Food&Wine Pairing Guide

Fishe flavour of most fish can betricky to match with reds –especially the oily ones like salmon.It depends on the sort of fish but alsohow it is cooked and sauced.Generally the milder the fish, thelighter the wine needs to be unlessthere is a robust sauce. Red wine canwork with full flavoured fish butbeware of reds with considerabletannic structure. So look to lighterreds like Beaujolais, new world PinotNoir (authentic Burgundy rarelyworks with salmon), fruity reds withno oak and low tannin levels.Matching most fish to white wine ismuch safer with a wide assortmentof options. Some of the best ‘fishwines’ are unoaked and can supportelevated acidity which makes them‘clean’ tasting. Oen these wines arealso lower in alcohol (10-13%)which is always nice, we think. Withpure Asian fish cuisine like Sushi,there is no better match than a goodsparkling wine or a nice cool andcrisp Sauvignon Blanc or FrenchChablis.

MeatFor meat dishes there are fewerplaces to ‘trip up’ and so matchingwith wine is less stressful. What wefind is that for the really ‘big’ wines(those over 14.5%) most food can beeasily overpowered. So pairingsimilar ‘wine and food weights’ canbe helpful. is is really the onlymajor tricky spot. e other trickyspot is choosing the right ‘age’ todrink your red wine. Drinkingyoung red wine that is meant to age(i.e. higher end Bordeaux, Burgundy,big California reds, big Italian redsfrom Piedmont and Tuscany, etc.)can be disappointing because thesewines truly need time to developadded complexity, nuances, etc. Justordering or grabbing from the cellara good 2005 Brunello di Montalcinoto have with pasta will undoubtablybe unsatisfactory because the wineprobably is at least 14.5%, the‘weight’ comparison is wrong andthe wine is too young. For the whitemeats like roast pork and chickentry serving a ‘bigger’ Chardonnay,French White Burgundy or even dryRiesling from Alsace or Austria. Ofcourse for the more ‘meaty’ chickenand duck dishes there is usually nobetter match than Pinot Noir,especially good Burgundy.

SaladsSalads are actually quite easy tomatch with wine as long as thedressing isn’t too vinegary or there istoo much of it sloshing around (thisis a big problem today). Most goodGerman wine (or other goodRiesling) is excellent with salads asare most Sauvignon Blanc wines andunoaked Chardonnay. Oen, thebest match if the sun is shining (alittle on the romantic side), is a dryrose. Light to medium red wine likea classic Beaujolais cru (Moulin aVent, Fleurie) can be delicious forthe red wine wine lover who refusesanything white. For Veggie dishesthe best matches are oen theunknown, little, regional wines,including dry white, red and rose.

Pasta & Ricee preparation of pasta and rice inNorth America has come a long wayin a short time. It can be a complexsubject but totally fun since oen thebest flavours are bold and direct.Pasta with red or meat sauce is goodwith almost anything Italian and redprovided the alcohol levels arebetween 12-14.5% and lighter intannins. e current ‘poster wine’could very well be good Chianti oralmost anything red from theVeneto area like Ripasso (except notAmarone, too big). e ‘newer’ areasin the central-south of Italyincluding Marche, Latium, Abruzzo,Puglia and Sicily are all coming onand oen are nice matches as well.White Pastas with cream, butterand/or cheese are oen perfect withclean dry whites (Lots of greatexamples from northern Italy likeSoave). Rice and Risotto dishes callfor something that is usually whiteand can be easily matched with asnappy, dry selection like a goodPinot Grigio. Risotto con funghineeds something bigger and in thered zone.

SpicySpicy Food that is not too, too hot isreally fun to match wine with. Weare surprised that there are not moreAsian style restaurants with goodwine lists. Generally, good GermanKabinett level wine is terrific withAsian food as is simple Alsace PinotBlanc or Pinot Gris and simpleAustrian Gruner Veltliner. Again, ifnot too spicy, Viognier (the hawaiianshirt wine) and Gewurztraminer canalso be a fabulous match. Plush,richly fruity reds with lower aciditycan also be good.

