But here is an interesting cutlet from leftover rice. I always try to add in lot of veggies to the cutlet and this is the best way to feed your kids with vegetables. But I had a cup of leftover rice which i had prepared in the afternoon which was getting wasted. So i thought of adding rice to the cutlet and prepared the cutlet with it. Rice vegetable cutlet taste was very good. End of my day i was very happy that i could use the veggies and also left over rice. Sending this recipe to Kid's Delight - Dressing up Leftovers as well as to Srivalli's Kid's Delight post Ingredients: Grated Carrot - 3/4 cup Grated Beetroot - 3/4 cup Rice - 1 cup Palak/Spinach - 1 cup Onion - 1 cup chopped finely Mixed vegetables - 1 big cup (Beans,Capsicum,Cabbage,Peas) Potatoes - 2 Ginger - 1/2 inch chopped finely Jeera - 1 tsp Haldi - 1 tsp Chilli powder - 1 tsp Garam masala powder - 1 tsp Salt to taste Coriander Leaves - Chopped finely a handful Green chillies - 2 chopped finely Mustard seeds - 1/2 tsp Ginger garlic paste - 1 tsp (optional) Procedure: 1. Boil potatoes, mixed vegetables in your pressure cooker. 2. Place a wide thick bottomed bowl on the flame with 5 teaspoon s of cooking oil in it. On he ating add mustard seeds. On sputtering a dd finely chopped ginger, ginger garlic paste, cumin seeds, turmeric powder, chilli powder & garam masala powder to it. 3. Add chopped onion and fry till transparent.
