Drain well and rinse under cold water. Set aside.
Meanwhile, heat the oil in a large wok or frying 2. pan until very hot. Add the garlic and ginger and stir-fry for 30 seconds. Add the chicken strips and stir-fry over a high heat for 3-4 mins until browned all over.
Add the spring onions, pepper, baby corn and 3. sugar snap peas to the pan and stir-fry for a further 2-3 mins.
Mix together the soy sauce, oyster 4. sauce and honey and add to the pan with the noodles. Stir-fry for a further 2-3 mins until the noodles are piping hot. Serve immediately.

Stirling, originally a Stone Age settlement and later occupied by the Romans, is
where many kings and queens of Scotland ruled and died. Always a bustling town, it is Scotland’s newest city.
The castle, perched high on the cliff top above the city, has been home to some of Scotland’s most famous, and infamous, figures. The infant son of Mary, Queen of Scots, was housed there when he was crowned in the Holy Rood Church as James the Sixth of Scotland, later to follow Elizabeth the First on the throne of England, uniting the two crowns.
The church is one of only two surviving buildings in the United Kingdom where a coronation has taken place. Westminster Abbey is the other.
From the castle ramparts, visitors can view seven battlefields, all of which played a significant part in Scotland’s history, such as Stirling Bridge (1297) and Bannockburn (1314).
Below the castle, mediaeval buildings include churches, mansions and public houses. There are special walks designed to ensure visitors don’t miss any of the important sites. The Old Town Walk takes the same route as that covered by kings and commoners alike when moving from the town to the castle. This route was only changed in the 19th century when the city centre was developed. The Black Walk follows the town’s 16th century walls, with purple plaques giving details of the buildings of interest.
Near to the castle is the Old Town Jail, which was once a Victorian reform prison - a place of misery, hardship and cruelty. This is now an interesting and not to be missed tourist attraction.
Stirling is also home to many haunted buildings, most notably The Settle Inn, scene of ghostly manifestations. But with so many battles and murders taking place over the centuries, it’s not surprising that the ghosts walk - and you can walk with them on an eerie night tour designed to take in the
spectral corners where spirits await.
There is even a mystery walk, where amateur sleuths can solve a set of twenty clues on the Eye-Spy Stirling Trail.
No visitor to Stirling can be unaware of the part that William Wallace played in the history of the Scottish nation. The National Wallace Monument was erected in his honour. The tower is 220ft high and, from the top of its 246 steps, views of the glorious Stirling countryside and beyond reward those who make the climb.
Don’t miss the ruined Cambuskenneth Abbey situated nearby. This was where Robert the Bruce held his Parliament in 1326 and is the burial place of King James III.
The vibrant city centre has quality shops, restaurants and a varied nightlife. But there is more to Stirling than the city itself. The surrounding scenery is astoundingly beautiful. Why not walk through woodland and along the river, taking in such sights as Stirling Old Bridge and the Beheading Stone?
Bark does so much more than act as the outer protective covering of a tree. Over
the years it has been used to make canoes, paper and even clothes. Its uses range from medicinal to culinary.
Aspirin is a very common medicine but most people who have taken one will be unaware that the main component of the drug – salicylic acid – derives from the bark of poplar and willow trees. Furthermore quinine, a treatment for malaria and flavouring for tonic water, comes from the outer of the tropical cinchona tree, while research continues into the health benefits of many other tree barks.
Cinnamon sticks are created from the peeled, rolled and dried bark stripped from the young twigs of the evergreen cinnamon tree.
When you uncork a bottle of wine you are seeing another creative use for a tree’s coating. Cork comes from the cork oak tree which survives stripping as long as the bark is taken from the very surface.
But in addition to their practical benefits, trees, plants and shrubs which have texture and colour to their surface bring aesthetic value to the landscape. While leaves and flowers fade and fall, bark remains all year long, and at this rather bleak time of year, can prove an extraordinary highlight to your garden. Many trees and shrubs have been cultivated for their attractive bark and some are suitable for even the smallest of gardens.
Dogwood (Cornus) is a prime example that is small enough to fit into all gardens. Producing vividly coloured stems that brighten up the darkest of days with glowing reds, oranges and yellows, no garden should be without this stunning shrub. The brightest stems come from new growth so this plant needs to be pruned almost to ground level in March. Somewhat larger, is the willow (Salix) which is also extremely attractive and needs the same heavy pruning in early spring. When pruning these plants, you can take hardwood cuttings at the same time to increase your stock.
Other attractive trees include our native Silver Birch. Although it is dainty looking it grows into a substantial tree and this should
only be planted where you have plenty of room. Most other birch trees (Betula) have handsome bark too, but again, many grow large so look out for slow-growing, smaller varieties.
Some eucalyptus trees have a fine grained and decorative outer coating as do many maples, which have the added bonus of producing incredible autumn leaf colour. A particularly fine Acer is the Snake-Bark Maple (Acer capillipes), which has dramatic patterns of white vertical lines over a dark reddish green background.As well as colourful bark, many trees produce intriguing textures and other interesting effects such as peeling. One of the most eye-catching of these is the Tibetan Cherry (Prunus serrula) which has the most amazing bright mahogany coloured bark that looks as if it’s been highly polished. As the tree ages, the bark peels away in strips revealing yet more of this magnificent colour.
Position these decorative trees and shrubs in a sunny spot if possible, so the rare, weak rays of winter sun can catch them and light them up, displaying their full magnificence. In the depths of winter, coloured and textured tree trunks or shrub stems brighten the gloom and are an important aspect of the structural planting of your garden.
Although our British climate isn’t able to supply you with cinnamon or quinine, many other highly ornamental and decorative trees and shrubs add plenty of fascination to your garden. It’s easy to overlook the benefits of bark.