CheeseFor some reason in North America,cheese is most oen matched withred wine when in fact it is far betterwith most whites! Some exceptionsare old parmesan cheese withPiedmont (Barolo, Barbaresco) wineand some so ripened creamycheeses (good Brie and Soumatrain)with red Burgundy. Otherwise agood, concentrated white is bestwith most cheese. Blue veinedcheeses can be exceptional with Portwine.

EggEgg dishes can be perfect with wineespecially the classics matches likeregional French wine. e bestmatches in the 1950’s and 1960’s arestill the best ones today. Julia Childs’amazing cookbook has wonderfulegg recipes complete with classicFrench wines like Sancerre, Pouilly-Fume, St. Emilion, Pomerol, Cotesdu Rhone, Alsace whites, somesimple red Burgundies.

Food and wine is the perfect partnership, so ensuring your wine list compliments your menu is ofparamount importance. It would be important here to mention that your wine selections need not behuge in number. Most wine menus can be perfectly adequate (and even preferred) listed on one page,consisting of a few sparkling wines, 5-10 dry to off-dry whites, 8-15 dry reds, 2-3 roses plus 2-3 dessertwine or Port selections. When deciding on by-the-glass selections it makes perfect sense to severely limitselections unless you have a good way of keeping the wines fresh aer opening.

KEY FACTS

Argentina is the world’s fih biggest producer of wine.e country’s wine regions are widely dispersed and found tothe west of the country, bordering the foothills of the Andes.Argentina has four major wine regions: Mendoza, San Juan,La Rioja and Salta. Mendoza though is the most significantregion and the home of virtually all the wineries of importance,contributing 70% of Argentina’s wine production.

e most typical grape of Mendoza is Malbec, producing redswith grip, structure and density.

e small region of La Rioja is Argentina’s oldest wineproducing region. It specializes in producing the intenselyaromatic white grape Torrontes.

FOOD & WINE MATCHING

Typical Argentine Malbec and Cabernet are ideal when servedwith red meat and in particular Alberta beef, lamb and bison.ese red wines generally are quite robust and can also besubstituted for some of the more modern Italian wines andserved with pasta and pizza. e ‘Argento classic wines’ are alittle bit ‘soer’ and can be matched with a wide assortment offoods including chicken and pork.

e local white variety, Tapiz Torrontes is best enjoyed either byitself, or as a wonderful partner with lightly smoked meats, mildto medium-strong cheeses, and seafood. It is also a greatpartner for spicy food andai cuisine. e local Pinot Grigiowine from Argento is also a great buy and easy to match with avariety of foods.

Australia has had much to cope with during the last couple of years, not least the ever increasing hot climate.is led to droughts and several outbreaks of serious bush fires, causing the destruction of many vineyards andwineries particularly in the Yarra Valley region near Melbourne. Despite this, total crops are not as low asinitially anticipated. More than ever the best buying strategy is to find quality, family oriented brands whereattention to detail is of foremost concern. With a growing lake of lower priced brands and lower quality, look for‘a notch up from entry level’ for the best value for money.orn-Clarke and Fox Creek wines come to mind.

KEY FACTS

Australia is still one of the most popular wine producingcountries in the world, delivering a wide range of wine styles atall price points.

e majority of Australia’s vineyards are clustered into thesouth-eastern part of the continent, and in particular keyregions such as Barossa Valley, Adelaide Hills, Clare Valley andCoonawarra. In addition, becoming ‘hotter’ now is the coolclimate region of the Mornington Peninsula.

e most significant and best loved grape everywhere seems tobe Shiraz, which in the warmer sites can make seductive andjammy, mouth watering wines which are packed with fruitflavours. In the cooler sites the wines tend to be more ‘reserved’,maybe more European in style? When blended with othervarieties Shiraz seems to be a very willing partner with acapacity to show itself deliciously and differently.

e leading white grape is Chardonnay, which is made intowines at all levels from the simple, fruity quaffer through torobust, complex wines. Indeed Riesling, Pinot Gris andSauvignon Blanc can be quite delicious as well, oen unoakedand very good value.

e ‘soness’ and silkiness in most entry level Aussie redsmakes them delicious as aperitifs, even if a littleunconventional. e better reds are dense and richly flavouredwhich makes them ideal for grilled and roasted meats. e verybest wines show unique personality and are best served withfairly simple but high quality foods which would highlight thenatural beauty in the wine.

