Cara-caranya:1. Pukul butter dan gula hingga gebu.2.Masukkan telur satu demi satu.3. Tuang tepung sedikit demi sedikit.

Bahan B [gaul rata] 230 g tepung gandum] 20 g serbuk koko ] ayakkan 100 g coklat cips 50 g white coklat cips [boleh gantikan dgn coklat rice] 50 g badam cincang [roasted] 50 g nestum

Cara 1. Gaulkan butter dan gula sehingga sebati. 2. Masukkan kuning telur dan esen vanila. Kacau rata. 3. Masukkan bahan B perlahan dan kacaukan dengan senduk kayu. 4. Sudukan adunan kecil2 [besar guli] dalam loyang. 5. Bakar dalam oven yg telah dipanaskan suhu 180'C selama 25 minit atau sehingga masak. 6. Sejukkan dan simpan dalam balang kedap udara.

NOTA : boleh juga gunakan tepung gandum..

Ingredients (for 20 eclairs):

Eclair Dough:2/3 cup Milk2/3 cup Water4 oz. Butter1 cup Flour5 Eggs2 tsp. Granulated SugarPinch of Salt

Chocolate Cream Filling:6 oz. Unsweetened Baking Chocolate1 cup Milk4 Egg Yolks1/2 cup Granulated Sugar1/4 cup Flour

Chocolate Icing:5 oz. Unsweetened Chocolate2 oz. Butter1/4 cup Water

How to Make It:

Eclair Dough:Preheat oven to 425°F1. In a pot, mix water, milk, butter, sugar, and salt. Bring to a boil.2. Once butter has completely melted, take off flame, and slowly pour in flour, stirring constantly.3. Put pot back on flame and continue to work it with a wooden spoon. Continue stirring and kneading with spoon until the dough dries out and stops sticking to the sides of the pot.4. Take off flame. Add eggs, one at a time, stirring energetically.5. Fill a baking sac with batter. Butter a baking sheet. Squeeze out "finger-sized eclairs" onto baking sheet, well-spaced.6. Bake for 10 minutes. Then turn

oven down to 385°F and bake another 10-12 minutes with the oven door open.Voilà!

Chocolate Filling:1. Melt chocolate (chopped) and milk in a pot, and bring to light boil, remove.2. In a bowl, whisk yolks and sugar until it whitens.3. Slowly add flour, stirring.4. Slowly add chocolate and milk, stirring until homogenous.5. Put back in pot, bring to light boil, stirring constantly, until cream thickens and becomes smooth.6. When cream cools off (and eclairs have cooled off as well), you can begin filling the eclairs: Cut a small slit lengthwise, and then stuff with cream, using your baking sac or a small spoon.Voilà!

Icing:Almost done! Hang in there! Chocolate eclair recipes are well-worth the time they take!!!1. Melt chocolate with water in a small pot over a low flame.2. Once melted add butter, whisking the whole time. Should look shiny and creamy!3. Remove from heat. Spread a thin layer on each eclair, using a spatula.4. Wait until icing hardens a bit to serve it.Voilà! And Bravo!

Tip:Even if you are making fewer than 20 chocolate eclairs, make the full quantity of dough (it will prepare

better!). You can always freeze what you don't use.

Bread Pudding

Ingredients

6 slices day-old bread 2 tablespoons butter, melted 1/2 cup raisins (optional) 4 eggs, beaten 2 cups milk 3/4 cup white sugar 1 teaspoon ground cinnamon 1 teaspoon vanilla extract

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.

3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.

4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

VANILLA CUP CAKE

Ingredients

• 2 1/4 cups all purpose flour• 1 1/3 cups sugar• 3 teaspoons baking powder• 1/2 teaspoon salt• 1/2 cup shortening• 1 cup milk• 1 teaspoon vanilla• 2 large eggs 

Easy Cupcake Rec ipe D i rec t i ons

Preheat oven to 350 degrees.  Line

cupcake pans with paper liners.

Combine flour, sugar, baking powder, and

salt in a large mixing bowl.  Add

shortening, milk, and vanilla.  Beat for 1

minute on medium speed.  Scrape side of

bowl with a spatula.

Add eggs to the mixture.  Beat for 1

minute on medium speed.  Scrape bowl

again.  Beat on high speed for 1 minute 30

seconds until well mixed.

