To start off the year, CDA has donated back to school welcome bags to Winthrop University dietetic students. In September, we will have a group participating in the Isabella Santos 5K for Kids Cancer. If you have any ideas- let us know! Make it fun! What’s the point of being in a group that isn’t any fun? I want this year to be a year of new friendships, connections networking, and most importantly enjoyment. We will have socials throughout the year to allow for making connections between all members, in all settings of the dietetics community. Happy New CDA Year!
I am so ecstatic to serve each one of you as President of the Charlotte Dietetic Association. I have spent the past year learning from Natalie but I am now officially ready to promote myself from copilot to the real deal. After taking in all the knowledge that I could last year and allowing my brain to come up with some divergent ideas, I came into this year with three goals:

To achieve these goals, the CDA board has created a “Passport to Wellness”. The passport is a way to keep track of the events you have attended throughout the year. We plan to hit topics of cooking, exercise, and meditation while highlighting different unique professions within our Charlotte Dietetics community. Our volunteer events, socials, and journal clubs all going back to our theme to explore wellness.
At the end of the CDA year, you will have the chance to win a $100 gift card to Trader Joes! To be eligible to win you must attend two member meetings, a volunteer event, a social event, a journal club, and be a member of CDA. We have physical passports and stamps because this year is all about fun.
Be sure to tell everyone you know about our first member meeting: Yoga with Erin Falls RD of Planks and Pizza. Erin is also a private practice dietitian who will be answering some questions on how she got into that role and how she combines yoga with being a dietitian.

Name: Katie Lenarcic, MS, RD, LDN, CNSC
Position: Pediatric Inpatient Dietitian (general pediatrics and PICU)
School/Internship:

Favorite Food: nachos and ice cream!
Fun Fact: Before I became an RD, I worked as a lab tech/chemist for 5 years. I did a variety of jobs
from doing research on plastics to toxicology screens for pain clinic patients. Probably the weirdest
job I has was when I worked for a superabsorbent polymer lab for several months and they had me
research the absorbent capability of different diapers on the market. I know way too much about
Pampers!
Favorite Nutrition/Dietetic Advice: I am in a constant pursuit of finding balance in my life and
nutrition is a large part of that. Unfortunately, we all know the general public tends to think that
extreme dieting/exercising is the answer to weight loss or health issues. I always try to revert
back to what foods do you really love? Instead of lowering the numbers on the scale, how can we
be mindful and balance the scale?

On July 30th, most of the board members met for a cookie
decorating class and potluck dinner. Elle Matchin, owner of Baked Well, a custom bakery in Matthews, lead the cookie decorating class. We had so much fun and went home with
some pretty cute cookies.

Social
On August 15th, CDA members, friends, and family gathered at
Sycamore Brewing for an evening of good eats and sips. We had a raffle
for a couple of Trader Joe’s gift baskets and played a networking
game to get to know each other. We had a blast and are looking forward to seeing everyone at more events
throughout the coming year!

Alma Adams Mad
Hatter Luncheon
On August 24th, some of our CDA members attended the Annual Mad Hatters Luncheon supporting Rep. Alma Adams. The event was made possible by the ANDPAC (Academy of Nutrition and Dietetics Political Action Committee). It was a great opportunity to have face-to-face time with Rep. Alma Adams and make an impact on our state’s decision makers.