Australian whites can be delicious as casual aperitifs. e betterwines oen from cooler sites, have higher acidity which makesthem better suited to a wide range of seafoods and poultrydishes.

Renaissance specializes in wines from the Okanagan region in British Columbia.e planted area under vine(about 10,000 acres now) has grown substantially in the last twenty years with distinct climate conditions andsoil types throughout the area. Generally, there are four distinct zones; the North Okanagan (in and aroundKelowna/Vernon area), the Naramata Bench, the South Okanagan (Okanagan Falls, Oliver and Oysoyoos),and the Similkimeen valley. Each have unique conditions which stamp the local wines with specific character.Once considered mostly a white wine producing region, the Okanagan has emerged recently as a crediblesource for interesting red wines as well.

KEY FACTS

Canada benefitted from the signing of the free trade agreementwith the United States in the late 1990’s, which resulted in the“great pull out” of largely old stock vines of less than idealquality. ese were replaced by high quality vinifera vines fromEurope, resulting in the development of a much more successfuldomestic industry accounting for about 42% of all wine sold inWestern Canada from 460 wineries across the country.

KEY WINES FROM THE RANGE

e whites from the Okanagan have proven to be quiteconsistent for their nice fruitiness, clean acidity and purity offlavour. Tinhorn’s Chardonnay is a lovely example of the French‘Maconnais style’ being only lightly oaked with forward fruit anddry apple-like nuances. Also very appealing is the uniquelyfruity and off-dry Ehrenfelser, popularized by Summerhill.Twisted Tree makes lovely whites as well including the terrificViognier/Rousanne blend. All three wineries make deliciousOkanagan Pinot Gris wine as well.

Successful Reds from the Okanagan valley are mostly Bordeauxstyled wines made fromMerlot and Cabernet Franc. It was withMerlot grapes that Tinhorn won the coveted ‘Best Red inCanada’ award in 1998. Because of its generally reliable climate, Chile is less prone to the seasonal vineyard challengesthat can potentially affect more northerly countries such as France, Italy, Germany or Canada.In the 1980’s, when Chile began to dominate the entry level, ‘superb value for moneycategory’, Chilean Cabernet and Merlot shone brightly. Today, Chile has broadened its appealto produce wine at many price tiers including the hot $12-25 retail range. As well the countryuncovered Carmenere, the variety which has turned out to be the ‘signature grape’ for manywineries although it was misunderstood for years as a type of Merlot.

Today the market for German wine in Alberta has developed an interesting, ‘new’ direction. While Albertansstill love to drink the low alcohol fresh and fruity Q.b.A. wines of the Rhine and the Mosel, the more up-marketwine producers, like St. Urbans-Hof, are enjoying a Renaissance of sorts. Spain continues to be a great source of reasonably priced dry wines which seem to fit the modern taste profilefor generously flavoured, so with structure, red wine. While Rioja and Navarra still dominate the qualityoffering for Spanish wine in Alberta, there is increasing interest in regions such as Toro, Priorat and Ribera delDuero for full bodied reds, and Rueda for fresh, crisp whites. We believe there is a tremendous future forSpanish wine in Alberta even though today it is ‘punching below its weight class’. For great value look to thewines of Chivite, one of the best known producers from Navarra.

DessertWines In Canada we can make natural ice wine almost every year, where in othercountries, maybe only 2 in 10 winters are cold enough. Superb ice winesneed sustained temperatures of between -8 and -15 celsius. Beware though,ice wine is a big flavoured wine with lots of fruit, weight and acidity. For amore ‘toned down’ style try a Late Harvest bottling, like Tinhorn Creek.

Germany, for many people is the ‘motherland’ for dessert wine – theiramazing Riesling grapes and stony soil intensify the natural flavours.‘Auslese’ means late harvest. ese wines especially from Nik Weis at St.Urbans-Hof are some of the prettiest wines in the world – being light andflowery in the nose but also with weight and length of flavour.

People may forget that Greece practically started ‘the wine business’. It wastheir culture that prized not only the grapes and their juice but the civilizedapproach to drinking these products at theatre, music and other culturalreadings and events. Mavrodaphne is a lovely dessert wine that is easy tomatch with a wide assortment of foods.

