Peterson loves bringing you the best of the best!The tradition of Gruyère AOP is deeply ingrained into the Swiss culture, and once you’ve had a taste, it’s easy to see why! In production since 1115, this raw milk mammoth of a cheese is an integral part of the Swiss identity. Many cheesemakers learned the trade from their parents, who learned it from their parents; in this way, the tradition is passed down through the generations. Much of the production is done in village dairies, where milk is delivered twice a day, but the production of Alpage Gruyère is truly special.
Unlike village dairies, Alpage cheesemakers milk their own herd of cows at their chalets—little cheesemaking cottages located at a higher altitude than the village dairies. This seasonal production—cheese is only made May through October—is a nod to the old ways of cheesemaking, and every step of production is very hands-on. The small herds of cows graze in Alpine meadows, where the varieties of grass and fl owers are tenfold what they are in the lower plains. This diversity intensifi es the variety of fl avors found in Alpage Gruyère. Deep, brothy, umami fl avors mix with sweet, fl oral hints, to give you a very complex cheese. Ivan, the man behind the truly special cheeses waiting for you at Peterson, has thirty years of experience under his belt, and has perfected the art of Alpage Gruyère. Only three wheels are made per day from his herd of nearly fi fty cows, making this cheese an exclusive delight! Perfect for melting, Alpage Gruyère has a place in any mac and cheese or fondue recipe, and does well paired with sweet or savory condiments on a cheese plate.
