ABOUT US
Armed with sources that span the seas of the
globe, chef Alan Lee takes the helm to spread
the simple joys of seafood.
After years of trading and visits, our seafood
suppliers can be considered none other than
close friends. Be it Yvon Madec with his wife and
their playful dogs at Prat Ar Coum in Lannilis, the
Wong family in Clam Gulch, Alaska who supplies
us with their hand caught salmon or Tommy, the
tour-guide-turned-fish-supplier in Jeju, Korea.
It’s thanks to relationships like these that we’re
able to do what we do. Their products are our
pride and joy and we want to be the avenue
that brings these quality products to all the
seafood lovers out there- be it in our restaurant
or through our wholesale fish markets.
ABOUT OYSTERS
Flavours of oysters are dependent on their merrior
(aka: the “terroir” of the oyster world). These
mollusks are categorised into 5 species:
1. EASTERN
Large, firm, briny
2. PACIFIC
Large, soft & sweet with cucumber notes
3. KUMAMOTO
Small & creamy with hints of melon
4. EUROPEAN FLAT
Medium, metallic, with a trace of caviar & hazelnut
5. OLYMPIA
Tiny, coppery, smokey

WILD VS FARMED
While many fish species are of lower quality
and become sources of significant pollution
when farmed, oysters are actually good for the
environment, sustainable, and sometimes even
better when cultivated.
THE LIVE TEST
Shucked fresh, oysters should still be moving
before you slurp them. Use your oyster fork to
nudge them and if there’s no movement, refrain
from the slurping and ask for a new shell instead.
SAVOUR
The best rule of thumb is to taste your first
oyster without any sauces. If you’re up for it, sip
the oyster liquor (aka: the liquid that’s naturally
inside the oyster) for a good chunk of its flavor.