Madeira wine is made in a unique fashion in special vessels that heat and coolthe fortified mixture for a period of months. en, for our offering calledRainwater, it is aged for three years in barrels and becomes richly fruity, onlymedium dry and has nuances of dried fruit and citrus peel.

Sicily is home to the delicious fruity wines of Marsala. e wines can be bothfortified or not. e ones that are not fortified are particularly good as a dessertsipper or used in the kitchen preparation of various dishes.

In South Africa Muscadel is an important variety and for many years wasresponsible for the region’s most famous wine. Our Muscadel offering is namedaer the wife of the late Graham Beck. Beautiful wine; rich and luscious.

From California, Late is made from Viognier grapes that have been almosttransformed into ‘raisins’ by allowing them to remain on the vine until late inthe season. When Mother Nature cooperates and provides humid conditions for‘Botrytis Cinera’ to form on the skins then the wine gets even more interesting.

Ports e Port trade started in earnest as a result of the serious bickering that wasgoing on between France and England a few centuries ago. EssentiallyEngland was buying a great deal of table wine from France at the time and asa result of the ongoing conflicts with France, England was searching foralternative sources and discovered Portugal as a potential source of supply.e concept of ‘fortifying’ these table wines with brandy did two deliciousthings for the wine. One: it raised the alcohol levels and at the same timearrested the fermentation leaving a sweeter wine. Two: it ‘travelled’ betterand was in better condition on arrival than many lower alcohol table winestaking the same trip.

Wood PortCharacterized by the fact that they do most of their ‘maturing’ in woodcasks. As a result they give up their deep red color for a more tawny orauburn hue depending on the time spent in cask. Wood ports do not needdecanting since any sediment is captured in cask prior to bottling.

Vintage PortCharacterized by the fact that the grapes are from a single harvest and they dotheir maturing in bottle. As a consequence vintage port is deeper colored andneeds to be decanted off its sediment prior to serving. Vintage Port is certainlythe most famous (and expensive) ‘style’ of Port but only represents a smallpercentage of the total Port production.

Vintage Character PortA relatively ‘new’ style of Port and is a response to demand in the market for adeeply colored, richly flavoured Port with similar characteristics to Vintage Portbut soer and without the need for decanting. Oen these Ports are much lessexpensive as well. Many restaurants and hotels offer a vintage character by-the-glass which has raised the profile of these excellent Ports.

GrappaGrappa is made from the pomace (pressed out le overs of wine berries) ofwine. e best ones are made by artisanal methods oen in copper stills likethose used by Poli. In Italy because there are so few grappa artisans le, theyare quite busy distilling the pomace from many famous winemakers inaddition to their own production. e best Grappas are oen quite delicatein aroma but still, sometimes surprisingly, very strong in alcohol. eseshould be consumed neat in a special glass (check out the great Riedelgrappa glass) like a fine cognac or scotch. e more ‘pedestrian’ types oenneed espresso to calm them down as in ‘cafe coretto’ (corrected coffee).

Tequilae very finest Tequilas like Trago, are made from the Blue Agave plantgrown in the traditional red volcanic soils (close to Guadalajara) in higheraltitudes and carefully tended by traditional farming families (theJimadores). e key to making great tequila lies in the quality of the plantsand their harvest condition. From there the Blue Agave ‘pinas’ are crushed

and fermented in artisanal stills into the base Tequila usually called ‘Silver’, themost pure form. e best houses make a pure and lovely Silver that is bestserved like a good Grappa – i.e. in a proper glass such as a Riedel Grappa glass.It seems wrong(?) to use a great ‘Silver’ like Trago in a Margerita but the result isamazingly delicious. Oen good Tequila can be aged slightly in barrels withpositive results. ‘Reposado’ is an example of a slightly aged Tequila and seems‘bigger and richer’. Or for a longer aged Tequila try the ‘Anejo’ which has adeeper color still and carries a powerful aroma and flavour.

Bitterse original “bitter”, was created in 1845 in Milan by Bernardino Branca –Fernet Branca then became popular all over the world. Its unique and secretformula has been passed down five generations within the Branca family to thepresent day, remaining unchanged over the years. A unique, bitter liquorproduced from roots and herbs from around the world.
