The Secret … Polyphenols and their Chemical Properties
Polyphenols are an heterogeneous group of molecules responsible for protecting plants from extreme weather conditions. They exert their action thru a potent antioxidant effect.
Polyphenolic compounds found in wine include, non-flavonoids and flavonoids, such as Resveratrol.
Different polyphenols have each particular activities:
