PEARL MORISSETTE 2013 CHARDONNAY CUVÉE MÉTIS Vinification & Élevage: This cuvée is a blend of Chardonnays sourced from local and estate fruit. It was harvested late September and early October, hand sorted and whole bunch pressed. Fermentation was done using only indigenous yeast in a combination of concrete and old, large format oak barrels. After a month, primary fermentation finished and the wine in concrete was transferred to old, large oak barrels for élevage where malolactic fermentation was completed. 2013 Chardonnay Cuvée Métis was bottled unfiltered and un- fined in early September 2015. pH: 3.46 Total Acidity: 6.9 g/L FS02: 10ppm at bottling Alcohol: 12.5% /vol Residual Sugar: 2.1 g/L Average Brix at harvest: 21.5 Total Production: 523 cases of 12 bottles.