Spoon cupcake batter into paper liners

until 1/2 to 2/3 full.

Bake for 20 to 25 minutes or until

toothpick inserted in center comes out

clean.

Cool 5 minutes in pans then remove and

place on wire racks to cool completely.

Once cupcakes are completely cooled,

frost with your favorite frosting recipe or

decorate as you desire.

Coconut Cupcake RecipeIngredients

1½ oz (40g) desiccated coconut

6 oz (175g) confectioners (icing) sugar

7 oz (200g) all-purpose (plain) flour

3 tbsp ground almonds (or hazelnuts)

1 tsp baking powder

4 oz (115g) melted butter

5 egg whites

12 raspberries

1.Pre-heat the oven to 375

2.Line a 12 cupcake pan, with cupcake papers.

3.Combine the coconut, sugar, flour, baking powder and almond meal in a large bowl.

4.Stir in the melted butter.

5.Stir in the egg whites, until well combined.

6.Divide the mixture evenly between the cake cases.

7.Top each cake with a raspberry.

8.Bake for 12 to 15 minutes - until firm to touch.

7.Allow to cool for a few minutes and then transfer to a wire rack.

Notes

    Makes 12 cakes.    

Coconut Cupcake RecipeIngredients

Method

1. Pre-heat the oven to 375oF (190oC).

2. Line a 12 cupcake pan, with cupcake papers.

3. Combine the coconut, sugar, flour, baking powder and almond meal in a large bowl.

4. Stir in the melted butter.

5. Stir in the egg whites, until well combined.

6. Divide the mixture evenly between the cake cases.

7. Top each cake with a raspberry.

8. Bake for 12 to 15 minutes - until firm to touch.

7. Allow to cool for a few minutes and then transfer to a wire rack.

Notes

Lemon Cream Cheese Frosting

Ingredients

1 oz (30g)butter - softened

3 oz (80g)cream cheese - softened

1½ cupsconfectioners (icing) sugar

1 tspgrated lemon rind

Method

1.Sift the sugar.

2.Beat all ingredients together in a small bowl, until smooth and combined.

Easiest Tiramisu Recipe

2 blocks of Philadephia cheese, soften3 eggs, separate the yolks and whites2/3 cup granulated sugar200ml strong coffee (3 teaspoon instant coffee + 3 teaspoon sugar)26 lady finger biscuits2 tablespoon cocoa powder for dusting1/2 teaspoon vanilla extract

Method:1. Cream the cheese and sugar until light and fluffy with a hand whisk in a large bowl. Add the eggs yolks in one at a time and mix well each time. Now you can start beating the egg whites until they reach stiff peaks in another bowl. Make sure your whisk is clean and do not have a drop of oil all or your whites won't rise.

3. Next you want to fold the egg whites into the cheese mixture but first do a little tempering by mixing 1/4 of the egg whites into the cheese mixture first. This will aid the folding process. Once that is done, add the remaining egg whites into the cheese mixture and gently fold them together. Do not over mix. In an 8x8 inch bakeware, dip each of the lady fingers into the coffee mixture and line the base of the bakeware. And then layer the ladies finger with the cheese mixture. Continue with another layer of coffee dipped lady fingers and layer it again with the cheese mixture. You should end with a layer of cheese mixture on the top.

PAVLOVA

4 egg whites1 cup of superfine granulated sugara pinch of salt1/4 teaspoon of corn starch

Method:Pre-heat your oven to 250F, or 120C. Prepare a baking tray lined with parchment paper, do not grease.

1. In a Kitchenaid Professional Standmixer with a whisk attachment *grins*, add your 4 egg whites into the mixing bowl and turn the power on to 7, or medium speed if you're using an electric hand beater. Add salt into the egg whites.

2. Gradually add sugar, as the machine whisk the egg whites into a frothy mountain. After adding all the sugar, turn the power up to 10 and leave it to whip for 5 minutes or until the egg whites are glossy, triple in size and has stiff peaks. Turn off the machine.

You now have a meringue. The consistency of the egg whites should remind you of a very soft marshmallow cloud. Very light a

nd fluffy, almost like cream. Toss the corn starch in and gently fold it into the meringue. Corn starch helps absorb extra liquid and prevents the meringue from sweating. it also gives the meringue more body.

