After about 3 to 4 servings of raclette,

a crisp crust forms at the edges of

the cut face. Scrape off this crust

with the sharp side of the Raclette

knife and serve it together with a

regular serving of raclette. This is the

so-called 'religieuse' (religious) and it

tastes phenomenal.

raclette meal can be. This cheese dish warms up many a cold fall and

winter nights. In the summer, raclette is a great alternative to barbecue.

The name 'Raclette' is derived from the French word 'racler' which

means to scrape. You see, the raclette cheese is heated on one

side, after which the melted cheese is scraped off. Traditionally,

raclette cheese is eaten with potatoes, pickles and cocktail

onions, served with white wine or tea. Boska Holland offers
