Those entremets are done with structure entremets sheets ((size : 36,5 x 56,5 cm). These sheets can be used to line moulds made by PCB: pastry frame mould (KT186 p. 166).
You can also use your own moulds if the size match.
The following desserts is made by lining
on the 5 sides of the squaremould (KT247 or KT285)
one pre-folded structure sheetwhich will give depth.
The cake is than put togethernormally.
