Ever been at a restaurant and wondered what wine to pair with your food? The special feature included in this redesigned book is a pull out list for redand white wine. The complete list gives you that added confidence to know exactly how to pair your wine with your meal. The lists are to be removed so you can have them at your own convenience.

The poorer the soil, the better the wine. Soil must

be able to retain moisture without becoming water

logged. Warm soils like gravel and sand retain heat,

which speeds ripening, while a cold soil, like clay,

retards it. Topographical variations give rise to micro-

climates that differ from the overall prevailing climate.

Slopes that face south in the northern hemisphere

receive more sun and consequently are warmer; the

opposite its true in the southern hemisphere. In hot

areas, the cool slopes tend to be cultivated. Altitude

affects temperature being that grapes take longer to

ripen in higher, cooler vineyards.

Soil Influences/Topography:

The increased sunlight and good drainage of-

fered by otherwise inhospitable steep slopes, such

as these, are ideal for vines.

Stones absorb heat from the sun during the day

and radiate it back in the night, which is adven-

turous in cooler vineyards.

Slopes, which have been concentrated sunlight

and better drainage, are more suited to vines that

flat land where the soil may be too fertile.

leaving your house for the day. It doesn’t

have to be a super expensive gift, but

something that will get them to think

about how great your party was. Everyone

has that certain recipe that everyone just

loves. So give out a recipe card or multiple

recipe cards to get your guests hooked!

Decorate them depending on how much

time you have. Included are cut out cards.

Strawberry-Lime stuffed cupcakes

1 1/2 cups all-purpose flour1 1/2 teaspoons baking powder1/4 teaspoon fine salt2 large eggs, room temperature2/3 cup sugar3/4 cup unsalted butter, melted2 teaspoons pure vanilla extract1/2 cup milk

Icing:1 1/3 cups confectioners’ sugar, sifted1 1/2 tablespoons finely grated lime zest2 tablespoons freshly squeezed lime juice

1 drop green food coloring

6 large ripe strawberries, hulledGreen sanding sugarFresh mint leaves or candied leavesEquipment: 6-cup jumbo muffin tin

Preheat the oven to 350°F. Line muffin tin with cupcake liners.

Whisk the flour, baking powder, and salt together in a medium bowl.

In another medium bowl, beat the eggs and sugar with an electric mixer until light and foamy, about 2 minutes. While beating, gradually pour in the butter and then the vanilla.

While mixing slowly, add half the dry ingredients, then add all the milk, and follow with the rest of the dry ingredients. Take care not to over mix the batter. Divide the batter evenly in the prepared tin.

Bake until a tester inserted in the center of the cakes comes out clean, about 30 minutes. Cool cupcakes on a rack in the tin for 10 minutes, then remove. Cool on the rack completely.

For icing: Mix the confectioners’ sugar and lime zest in a medium bowl. Add the lime juice and mix with an electric mixer to make a firm but pourable icing. (If needed, add up to 1 teaspoon more juice, but take care if the icing is too loose it doesn’t set properly.) Add food color to make a pale pastel green icing.

To assemble: Remove cupcake from its liner. Cut and remove a straw-berry (coned) shaped portion of cupcake from the top of each cupcake, leaving about 1/2 to 1-inch of cake in the bottom. Stuff each cake with a strawberry and cover with a little bit of cake. Spoon and spread icing over the top of the cupcakes. Sprinkle with green sanding sugar. Top with small mint leaves or candied leaves.

modified plants that recalls a sideshow barker’s pitch: “Step

right up and see your wildest dreams made real. Pick a plant

fantasy: a blue rose that smells like a banana. A peony that

flowers from May to October. A tree form of forget-me-not.”

Genetic modification, or GM, may make it all possible.

Mark Brand, a University of Connecticut professor of ornamental horticulture, checks

on the development of a batch of young genetically modified plants.

Camille’s restaurant is located in the heart of ‘old town’ in the revitalized Fullerton,

California. We have been hard at work for twenty successful years, thanks in

part to the generous recommendations from many hotels and bed and breakfast

establishments. This year we hope to work even more closely together and ensure

that visitors to Fullerton enjoy the best food, service and hospitality available.

Our restaurant is a unique combination of fine dining with a comfortable, casual

atmosphere. The menu is diverse, with many specials including vegetarian

food, fresh seafood, and wild game. We are proud to utilize as many fresh local

ingredients as possible and we prepare our dishes in a health-conscious full flavored

style. Candlelight, soft blues and jazz and a talented staff supply the atmosphere.

For those who love wine, our list is extensive with truly great and affordable wines.

In addition to our ever changing weekly seasonal menu we also offer a five-course

tasting menu. The chef ’s menu is $50 and may be ordered with wine pairings for

each course for an additional $25. This menu changes daily and is a great way to

try a variety of tastes and textures in smaller portions.

How to Escape from Killer Bees

Created a pocket field guide for anyone out in the wilderness. The pocketbook educates people on types of bees and their habits.

If a bee stings you, leave its stinger in your skin. Remove the stinger by raking your fingernail across it in a sideways motion. Do not pinch or pull the stinger out. This may squeeze more venom from the stinger into your body. Do not let stingers remain in the skin, because venom can continue to pump into the body for up to ten minutes.

WATKINS BUILDING

Jabez Bunting Watkins was born near Punxsutaw-ney, PA on June 25, 1815. He attended the Dayton, PA academy from 1864 to 1866 and graduated from the University of Michigan in 1869 with a bachelor of laws. He practiced law at Champaign, IL. In 1873, J.B. came to Lawrence, KS.

On moving to Lawrence, he enlarged the land mortgage business and was incorporated in 1883 as J.B. Watkins Land Mortgage Company with branches in New York, London and Dallas, TX. Beginning in 1872, he invested 12,000,000 in land mortgages, purchasing 1,500,00 acres of land in southwest, Louisiana.

Elizabeth Josephine Miller at age 13 came to Lawrence with her family from New Paris, OH in 1872. Two years later she found employment in the Land Mortgage Company of Mr. J.B. Watkins. After working together for more than thirty year, the couple married in 1909 in Brooklyn, NY. land purchased from Charles Robinson, they built their own home, the Outlook in 1912.

THE BUILDING

The building was constructed by J.B. between 1886 and 1888. The total cost of construction was $100,000. It is an example of Richardsonian Romaneque Architecture. The building consisted of three levels with six custom made vaults and a fourth level serving as living quarters for J.B.T he entrance has a 45-foot tall by 25-foot wide stairwell with marble stairs and terrazzo floors. The wainscoting is constructed of six variations of Tennessee marble and Mexican onyx. The stair has iron railings with copper and molded trim and brass handrails.

The first floor was used as offices for lawyers and civic groups. The room measured 46-foot wide by 56-foot long with 8-foot ceilings. The exterior walls are 30-inches thick and the wood trim is of carved ash wood.

The second floor housed the Watkins National Bank. The bottom portion of the bank-teller cage is original to the building and consists of 14 differ-ent shades of marble. The wood trim is intricately carved white oak with floors of double layered yellow pine.
