We Need 140 g Chorizo Sausage

2 Celery Sticks

2 Red Bell Peppers

2 Onions

3 Garlic Cloves

4 Tablespoons Oil

900 ml Beef Stock

Sour Cream to serve with

Tabasco Sauce

4 Tablespoons Mild Chilli Powder

4 Tablespoons Ground Ginger

2 Tablespoons Cajun Spice

1 Tablespoon Ground Black Pepper

1 Tablespoon Tomato Paste

16 Cooked Tiger Prawns

275 g Long Grain Rice

275 g Beef Fillet Steak

Preparation Step 1

Cut the fillet steak into thin strips.

Place fillet steak strips into a bowl, add 1 tablespoon of the mild chilli powder and 1 tablespoon ground black pepper.

Mix well.

Cut the chorizo sausage into cubes.

Heat 1 tablespoon oil in a frying pan and add the chorizo.

Fry the chorizo until golden brown.

Add the celery.

Add the red bell peppers.

Stir well.

Cook for ca. 4 minutes until celery and red bell peppers begin to soften or brown.

Remove from pan using a slotted spoon and keep warm.

Add two tablespoons oil to the frying pan.

Add the fillet steak strips.

Cook them to your liking.

Remove the fillet steak strips from the frying pan and put them together with the celery and red bell peppers.

Keep warm.

Add more oil to the frying pan, if necessary.

Add the onions and cook until transparent.

Add the tomato paste.

Add the garlic.

Add the rice and stir well.

Add the Cajun spice, ground ginger and remaining chilli powder.

Stir and cook for ca. 2 minutes until the rice turns translucent.

Add the beef stock.

Bring to the boil and simmer covered on low heat for ca. 20 minutes until the rice is tender and most of the liquid has been absorbed.

Stir occasionally.

Return the fillet steak strips, chorizo, red peppers and celery to the frying pan.

Add the cooked prawns.

Add Tabasco to your liking.

Stir and heat gently until piping hot.
