MY French cuisine was declared part of the world’s intangible cultural heritage by

Unesco in 2010, and Paris is the capital of the ‘gastronomic meal of the French’. The city has many Michelin-starred chefs. New restaurants open every month, with a new takeaway concept or fine food store cropping up in one district or other practically on a daily basis. Paris is a hotbed of contemporary, creative cuisine – an ethos inspired by Le Fooding®, the now-famous culinary movement that started in 2000. There are multiple food trends, from street food to single-dish restaurants. Eat out in a food store, watch chefs at work, sample an intriguing set menu, or learn to cook alongside a Michelin-starred chef: there are any number of ways to indulge your love of food and please your palate in Paris. Follow the guide!

> The new craze: eating from a bowl

The single-dish ‘meal in a bowl’ – an attractively presented, tasty recipe made from fresh produce – is catching on fast. Buddha bowls, Poke bowls and Acai bowls now feature prominently on the menu at restaurants serving healthy, morale-boosting meals. What’s more, vegan bowls are becoming increasingly common.

MY >The latest hipster trend: Coffee

The fragrance of good coffee has wafted through the French capital ever since new-style coffee shops with a welcoming atmosphere began opening a few years ago. Most of them serve quick, healthy snacks like avocado toast topped with sprouted grains and chia seed pudding to enjoy as you breathe in the aroma of freshly roasted coffee (of different origins). They source their beans from the best craft roasters in Paris: Belleville, Lanni, Gobelins, Varenne, Ternes, Café Lomi, Véronica Artisan Torréfacteur and Sommelier du café. Serving artisan roasted espresso, filter and cappuccino, plus a whole range of gourmet coffees to sample with guidance from baristas, these places boasting all the latest equipment are havens for coffee enthusiasts. Solicitous service and personalized roasting workshops add to their appeal. Latte art – decorating the foam on top of an espresso – is an increasingly popular trend. What could be a nicer way to start the day than sipping a little heart?

> The Fooding® ethos

Fooding® was launched at the instigation of Nova magazine in 2000. The word is a contraction of ‘food’ and ‘feeling’, and the movement was created to give a modern spin to a food tradition that was resting on the laurels of its Michelin-starred cuisine. The secret of its success: a focus on promoting creative and trendy cooking brimming with surprises and new twists. Events like Fooding® Week and the Grand Summer Fooding® are organized throughout the capital to familiarize the public with this innovative approach to cooking. Plus, every year, the Fooding® bureau publishes a guide featuring restaurants around the world to enable people to discover new culinary talents and daring gourmet initiatives. The guide slots restaurants into a variety of categories such as ‘So good!’, ‘Feel good’, ‘Hurt me!’ and ‘Late night hunger’. Every year, there is a list of prize-winners in each category. In the almost twenty years of its existence, the movement has remained faithful to its original mission statement: ‘Cultivating an appetite for change; rejecting boredom; embracing the beautifully ordinary, and espousing current-day eating trends.’ Tasting the food of today and avoiding feuds about food: that was the original free-thinking credo which inspired the famous collective, and it is still their driving force today.

THEMED RESTAURANTS IN PARIS

Paris has restaurants catering to foodies of all stripes: fans of one specific food item, ethical eaters, vegetarians and meat lovers.

> Single-dish restaurants

Narrow-focus restaurants for fans (of crab, caviar, truffles, eggs, roast chicken and so on), and food bars serving a single dish: quenelles, soup, oysters, blinis or mozzarella. Pure delight if you can’t get enough of your favourite food.

> Dry-aged meat

Despite the spread and popularity of vegetarian and vegan cuisine in Paris in the past few years, red meat still has its fans. Ribeye steaks that have been dry-aged for several weeks to develop flavour are the latest craze. Whether Argentinean canteens, American-style steakhouses or restaurants with a charcoal oven, meat is definitely on the menu!

> Pasta & pizza

Fresh pasta, home-made sauce, marinated summer vegetables … all those much-loved staples of Italian cooking can be found in a variety of Paris restaurants, from unusual trattorias to pizzerias serving up inventive pizzas. And, of course, grissini breadsticks to crunch with an aperitif and a good selection of wine are always on the menu.

The Salon du Chocolat, with its traditional parade of chocolate-covered dresses, is also a firm favourite with chocolate lovers every year!

WINE RELATED

> Wine bars and eat-in wine shops

Paris is the capital city with the largest number of wine bars, often owned by genuine wine aficionados with a passion for their trade who will unhesitatingly recommend what they consider to be the finest vintages. They spend much of their time travelling to vineyards around the country to meet both renowned and little-known winemakers. Natural wines are much in vogue at numerous wine bars, and some have a selection entirely made up of natural, organic and biodynamic wines. Why not seize this opportunity to step away from your usual choices and try something different? Eat-in wine shops are a new concept, born from the fusion between a bar and restaurant, brasserie and table d’hôtes. Often serving traditional-style cuisine, these friendly spots boast plenty of local produce and organic wines.

> Champagne bars

From the ultra-chic bar of the Dokhan’s Hotel to the Dilettantes bar for true aficionados, champagne lovers are spoilt for choice. For an unforgettable experience, you can even have a glass of champagne at the top of the Eiffel Tower or at the restaurant Ciel de Paris at the Tour Montparnasse. If the bars of certain palaces or luxury hotels provide the ideal setting for a champagne toast, some of these establishments now boast special spaces dedicated to tasting champagne. One example is the Hilton Opéra with its Bubble Suite created in partnership with a prestigious Maison de champagne.

The baguette is a staple of French gastronomy: no Parisian table would be complete without it. So much so that an award is given out each year to the artisan baker who makes the best baguette. In 2018, Mahmoud M'seddi of Boulangerie 2M was named the best baguette maker in Paris, following on from Sami Bouattour from La Boulangerie Brun the previous year. Foodies can go along to taste the quintessential Parisian loaf and relish the fact that they’re eating the same baguette as the French President: the winner supplies the Elysée Palace for a year. > Cooking lessons

What could be more natural than wanting to learn the secrets of top chefs in a city renowned for both haute cuisine and inventive cooking? Many prestigious chefs have their own schools in Paris: Lenôtre, Alain Ducasse, etc., and prestigious schools like Cordon Bleu offer trainee chefs the finest infrastructure and a creative atmosphere in which to learn their trade. What’s more, young chefs are breaking with tradition and offering express training-tasting sessions at lunchtime or aperitif time - ideal for working people and visitors with limited time to spare.

Along the water No Paris trip is complete without a lunch or dinner cruise on the Seine, admiring the city’s most beautiful monuments as you glide past them. The meals served at the floating restaurants of the Marina de Paris are prepared from market-fresh produce. The Bateaux Parisiens boats offer a stunning view from their glass-fronted restaurant. Another option is the famous Bateaux Mouche ®. On stilts or at the dock on a barge, fine-food lovers can enjoy a brunch or tasty dishes. The art of living on the Seine!