Get to know your 2019-2020 CDA Board
President Jennifer Goodman RD, LD, CNSC received her BS in Food Science and Human Nutrition from
Clemson University in 2014 and completed her internship at the Augusta Area Dietetic Internship
in 2015. She works for Levine Children’s in the pulmonology division working with pediatric
cystic fibrosis patients. Jennifer teaches barre at the Barre Code in NoDa and finished her first
(any only) marathon this past year. She almost as excited to serve as president as she was
when Clemson won the football national championship for the 2nd time, it’s a close call.
Past President Natalie currently works as a Wellness Coordinator for Eurest Dining Services. She holds her
Bachelors of Science degree in Food Science and Human Nutrition from Clemson University.
Natalie has experience in school food service, outpatient clinical nutrition, and private nutrition
counseling. This is Natalie’s third year serving on the CDA Board. In her free time, she enjoys
exercising and being outdoors, trying out new recipes in the kitchen, cheering on Clemson
football, and exploring all that Charlotte has to offer.
President-Elect Samantha Scruggs, RD, LDN (known online as Samantha Leigh RD) is a Registered Dietitian and
Licensed Dietitian in practice since 2011. She got her Bachelor’s Degree from the University of
North Carolina at Chapel Hill and did her internship at the South Carolina Department of Health
and Environmental Control in Columbia, SC at Palmetto Health Richland. She has experience in
private practice, management, long-term care, and consulting. She has a private practice in
Gastonia, NC and currently specializes in helping women overcome anxiety by modifying diet and
lifestyle to achieve balanced mood and fewer episodes of anxiety or panic.
Treasurer Lauren Littmann is a Pediatric Clinical Dietitian at Atrium Health Levine Children’s Cancer and
Blood Disorders Clinic. Lauren completed her dietetic internship at Duke University Hospital and
received her Master’s Degree in Human Nutrition and Dietetics from Winthrop University. Lauren
is a native of North Carolina and received her undergraduate degree in Business Management
from North Carolina State University. In her spare time, she enjoys staying active, trying new
recipes, and spending time with her husband, Dash (cat), and Sadie (dog).

Legislative Representative Chandler Kasay is the Inpatient Pediatric Hematology/Oncology and Rehabilitation dietitian at
Levine Children’s Hospital. She received her undergrad and completed her internship at Texas
Christian University in 2017. Chandler and her husband are both native Charlotteans and in their
free time can be found spending time with family.
Program Planner Co-Chair Rj is the outpatient dietitian at CMC Myers Park Internal Medicine. She received her BS in
Nutrition and Biology from North Carolina State University. She then went on to pursue her
Masters in Nutrition from North Carolina State University (Go Pack!) before completing her
dietetic internship at Lenoir-Rhyne University. This is Rj’s first CDA position. In her spare time, Rj
enjoys spending time with her daughter and husband, crafting, and running with her black lab,
Alli.
Program Planner Co-Chair Alina Pittman, MS, RD finished her dietetic internship in April 2019, and just recently passed the
registration exam. She has accepted a position as a Clinical Dietitian with Atrium Health North
East located in Concord, NC. Alina received her bachelor’s degree in Finance from the University
of Central Florida and worked in her field for 9 years before going back to school. She attended
school at Winthrop University in Rock Hill, SC, and received her master’s degree in Human
Nutrition in December 2017. Alina enjoys playing a role in helping others to live their healthiest
life. She is looking forward to the beginning of this new career and all of the opportunities that
lie ahead.
Secretary Rachel Gibson, MS, RD, LDN is the Clinical Dietitian at Adult and Pediatric Specialists (Lincare) here
in Charlotte. She is also a trainer at F45 Training. She received her BS in Biology from Erskine
College, then completed her MS in Human Nutrition and dietetic internship at Winthrop University.
In her free time, Rachel enjoys working out, reading, cooking/baking, and spending time with her
husband, Connor, and pup, Benji.
Membership Chair Tina Marie received her Master’s Degree in Human Nutrition from Winthrop University in Rock
Hill, South Carolina where she also served as President of the Student Dietetic Association. Tina
Marie currently owns and operates a professional speaking and consulting business in the
Charlotte area that provides seminars on a variety of topics such as whole food, plant-based
nutrition, menu planning and cooking classes, gut health and hypothyroidism.