4. Pour the meringue over the baking tray in a large dollop and with a spatula, shape the meringue into a 7-inch diameter disc.

5. Bake in the oven for 1 hour 15 minutes or until a light eggshell color tints the outer layer of your meringue. Once it's done baking, keep the oven door ajar and let the meringue cool in the oven. This will prevent it from collapsing. Once it's cooled, you can top it with some whipped cream and berries. If you want to make this in advance, keep the cooled meringue in an air tight container or wrap it tightly, but gently, with saran wrap and keep it in a cool, dark place for up to 3 days.

Bahan-bahan

250gm mentega 2 sudu teh esen vanila 1 1/2 cawan gula kastor 4 biji telur 4 cawan tepung naik sendiri -

diayak 1 cawan susu sedikit pewarna mengikut

kesukaan - saya guna warna hijau, merah dan koko

secubit garam

Cara memasak

1. Panaskan oven pada suhu 170^C

2. Sapukan loyang pembakar yang bergaris pusat 8 inci dengan sedikit mentega. Ketepikan.

3. Pukul mentega dan vanila hingga putih, tambah gula dan

pukul lagi sehingga kembang dan ringan.

4. Masukkan telur satu demi satu dan pukul rata setiap kali telur ditambah.

5. Masukkan tepung berselang seli dengan susu.

6. Setelah sebati semuanya, bahagikan adunan kepada beberapa bahagian mengikut pewarna yang dipilih (saya bahagi kepada empat bahagian untuk warna hijau, merah, koko dan warna original adunan)

7. Tambahkan pewarna kepada setiap adunan dan kacau rata-rata.

8. Masukkan adunan berselang-seli ke dalam loyang pembakar.

9. Bakar pada suhu 170^C selama lebih kurang 50 minit.

10.Biarkan kek sejuk sebelum dikeluarkan dari loyang.

PUDING ROTI DGN SOS KASTARD

Bahan-bahan

CARA MEMASAK :

-Masukkan semua bahan A dalam bekas yang sesuai dan digaul rata.-Masukkan air dan digaul rata dan sebati semua bahan-bahan ini dan kemudian masukkan butter pula dan gaul dan uli selama 10 minit sehingga adunan sebati.-Bahagikan adunan kepada 60 gm setiap satu dan buatkan menjadi bulat dan ketepikan.-Ambil setiap adunan tapi dan gelekkan sehingga menjadi panjang macam keropok lekor dan lilitkan pada sekeliling sosej.-Perap sehingga roti naik sekali ganda saiznya. Sapukan kuning telur diatas bun dan letakkan cheese slice serta sedikit serbu parsley.-Bakar dalam suhu 180' celcius atau sehingga kuning keemasan.- Keluarkan dan sapukans edikit butter diatas roti ni supaya berkilat dan menarik.

Cara memasak

1. Griskan loyang bulat yang bergaris pusat 9inci dengan butter dan tepung dan panaskan kukusan. Ayak tepung bersama serbuk koko.2. Pukul butter bersama gula castor dan gula perang hingga kembang. Masukkan esen vanila dan pukul lagi.3. Masukkan telur sebiji demi sebiji dan pukul hingga gebu dan kembang.4. Masukkan susu dan tepung yang diayak secara selang seli dan guna kaedah kaup balik hingga adunan sebati5. Masukkan kedalam loyang dan tutup loyang dgn aluminium foil. Kukus selama 1 1/2 jam.6. Bila sejuk barulah diletak atas pinggan kek dan hiaskan dgn choc ganache.7. Kacau kuah percik ini di atas api yang perlahan. Ia perlu dikacau sentiasa sehinggalah menjadi pekat.

Kuah tersebut akan melekat pada senduk apabila telah benar-benar pekat. Apabila masak, perlahankan api seminimum mungkin dan biarkan sahaja kuah tersebut mereneh.

Cara membuatnya:

1. Campurkan bancuhan tepung dengan air, telur dan garam, kisar hingga sebati. 2. Sapukan sedikit marjerin dalam kuali leper dan isikan adunan tadi. 3. Lenggangkan isi adunan dan biar berbentuk seperti lempeng. 4. Setelah masak, angkat dan gulungkan. 5. Gunting dulu sebelum dihidangkan bersama kuah.

