12 fresh asparagus spears, trimmed & cut in half1 envelope Mayacamas Gluten Free Hollandaise Sauce mix6 eggs3 Pilgrim’s Bakehouse Mini Ciabatta, split & toasted6 slices Organic Valley Swiss cheesePaprika
Steam asparagus in a steamer basket 3-4 minutes or until crisp-tender. Set aside. Prepare hollandaise sauce according to package directions. In a large skillet, bring 2-3 inches water to a boil. Reduce heat; simmer gently. Break cold eggs, one at a time, into a shallow cup. Holding the cup close to the surface of the water, slip the eggs, one at a time, into the water. Cook, uncovered, for 3-5 minutes or until the whites are completely set and the yolks begin to thicken. With a slotted spoon, lift each egg out of the water. Place 1 slice of cheese and 4 pieces of asparagus on each Ciabatta half; top with a poached egg; cover with about 3 Tb sauce; garnish with paprika. Serve immediately. Makes 6 servings.

Toxin – any compound that has a detrimental effect on cell function or structure; includes heavy metals (lead, mercury, etc.), chemicals (solvents, cleaners, drugs, pes-ticides, food additives, preservatives, cosmetics, etc.), mi-crobial compounds (waste products and cellular debris from bacteria and yeast) and products of protein metab-olism (ammonia, urea, etc.).
Spring, the season of the liver, is an optimal time to detox and spring clean the body. The problem of “toxicity” has become more paramount with the increase in the number and quantity of poisonous compounds in the air, water and food. Acute and chronic exposure to endogenous (made by the body) and exogenous (from our external environment) toxins can have a significant impact on health as well as a taxing effect on our body’s physiological functions and organ systems. In addition,
emotional stress or poor nutrition can weaken the body’s ability to adequately detoxify and defend. The health and effectiveness of our individual detoxification mechanisms is of vital importance.
The body eliminates toxins by directly neutraliz-ing them, through excretion (primarily via urine and feces) or through the mucous membranes, lungs and skin. Toxins that the body is unable to eliminate can build up in tissues (typically fat stores and bone). The primary organs of elimination are the liver, intestines and kidneys. The liver is the body’s detoxification powerhouse. Phase I enzyme detoxification neutralizes toxins by making them water-soluble for excretion by the kidneys. In phase II, a separate group of spe-cialized enzymes structurally alters toxins in order to neutralize them or prepare them for excretion. Additionally, the liver synthe-sizes and secretes bile, which enhances the elimination of fat-solu-ble toxins and filters the blood to remove large toxins. The intestines detoxify toxins from bowel bacteria and aid in the excretion of fat-soluble toxins excreted in the bile. The kidneys excrete many toxins after they are made water-soluble by the liver. Additionally, the skin excretes fat-soluble toxins such as DDT, and heavy metals such as lead and mercury.
Fasting is one of the quickest ways to increase elimination and enhance the body’s healing processes. Types in-
clude water consumption, juicing, elimination challenges and other “modified” fasts. Fasting should only be done under the guidance of a trained practitioner.
Nutrition, botanical medicines and quality sup-plements are often employed to assist the liver and enhance de-toxification. An essential herb for detoxification is milk thistle, a strong antioxidant that protects against liver damage, and pre-vents the depletion of glutathione. Antioxidants, such as vitamin C, vitamin E and beta-carotene, are important to protect the liver from oxidative damage. Herbs, like turmeric, licorice, schisandra and chlorella, as well as nutrients, such as B vitamins, calcium, trace minerals, choline, betaine, SAM-e, flavonoids, alpha-lipoic acid, l-taurine, l-glutamine, N-acetyl cysteine, selenium and glu-tathione, help the liver quickly eliminate toxins. These nutrients promote the flow of bile and are critical for detoxification path-ways in phases I & II.

Gluten Free Recipe Mac and Cheese MeatballsOne 5 ounce package Pastariso Mac and Cheeze1 1/4 pounds lean ground beef or turkey1 small onion, grated1 small carrot, grated1 cup gluten free bread crumbs1 teaspoon kosher salt1/2 teaspoon black pepperGluten free non-stick cooking spray
Preheat oven to 425 degrees. Line two baking sheets with parchment paper or silicon baking mats. Prepare the Mac and Cheeze according to the package directions, omitting the additional milk and butter. Let cool for 10 minutes. Combine the ground meat with the onion, carrot, breadcrumbs, salt and pepper. Add the prepared Mac and Cheeze. Using about 1/4 cup per meatball, roll into balls. Place on pre-pared baking sheets, spray with cooking spray, and bake for 20 minutes or until browned. Cool for 5 minutes and serve. Makes about 24 meatballs depending on the size.