Journal Club Coordinator Ashley Goehring is the clinical liaison for Aveanna Healthcare/Epic Medical Solutions. She
received her BS in Food Science and Human Nutrition from Clemson University and completed her
MS in Nutrition and dietetic internship at Winthrop University. This is Ashley’s first position on
the CDA board. In her spare time, you can find Ashley trying new restaurants around Charlotte,
cheering on the Panthers and Clemson Tigers, or traveling abroad as much as she can.
Volunteer Events Coordinator Leslie Van Horn works at Winthrop University as an Instructor and Dietetic Internship
Coordinator. She received her MS in Human Nutrition and completed her internship at Winthrop
University. She is currently working on her Doctorate in Clinical Nutrition at University of North
Florida. Leslie previously acted as the Co-Webmaster for CDA from 2012-2014. She is excited to
continue to her involvement with the CDA board as Volunteer Coordinator. Outside of the world
of dietetics, Leslie enjoys being active (yoga, running, biking), traveling, and spending time with
her husband and golden retriever puppy.
Webmaster Co-Chair Patricia E. Pitts is a recent transplant RDN from Memphis, Tennessee. Before moving to the
Carolina area she received a BS in Health and Human Performance with concentration in Dietetics
along with a MS in Clinical Nutrition. After completing the dietetic internship, she attended L Ecole
Culinaire and earned an AOS in Culinary Arts and Diploma in Culinary Essentials. Currently Mrs.
Pitts works at the VA Medical Center Salisbury and Atrium Healthcare. She is excited to serve as
CDA’s Webmaster Co-Chair for a second year.
Webmaster Co-Chair
Patty Parris is the dietetic technician registered and certified dietary manager at Abernethy
Laurels in Newton. She received her AAS in Dietetics at Gaston College in 2013 and is currently a
student at the University of Alabama’s distance program to get her BHS in Food and Nutrition.
This will be Patty’s 3rd year on the CDA board as one of the co-webmasters. If you can’t find her
at work, studying, cooking, or reading about food and nutrition, you might be able to find her
taking selfies with her dogs or trying to tire them out walking around the neighborhood (it never
works).
Student Representative Allison Frank is excited to be the new Student Representative for the CDA. She is currently a
junior at Winthrop University and aims to complete her undergraduate of Human Nutrition next
fall. While in school, Allison has been a nanny in Charlotte since she moved to the area in 2016
and she also volunteers for a pediatric hematology and oncology clinic at Levine Children’s
Hospital a couple times a week. In her free time, Allison enjoys exploring Charlotte and Rock Hill
by visiting local breweries and shops.

Summer Recipe Inspiration
Strawberry Feta Walnut Salad
Ingredients
10 oz spinach or spring mix
1 cup fresh strawberries, sliced
1 cup fresh blueberries, sliced
½ cup chopped walnuts
½ cup pepitas
½ cup feta cheese, crumbled
1/3 cup reduced sugar craisins
2 tbsp dressing of choice (balsamic or raspberry vinaigrette)
Instructions
Rinse strawberries and blueberries. Slice strawberries and set both aside.
Add salad greens to a large bowl, add toppings and toss to evenly distribute all other toppings.
Add dressing and toss or leave on the side to avoid getting soggy.
Refrigerate and serve chilled.
Recipe from Shanna Hutcheson, RD, LD, the dietitian behind Wellness for the Win
Blueberry Zucchini Oatmeal Bars
Ingredients
2 cups rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 pinch salt
1 cup shredded zucchini
½ cup creamy peanut butter
¾ cup milk of choice
1 large egg
1 teaspoon vanilla extract
¼ cup maple syrup
1 cup blueberries
Instructions
Preheat oven to 350F and grease an 8x8” baking dish with butter or cooking spray
Mix oats, baking powder, cinnamon, an salt in a medium bowl.
Mix zucchini, peanut butter, milk, egg, vanilla, and maple syrup in a large bowl.
Combine both bowls of ingredients in the larger bowl and then fold in blueberries.
Pour mixture into prepared baking dish and bake for 45 minutes or until a knife comes out clean from the center.
Slice into 12 slices and store in refrigerator until ready to eat.