Bahan kuah

250gm daging cincang 250ml santan 75gm serbuk rempah daging 1 batang kulit kayu manis 2 kuntum bunga lawang 6 biji buah keluarga 4cm halia 4 ulang bawang putih 10 ulas bawang merah 200gm tomato puri garam dan gula secukupnya

Cara membuatnya:

CARROT POUND CAKE

BAHAN-BAHANNYA :-)125 g mentega2/4 cawan gula halus1/4 cawan gula perang (brown sugar)1 1/2 cawan tepung naik sendiri (self-raising flour)2 biji telur gred A1/2 cawan whipping cream (kalau tak de boleh ganti dgn susu cair)1 camca teh esen vanilla3/4 cawan parutan lobak merah1 genggam isi kacang pistachio, cincang kasar (jika suka)

CARA MEMBUATNYA :-)

1. Panaskan oven pada suhu 175C. Lenser loaf tin berukuran (9 x 4 x 3.5) inci dengan mentega, alas dasar tin dengan kertas minyak, lenser kertas minyak tadi. Ambil 2 camca besar tepung dalam resipi tadi dan gaul dengan lobak parut hingga rata. Ketepikan.

2. Putar mentega bersama gula halus dan gula perang hingga putih, masukkan telur satu persatu dan terus memutar hingga kembang dan gebu. Pada kelajuan sederhana, masukkan esen vanilla diikuti terpung berselang seli dengan whipping cream (atau susu cair), hingga habis, kacau rata.

3. Tambah lobak merah dan cincangan kacang pistachio.

Gaul sebati. Tuang dalam tin tadi dan bakar 1 jam atau hingga masak. Uji kek dengan mencucuk lidi sate di bahagian tengahnya, jika lidi tadi keluar bersih, tandanya kek anda telah masak.

4. Keluarkan kek dari tin dan sejukkan sepenuhnya atas jaring sebelum dipotong. Sesuai untuk minum petang.

TART TELUR MADIHA

Bahan Pastri 125 gm butter 60 gm gula icing 1/2 biji putih telur 1 biji telur merah 220 gm tepung gandum 1/2 sudu teh esen vanila

Semua bahan di atas diadun hingga menjadi doh. Bentukkan doh dlm acuan. cucuk2 dengan garpu dan bakar selama 8-10 minit atau separuh masak pada suhu 175'C.

Bahan2 Kastard telur 280 gm susu segar 160 gm gula (manis sangat.. ku bubuh dlm 130gm aje) 3 biji telur + ½ biji putih telur lebihan buat doh tadi 1 sudu teh esen vanila

Susu segar dan gula dimasak di atas api hingga semua gula larut. Tutupkan api. Dengan menggunakan whisker, masukkan telur dan esen vanila. Kacau perlahan-lahan sahaja. Kemudian tapiskan.

Masukkan adunan ini ke dalam tart yang separuh masak tadi dan bakar selama 15-20 minit pada suhu 175'C. Sejukkan sebelum dialihkan dari acuan

Bahan-bahan untuk cream cheese:250 gm cream cheese20 gm butter70 gm gula kastor1 biji telur

Cara-caranya:Krim cheese sampai licin dan gebu,masukkan gula dan butter ,pukul sampai sebati.Kemudian masukkan telur,pukul lagi hingga kembang .

Keluarkan doh dari peti sejuk.ambilkan sedikit doh masukkan dalam acuan tart dan tekan rata mengikut ketebalan yang dikehendaki.Potong tepi tart dengan pisau agar tepinya sekata.Cucuk cucukkan bawah tart dengan garpu dan bakar sehingga 1/2 masak.Kemudian masukkan cream cheese dan bakar lagi sehingga masak.Jangan terlebih bakar takut intinya merekah dan warnanya tak cantik

Chocolate Cup Cakes

50g (2oz) dark chocolate100g (4oz) butter, softened100g (4oz) soft light brown sugar2 eggs, slightly beaten100g (4oz) plain flour1/2 tsp cream of tartar1/4 tsp bicarbonate of soda1 tbsp cocoa power

1. Preheat the oven to 180°C (350°F), Gas mark 4. Fill a bun tray with 12 paper bun cases or small muffin cases.

 

2. Melt the chocolate in a bowl sitting over simmering water. Set aside and allow to cool slightly. In a large bowl, cream the butter and sugar until pale and light, and then stir in the chocolate. Beat in the eggs gradually, then sift in the flour, cream of tartar, bicarbonate of soda and the cocoa powder. Stir gently to mix. Divide the mixture between the paper cases and bake in the oven for 14-16 minutes or until almost firm in the centre. Cool on a wire rack.

