Directions:
Preheat oven to 350º F.
In a large skillet over medium high heat, sauté onion and garlic in oil until onion is translucent. Add chicken and cook until no longer pink inside. Add taco seasoning, green chiles, beans, corn, salsa, and chipotle sauce. Cover skillet and simmer over medium low heat for 10 minutes.
Transfer chicken mixture to a 9x13-inch baking dish. Top with 1/2 cup cheese and crumbled tortilla chips.
Bake in preheated oven for 15 minutes. Add remaining 1/2 cup cheese and bake until cheese is melted and bubbly.

Dinner theaters offer a fascinating alternative that promises a memorable and stress-free night of fun and excitement.
Arizona’s dinner theaters present a wide array of unique venues, vibrant live entertainment, and scrumptious menu selections. The venues themselves vary from a formal and elegant ambiance, like the Arizona Broadway Theatre in Peoria, to a laid-back rustic atmosphere with a dose of the raucous, like Gaslight Theatre in Tucson. Popular restaurants, such as Oregano’s, and comedy clubs, like the Tempe Improv, also host a different style of dinner theater.
The spectrum of live entertainment that dinner theaters serve up covers everything from glitzy, full-length Broadway productions to sidesplitting skits and musical-comedy
melodramas where the crowds cheer and boo the on-stage antics of the cast and band. Restaurant mystery dinner theaters let you interact with the cast as you help solve crimes that unfold during dinner. The call of the wild echoes through the cool pines of the Bradshaw Mountains
just outside Prescott, drawing women (18 years and older) who seek to challenge themselves physically and mentally. The Arizona Wildlife Federation conducts their three-day workshop, Becoming an Outdoors Woman, beginning at noon on Friday, September 9, until 1:00 p.m. Sunday, September 11, at Friendly Pines Camp.
During this jam-packed weekend, expert instructors introduce women to outdoor skills in a relaxed, informal atmosphere. With 36 different classes offered, participants have the opportunity to learn about hunting, fishing, shooting and gun safety, archery, camping, map and compass reading, and much more. New friendships are often made.
Evenings are filled with fun and entertainment, which includes hawk talks, nature hikes, fashion shows, and wild game tasting. The $250 registration fee covers equipment, food, and lodging in a rustic cabin. Though simple, each cabin has showers and bathrooms.