 

3. Meanwhile, make the chocolate icing. Melt the butter and cream together in a bowl sitting over simmering water. Sift in the icing sugar and cocoa powder and mix. It should be of spreading consistency; if it's too wet, add another 25g (1oz) icing sugar. Spread generously onto the cooled cupcakes.

 

Choux Pastry: Preheat oven to 400 degrees F (205 degrees C) and place rack in center of oven. Line a baking sheet with parchment paper. 

In a bowl sift together the flour, sugar and salt. Set aside. 

Place the butter and water in a heavy saucepan over medium heat and bring to a boil. Remove from heat and, with a wooden spoon or spatula, quickly add the flour mixture. Return to heat and stir constantly until the dough comes away from the sides of the pan and forms a thick smooth ball (about a minute or two). Transfer the dough to your electric mixer, or with a hand mixer, and beat on low speed a minute or two to release the steam from the dough. Once the dough is lukewarm start adding the lightly beaten eggs and continue to mix until you have a smooth thick paste. Spoon or pipe 12 mounds of dough onto the baking sheet, spacing them a couple of inches apart.  Beat together the egg and salt for the glaze. With a pastry brush, gently brush the glaze on the tops of the dough. 

Bake for 15 minutes and then reduce the oven temperature to 350 degrees F (177 degrees C). Bake for a further 30 to 40 minutes or until the shells are a nice amber color and when split, are dry inside. Turn the oven off and, with the oven door slightly ajar, let the shells dry

out for a further 10 - 15 minutes. Remove from oven and let cool on a wire rack.

For whipped cream:  In a large mixing bowl place the whipping cream, vanilla extract, and sugar and stir to combine. Cover and chill the bowl and whisk in the refrigerator for at least 30 minutes. When chilled, whip the mixture until soft peaks form. 

To Assemble:  Split the pastry shells in half and fill (or pipe) with whipped cream. Place the top half of the pastry shell on the whipped cream and dust with powdered (confectioners or icing) sugar.

Makes 12 cream puffs.

Chocolate Eclair Recipe

Ingredients (for 20 eclairs):

Eclair Dough:2/3 cup Milk2/3 cup Water4 oz. Butter1 cup Flour5 Eggs2 tsp. Granulated SugarPinch of Salt

Chocolate Cream Filling:6 oz. Unsweetened Baking Chocolate1 cup Milk4 Egg Yolks1/2 cup Granulated Sugar1/4 cup Flour

Chocolate Icing:5 oz. Unsweetened Chocolate2 oz. Butter1/4 cup Water

How to Make It:

Eclair Dough:Preheat oven to 425°F1. In a pot, mix water, milk, butter, sugar, and salt. Bring to a boil.2. Once butter has completely melted, take off flame, and slowly pour in flour, stirring constantly.3. Put pot back on flame and continue to work it with a wooden spoon. Continue stirring and kneading with spoon until the dough dries out and stops sticking to the sides of the pot.4. Take off flame. Add eggs, one at a time, stirring energetically.5. Fill a baking sac with batter. Butter a baking sheet. Squeeze out "finger-sized eclairs" onto baking sheet, well-spaced.6. Bake for 10 minutes. Then turn oven down to 385°F and bake another 10-12 minutes with the oven door open.Voilà!

Chocolate Filling:1. Melt chocolate (chopped) and milk in a pot, and bring to light boil, remove.2. In a bowl, whisk yolks and sugar until it whitens.3. Slowly add flour, stirring.4. Bread Pudding

Ingredients

6 slices day-old bread 2 tablespoons butter, melted 1/2 cup raisins (optional) 4 eggs, beaten 2 cups milk 3/4 cup white sugar 1 teaspoon ground cinnamon 1 teaspoon vanilla extract
